Full transparency - I’m not bothered about soups. I can take em or leave em. But this recipe is SO MUCH MORE THAN JUST SOUP! Don’t get me STARTED! It’s potentially the tastiest thing I’ve ever made. The meatballs are soft, with a nice bounce and a delicious punch of umami (swipe to see a close-up of their meaty-ass texture!). The soup is packed with flavour like you wouldn’t believe and the croutons are just the cherry on top. I’ve had two bowls already today. No big deal. Make it and you’ll understand. PEANUT BUTTER & HOMEMADE RASPBERRY JAM BREAKFAST QUESADILLAS 🥜 So my homemade jam actually piggy backs off of my sugar post yesterday. This jam is totally sugar-free, has healthy fats & is even packed with protein. It takes 5 minutes to make & you can use it on just about anything. No need to run to the store to grab that jam cuz you can make it yourself by controlling the ingredients! What is your favorite fruit jam flavor? ______ dEATS👇🏼 1️⃣ Raspberry Jam: Microwave about 1/2 cup of fresh/frozen raspberries (or any other berry), for about 10 seconds, heat longer if using frozen. Add 1 tsp chia seeds + 1/2 scoop of @furtherfood marine collagen (OPTIONAL, I added to give it protein & help the gut). Mix/mash & set aside in the fridge for 5 min to thicken. 2️⃣ Take your tortilla of choice, I’m using @cutdacarb lavash bread. Slather one side with @pbfit.official peanut butter spread & the other side with the jam. Sandwich them up! 3️⃣ Heat about 1/2 tsp coconut oil in a non-stick pan over medium heat. Add the closed “quesadilla” to the hot pan & heat for 2 min each side just until slightly crispy. Serve with a sprinkle of cinnamon on top.
I fueled up my energy storages with this plate of pasta after having a real productive morning. I woke up at 5.30 and couldn't sleep, so I got out of bed, did a workout, ate breakfast while working on blog stuff, studied for a couple of hours, did laundry, cleaned my apartment, went to the grocery store and edited a few posts. I've had so much energy today, but now I can really feel it's time to relax. Still have a little studying I need to do, cause yesterday when I was supposed to get stuff done, my mom called and we ended up talking about life for an hour. Been feeling a bit down and stressed the last two days, and talking to someone always helps. Having family by my side, is something I'll always be grateful for. Now off to do one more hour of work before taking the evening off. If you too are feeling stressed, remember that it's okay to take time to recharge even when you have a never ending to-do list💕Hope your saturday is going well! ▪️ ▪️ ▪️ My go-to pasta dish Chop up 3 broccoli bouquets and 1 medium carrot. Set the pasta to cook according to the package. While the pasta is cooking, sauté the veggis in a frying pan over medium heat, for about 7 minutes until they are done. Add in cooked pasta and 1 tbsp of your favorite pesto (I did a sundried tomato one) and mix it all together. Add it on a plate and top it with avocado, sprouts, pumpkin seeds and sunflower seeds. Enjoy!

TOFU SCRAMBLE A quick and easy breakfast. I like to have other with bread, avocado and spinach.🌱🥑 1/2 Block Form Tofu, about 100 g 1 tsp nutritional yeast 1/4 tsp turmeric 1/4 tsp curry Salt and pepper Optional black salt 1. crumble the tofu and mix with the spices 2. Fry the tofu in a pan for about 3-5 min.
