Pesto mussels & toast BABY COURGETTES, SWEET TOMATOES & PEAS “Mussels are a super-nutritious member of the shellfish family, packed with micronutrients including iodine and selenium, two important minerals for healthy metabolic function. ” COOKS IN14 MINUTES DIFFICULTYNOT TOO TRICKY NUTRITION PER SERVING Calories471 24% Fat22.1g 32% Saturates4.6g 23% Sugars11.7g 13% Salt1.3g 22% Protein30.8g 62% Carbs36.5g 14% Fibre8.7g- Ingredients 70 g pesto 2 thick slices of wholemeal bread , (50g each) 200g baby courgettes 200g ripe mixed-colour cherry tomatoes , on the vine 500g mussels , scrubbed, debearded, from sustainable sources 160g fresh or frozen peas 50ml white wine , optional 2 sprigs of fresh basil TAP FOR INGREDIENTS Method Put a large pan on a medium-high heat, and toast the bread as the pan heats up, turning when golden. Trim and finely slice the courgettes, and halve the cherry tomatoes. Check the mussels – if any are open, just give them a little tap and they should close; if they don’t they’re no good, so chuck those ones away. Remove the toast and spread one quarter of the pesto on each slice. Turn the heat under the pan up to full whack and tip in the mussels. Stir in the remaining pesto, the courgettes, tomatoes and peas. Add the wine (if using), or a good splash of water. Cover with a lid and leave to steam for 3 to 4 minutes, shaking the pan occasionally. When all the mussels have opened and are soft and juicy, they’re ready. If any remain closed, simply throw those away. HEALTHY ON A BUDGET . . One thing that I think puts a lot of people off healthier eating is the cost. This is why I often to a healthier food haul because I want to show people you can get a lot of things in supermarkets and cheaper than you think. You don’t need a medjool date where a pitted date will do or a superfood powder where regular spices work as well. . . Whilst I’m a sucker for an expensive powder or nut butter, I try to shop with a budget and I don’t always buy these items. . . This turmeric latte was made with regular turmeric powder and cinnamon (Asda’s own brand), some oat milk, a date and a tiny bit of vanilla protein powder (you could sub with a half teaspoon honey/maple or other sweetener). . . I didn’t use the fancy turmeric blends that you buy in health food shops and it tasted just as good. . . Use a half teaspoon turmeric powder, good splash of cinnamon, 1/4 scoop vanilla protein (or a little sweetener), 1 date and oat milk. Blitz in blender and heat in a pan or microwave. . . Don’t feel you have to buy expensive items where regular store cupboard things will do!!! . . What are your tips for healthy eating on a budget?

Best way to finish my day!💪 After my 8 1/2 hours shift, to working an extra 4-5 hours on my side biz, I invest 1 hour to work on better my health and body... IT IS NOT MUCH! Think about it, we all have 24hrs in a day, 30 min to 1 hour a day can make a HUGE difference for you!!! It's not about having time, it's about MAKING TIME!!!!
