Over the years, we learned we continually lost food to the dark depths of the refrigerator/freezer, and our dishwasher sat half empty most of the time because there was only two of us. Don’t be intimidated by the strange shape and tough skin of squash...once you cut open these sweet fruits and roast them for 30 min you’ll thank yourself! So delicious, healthy and super easy to cook up. I like to keep it simple and roast them in some olive oil and sea salt for about 30 min. For an even sweeter dessert-like flavor, season with cinnamon and sea salt before popping them into the oven. Once done, drizzle on some maple syrup for an added touch of golden goodness. Good grief! What a day...⠀ •⠀ Instead of getting to work on all the stuff I need to do, I opted instead to completely reorganize the kitchen. Several hours in, I realized the vision wasn't going to work and then re-reorganized it back to the original arrangement. It was rather defeating but stashed high up in the depths of a cabinet along with a ton of nasty crumbs, I found a ring!!!!!!!⠀ •⠀ It so clearly was my mom's. I could tell by the stones and setting. It was so her. No doubt in my mind. And of all the places to find it!!! ⠀ Seriously folks, clean out the nooks and crannies! There are real life gems waiting for you!⠀ •⠀ Among other noteworthy moments, I sold a spoon today! Hurray for more joy! But... apparently my site was having issues with transactions and no idea why. I spent the second part the day with tech support trying to figure out what was going on. A million hours later I fixed it! This is major! Me, trouble shooting tech? It's a nightmare for all involved...⠀ But it's resolved and I feel a wave of relief!⠀ •⠀ And then, just to keep things going, I have my first ever virtual spoon carving class tonight! T O N I G H T!⠀ •⠀ Epicness I tell ya! Epicnaaaasssss...⠀

tteokbokki: chewy, tender rice cakes stewed with cabbage and scallions in a mouthwatering spicy sauce. i made a CHEESY version by topping the finished tteokbokki with @fieldroast chao slices and then popping the whole thing under the broiler for a few minutes until the cheese was melted and bubbly. seriously the ultimate comfort korean food, still cannot get over how delicious this was. please make this guys. (recipe is below; will be uploading the process to my stories later today so stay tuned for that!) . #plantbased#fieldroast#sponsored . CHEESY KOREAN RICE CAKES (TTEOKBOKKI) 3 cups water 3 tbsp gochujang 1 heaping tsp gochugaru (use more if you want it spicier) 1 tbsp soy sauce 1-2 tbsp coconut sugar 1 tbsp minced garlic 1 lb rice cakes, soaked for 20 min if frozen 1 4x6-inch piece kombu (dried kelp) 4 oz napa or green cabbage 2 scallions, chopped into 2-inch pieces 2 slices Field Roast chao slices Add kombu and water to a large pan over medium heat. As water is heating up, stir in the gochujang, gochuaguru, soy sauce, coconut sugar, and garlic, and bring to a boil. Allow to simmer for 5 minutes, then remove and discard kombu. Add in the rice cakes and continue cooking, stirring frequently, until rice cakes are soft (but still chewy) and sauce is thickened, about 7-10 minutes. Add in the cabbage and scallions, and simmer for an additional 4-5 minutes. Remove from heat and top with the cheese (either grated or the entire slice), and cover until cheese is melted. Alternatively, if using a cast-iron pan, place entire pan into an oven on broiler setting and heat with oven door open for 1-2 minutes until cheese is melted and bubbly. Serve hot.
