🌮🌮🌮 These vegan tacos are the bomb 💣 dot com and my non-vegan family loved them!! Do yourself a favor and try this recipe out, and thank me later. They’re super easy and packed with flavaaaaa. 👅 Ingredients: 1 pack of @beyondmeat burger patties seasonings: garlic & onion powder, smoked paprika, chili powder, ceyenne, dried oregano taco shells- I like @traderjoes organic corn shells half a head of lettuce, thinly sliced tomatoes, chopped cilantro, chopped jalapeños, sliced avocado, sliced @daiya shredded pepperjack cheeze roasted red bell pepper hummus - I like Cedars brand. sriracha (optional) -I used my homemade habanero pepper sauce instead. Instructions: Cook @beyondmeat patty as directed on package BUT break them up into crumbles. Season with the spices to your desire. Mix a little of the hummus and sriracha together in a small bowl. Now layer your tacos! I did mine first with spreading the hummus mix on one side of the taco shell. Then the taco meat, lettuce, tomatoes, cheese, jalapeños, cilantro, and avocado. That's it! Quick, healthy and delicious tacos!! Shrimp scampi with black bean spaghetti 🍤 🍝 this was a really great light summer meal for the nice warm weather we finally got this week! Pasta is my absolute favourite thing in the world and the hardest part of this lifestyle change has been holding myself back from eating handfuls or pasta every time I’m alone in room with it. So far this is my favourite pasta alternative! The consistency is a little different but omg it hits the spot! Huge fan, recommended for everyone!! Makes 6 servings _____ edients 1 box of “exploring cuisine” black bean spaghetti 2 tsp avocado oil 2 tsp butter 5 garlic cloves 24 large shrimp 1/4 tsp chili flakes 1/4 tsp paprika 1/4 cup low sodium chicken stock 1/4 cup 1% milk 1 cup cherry tomatoes, halved 2 big handfuls fresh spinach Cook pasta as per directions on box, set aside. Heat oil, butter, and garlic in a large sauce pan with a lid. When it starts to get fragrant, add shrimp. When shrimp starts to pink add chili flakes and paprika, cook for 2 minutes then add chicken broth, milk, tomatoes, and spinach. Cover and let cook for another couple minutes, until shrimp is cooked and spinach has wilted down. Marinate extra firm tofu in coconut aminos, lime juice, garlic and fresh grated ginger. Set in fridge for up to 2 hours 2. Mix almond flour, baking powder & cornstarch & water to form a pancake consistency. Set in fridge 3. Mix unsweetened coconut flakes with ground flax seed and set aside. 4. Prep all your other ingredients: I sliced watermelon radish, avocado, sprouts, spinach. You can use whatever you like here! 5. Heat up 1/4 coconut oil/ grapeseed in a large frying pan and get it hot so when you drop your tofu in it sizzles 6. Breakfast tacos anyone? Now for the Cali-style brunch menu- A salad I call the Happy Hippy with quinoa, kale, avo, pickled onions, and golden berries, crudités with avocado ranch, vegan donuts from @wholefoods, a big bowl of mandarins that are so tasty right now, bagels and lox with @kitehillfoods cream cheese, and a taco bar. I started with corn and whole wheat tortillas. For the filling I sautéed some onions and added @friedasproduce soyrizo. I also did homemade black beans and scrambled eggs. For toppings there was a cactus salad, pico de Gallo, @parmelacreamery nut cheese, thinly sliced radish, avocado, cabbage, and red onions and fresh cilantro. The salsa how-to is in my highlights. For the green one i used all tomatillos and put it in the blender to make smooth. A breakfast taco bar is an easy and super delicious way to feed a crowd.
