This wondrous sight is my Sunday meal prep for the busy week ahead. Now that I’m back in grad school while also teaching full time, I have very little time during the week. On Mondays, I’m up and at ‘em from 5:30am to 10:00pm, so a little prep goes a looooong way. Here you see pulled rotisserie chicken, hard boiled eggs, whole30/paleo broccoli leek soup, baggies of fruit and veggies to grab and go, and smoothie blender bombs. For the smoothie bags, I put dark leafies like spinach or kale, 1/2 banana, 1/4 avocado, riced cauliflower, chia seeds, and fruit, then keep them in the freezer. This time I even put some leftover raw zucchini in there. When it’s time to make it, I just drop one in my Nutribullet with a scoop of @julianbakery plain eggwhite protein and coconut water and blend. Quick protein and veggie options are a MUST for me, as I eat most of my meals while multitasking. Not ideal, but it’s how I’m getting it done ya’ll.
Chicken tortilla soup and Caesar’s chicken wrap for the win! I spent Saturday afternoon and evening with my sister and her 2 kids. After putting in some leg work with shopping, we decided it was time to eat. Eating out was a struggle for me. Either I ate way too many empty calories or I’d freeze up looking at the menu and stress myself out into an anxiety attack. I’m not even kidding. No more. I learned to order smart. Either I look ahead at menu online so I know what to order or I #treatmyself to an indulgent meal and make it fit into my #macros for the day. Since I was out and about, I didn’t look online. But I’m not new to @redrobinburgers so I had an idea of what I was going to order. I kept my main meal on the lighter side. I actually didn’t eat all the soup because I wanted to leave room for dessert. Haha! My sister and I split a tres leches cake topped with strawberries that was so good! And this meal was also #guiltfree for me. Why? Because I don’t treat myself everyday. And also, yesterday happened to be #legday so the extra carbs were more than welcomed. 💪🏼🍑 — Once you learned to understand how food affects your body, this all becomes so much easier.
