Didn't get to finish my challenge. I think I had 3 or 4 days left. I ended up getting sick. Not sure what I got but I've been down for several days. Ready to start feeling better. May finish the last days. Possibly, hopefully start back up tomorrow. Btw, these 2 have stayed close by since being sick. So sweet!
Cookies. Just the word feels like a hug to me. And the saying of it makes me feel this sense of joy and fun all at the same time ! I saw a recipe today for Snickerdoodles. Basically cinnamon cookies. Hmmm. That sounded good ! But the ingredients didn't match up with what I am eating. So I set about to make my own. (hours later, when I had closed that site with the recipe down! Haha ) . . I know that I don't do well on coconut sugar. Maple Syrup is a precious commodity here. So I used a banana as the sweet and a bit of the binding. . . They took me less than 5 min to put together and into the oven. The hardest part was waiting ! . . These are so good. They don't make my heart go all racy from the sugar spike , because it is only the banana and raisins that sweeten it up. They are really dense , being made of almond flour , a little cookie goes a long way! . . They hit the spot and were the perfect comfort food! . . Here is a basic recipe , no measurements because , well....eyeballing ingredients works, right ? . . Recipe Almond flour (about 1 cup .. maybe a bit more ) 1 banana, mashed Ground Flax seeds (about 1 tablespoon) Raisins (perhaps 1/4 cup) Baking Powder (a sprinkle) Cinnamon (sprinkle and a bit ) Add the ingredients together in a bowl. Mix until blended. Use a tsp to take bits of dough out, and roll into a ball and flatten when out onto baking sheet. This made 8-10 small cookies. I baked them at 350 for about 12 min. On a cookie tray with a silicon mat so they would not stick. . They are better when they brown a bit ! . . Enjoy!!
