Let’s get some weather reports down below!👇⛅️🌧❄️💨 We’ve had some beautiful days here lately! ☀️🌱 This drink always makes me think of spring, 🌷 it’s perfect for any meal and SO refreshing! It’s also a great way to use up citrus you have sitting in your fridge. Any combo is delicious! 🍊🍋🍊🍋 CITRUS LEMONADE INGREDIENTS 1 1/2 cups sugar, see note 1/3 cup lemon juice, about three lemons 1/3 cup orange juice, about 1 orange 2/3 cup grapefruit juice, about 1 grapefruit 12 cups water warm, see note INSTRUCTIONS Juice the lemons, orange, and grapefruit over a fine mesh strainer to catch all the seeds and pulp. In a large pitcher, add the sugar, lemon juice, orange juice, and grapefruit juice. Add 9 cups of warm water, taste the mixture and finish adding water to your taste. You may want less than 12 cups or more than 12 cups. See note. Once the water is all added, stir vigorously until all the sugar is dissolved. Allow to chill and serve. Garnish with mint or basil sprigs. NOTES When adding the sugar, you may want to add less than the listed amount first. You can taste the citrus lemonade and adjust the flavor according to your preference after mixing. If you are serving it over ice or putting ice in the serving vessel, leave the flavor slightly stronger than you want it to be. This will account for added water as the ice melts, keeping your raspberry lemonade flavorful.

With finals week still going, I am reminded about why it is so hard to remain a healthy college student. There is so much stress during finals week that it makes it so early to not get enough sleep, eat unhealthy food, and to skip workouts. For finals I normally would eat chips, chocolate, and whatever I could get my hands on and munch until it was gone. This quarters finals are still tough, but I am somehow managing to eat well. Pan Fried Pork Chop with Organic Carrots and Zucchini. Rubbed garlic salt, pepper, and oregano on the pork chops before frying on stove top with sliced sweet onion. They pan fried the organic rainbow carrots and zucchini separately to serve with jasmine rice. Yum! 😋
I have been so excited to share this recipe with you!! I schedule months of content in advance and photograph usually a few weeks ahead, and this one has been so hard to keep scheduled!! These beef short ribs are just so dang good and SO easy. If you’re not sure what short ribs are, they are individually cut ribs with the bones still in. Scroll 👉 to see them raw, seared, and then in the cooking liquid. Braising just means cooking partially submerged in liquid, so you’ll want to make sure you read through the recipe to figure out how much liquid you’ll need. SLOW COOKER BEEF SHORT RIBS INGREDIENTS 1 tablespoon olive oil 8 beef short ribs, see note 1 teaspoon salt 1/2 teaspoon pepper 2 carrots, diced 2 stalks celery, diced 1 onion, diced 3 cloves garlic, minced 6 ounces tomato paste (1 small can) 2 tablespoons balsamic vinegar 3 cups beef broth 1 cup red wine or beef broth 2 bay leaves 2 teaspoons thyme 1 teaspoon oregano 2 teaspoons parsley INSTRUCTIONS Season short ribs liberally with salt and pepper. Sear over high heat in a skillet to brown the outsides. Set aside. Add remaining ingredients to a slow cooker. Stir to combine. Nestle short ribs into the liquid mixture in the slow cooker so that they are mostly covered in liquid. Pour in any accumulated juices from the short ribs. Add more beef broth if necessary. Cook on low for up to 8 hours, or high up to 4 hours. When done, the beef should easily fall off the bone. NOTES You can use anywhere from 6-10 short ribs for this recipe. It just depends on how many people you'd like to serve and how big the short ribs are. Beef broth can be substituted for the red wine. The exact amount of broth you use may vary depending on the size and shape of your slow cooker or crockpot. The one pictured here is a 6 quart. The short ribs need to all be at least partially submerged in the liquid.
