With a winter storm headed to the Midwest, we are planning to stay warm with this easy White Turkey Chili. 🍲 It's such as quick lunch or dinner and you most likely have most, if not all, of the ingredients on-hand. . . If there is a snowstorm or it's a regular Winter, Fall or Spring day, this chili is on regular rotation at our house. 🍲 Serve with homemade or store-bought cornbread as you know chili and cornbread go together like pb and j, right? 😉 . White Turkey Chili 1 T. olive oil 1 pound ground turkey 1 cup chopped onion 2 stalks celery, sliced 2 (15.5 oz.) cans Great Northern Beans, drained and rinsed 2 (14 ½ oz.) cans low sodium chicken broth 1 (11 oz.) can of no salt added corn or hominy 2 t. cumin ½ cup low fat shredded cheddar cheese 1 T. fresh chopped cilantro or parsley Optional toppings: diced fresh tomatoes, avocado, jalapenos, olives, plain Greek yogurt, crushed tortilla chips Heat oil over medium heat. Add ground turkey and cook through breaking the turkey in to small pieces. Add onion and celery and cook 3 to 5 minutes until tender, stirring occasionally. Add in all the remaining ingredients except the cheese and cilantro/parsley; mix well. Cover and cook for 15 to 20 minutes or until heated through. Ladle chili into bowls and sprinkle with cheese, cilantro/parsley and optional toppings. . . Made another batch of sushi tonight, this time using sprouted brown rice (check out 📽 to right for how I made it). The sprouting process makes the grain easier to digest and makes nutrients more easily available to the body. ⠀ ⠀ Brown rice is a great “whole grain” and contains protein, fiber, B vitamins to support the nervous system, magnesium and many other nutrients. ⠀ ⠀ Did you know that many grains are refined meaning they’ve milled removing the hull, bran and germ which are nutrition super-houses. When dinner time comes around! I am not good at the kitchen. Not creative, don't enjoy it as much as before. Now with 4 kids ya getting older is more difficult cuz there is more to do. However, it is more important now than ever! Cuz they are hungrier, eat more and so I want them to eat healthy! So whenever I can make something delicious, healthy that tastes good, I feel a #happymomma 😀😀 and I even get hungrier😋😋 haha My goal this year is to put more effort, be more intentional and try different recipes! that dont take for-everrrr.to make and the clean up is minimal🤔🤔🤨😂🤣. Taco salad bowl! Similar to the dinner we had earlier this week, but I served it this time in a crispy taco shell. You can buy these pre made shells in the store today, but for me, it’s more versatile to have your fresh tortillas for different uses. Take your tortilla and heat them up slightly in the microwave so they’re pliable. Next, arrange in an oven safe bowl to achieve the shape you want. Chia Seed Pudding – Serves 1 1 ¼ cups Chia Seeds 1 Cup Almond Milk 1 tsp Cocoa Powder ½ Tsp Agave 2 tbsp Greek Yoghurt Topping 20 Raw Almonds (or more to store away for later) 1 Tbsp Agave (or 1 Tbsp per 20 almonds) Method: Add chia seeds, cacoa powder, almond milk and agave nectar to a small jar. Shake well for 2mins. Leave to set for 5mins and then shake again. Refrigerate for 2-5hrs. Heat nuts and agave nectar for 2mins in a pan and set aside to cool. Once the pudding is refrigerated for 2-5hrs. Top with greek yoghurt and caramelised nuts. *$2 Jar from Red dot. Total Calories - 327 Snack, breakfast, lunch and dinner recipes on our website.