Bedtime snacks can go either way, healthy 🍌 or absolutely unhealthy 🍰. I opted to choose the first with this banana chocolate peanut butter chia oatmeal smoothie. I used powdered peanut butter (pictured) but ground peanut butter is fine too. It has about 10g each of protein and fibre. Cheeseburger BOMBS 🍔 (makes 8) · 2 @beyondmeat patties 1 tbsp finely diced red onion 1 tbsp ketchup 1/2 tbsp yellow mustard 1/2 tsp salt 1/8 tsp pepper 14 inch pizza dough (OR tube of vegan biscuits, see below) 2 slices @followyourheart american cheese, each slice cut into 4 8 dill pickles Sesame seeds 1) Mix to combine beyond meat patties, red onion, ketchup, mustard, salt & pepper 2) Heat pan on medium high heat with the tiniest bit of oil 3) Take 1.5 tbsps of the patty mixture and form a slider onto the pan and flip after 90 seconds or until slightly charred then set aside on a paper towel to cool 4) Roll pizza dough into an even tube form, cut in half, then each in half again and keep going until you have 8 even'ish dough balls 5) Flatten each piece out and add 1 patty, piece of cheese, pickle, and then bring dough up and over the pickle- pinching and closing at the top 6) Flip so seam side is down on baking sheet. If you feel you have too much dough while closing just pinch some off · Lightly brush each dough bomb with oil and top with sesame seeds. Bake 350° 35 mins or until golden brown. · Biscuit Dough: This was definitely the fastest route and while still delicious, was more bread-y 😉 and leftovers were softer.. just flatten each biscuit out and arrange as above. Bake 350° 20 mins or until golden brown. Enjoy! 🍔💣🍔💓

I don't have hard evidence, but I am pretty sure that this #minestrone soup might be the cure for the common cold. I've been dragging myself around this week with a head cold. Last night, I decided the only sensible thing to do would be to make soup and go to bed early. And today? Today I feel a lot better. The other things that make this dish an "under the weather crowd pleaser": it's super easy and you probably have most of what you need at home already. Got the sniffles and want to put them to bed? Here's how: . . In a large stock pot, heat up 1 T. of olive oil. When shimmering, saute 1 medium onion, finely diced and 2 minced garlic cloves. Saute until soft. Add 1 sliced carrot, 1 sliced celery stalk, 1 t. oregano, 1 t. parsley, 1/2 t. chili flakes and salt and pepper to taste. Saute until the vegetables become browned (about 3-5 minutes). Add 2 T. tomato paste. Saute until the ingredients are blended. Add 1 quart of veggie broth, 2 c. water, 1/2 c. green lentils (rinsed and drained), chopped veggies of your choice (like zucchini and yellow squash) and 1 14 oz can diced tomatoes. Bring to a boil and then allow to simmer until the lentils become soft. While the soup is cooking, prepare your choice of pasta in a separate pot. I don't like to cook mine in the soup because it doesn't make for good leftovers and leftovers are key when you're not feeling well. To serve, put a handful of baby spinach in the bottom of a bowl. Spoon the hot soup over the spinach and top with the cooked pasta. Add salt, pepper and more chili flakes to taste. A teaspoon of lemon juice before serving really makes the flavors pop as well! . . Super healthy and tasty salad for this weekend!! And It only takes 20 minutes to make!!👌 Quiona , kale, roasted pepper, pumpkin, and black bean with Lime Tahini Dressing. . . . To cook quinoa, for 1 cup quinoa you will need 1 1/2 cup water /stock. Wash and rinse your quinoa, In a pot bring it to boil then simmer for 15-20 mins. Lime Tahini Dressing 2 tbsp tahini 1 tbsp maple syrup 1/4 cup extra virgin olive oil 1/2 lime, squeezed a pinch cayenne pepper (optional) Salt and pepper, to taste Whisk all ingredients together
Happy friday people! Keeping this caption super short today, cause I have a lot of studying I want to get done before tonight, so lets get right to it shall we. In this bowl we have lettuce, cucumber, my favorite quinoa chickpea mix, roasted potatoes, pumpkin and sunflower seeds, spring onions, quinoa puffs and avocado. I drizzled over a tahini yogurt dressing at the end (recipe is coming soon!) and enjoyed this while I watched an episode of Gray's Anatomy (I'm totally hooked). I'm so ready for the weekend now! AMAZING Gluten Free & Vegan Banana Chocolate Chunk Muffins: Ingredients: 1 ¾ Cup Gluten Free Oat Flour 1 Tsp Baking Powder ½ Tsp Baking Soda 1 Tsp Pink Salt 1 Tsp Cacao Powder ½ Tsp Cinnamon 3 Ripe Bananas (+ ½ banana for topping) ¾ Cup Coconut Sugar 1 Tbsp True Vanilla Extract 2 Tbsp Maple Syrup ¼ Cup Melted Coconut Oil 1 Flax Egg 2 Tbsp Melted Seed Butter of Choice 1 Tbsp Apple Cider Vinegar ¼ Cup Soy Mylk ½ Cup Vegan Choco Chunks ½ Cup Vegan Choco Chips Directions: 1. Preheat oven to 350 degrees and grease a jumbo muffin pan with coconut oil. 2. Prepare flax egg and vegan buttermylk (combine soy mylk with apple cider vinegar and set aside for 15 minutes) 3. Mash bananas until smooth. 4. In a large bowl combine melted seed butter, coconut oil,mashed bananas, vanilla, maple syrup, and coconut sugar until smooth. 5. Once smooth whisk in flax egg. 6. Whip in vegan butter mylk. 7. Slowly add in all dry ingredients and combine until smooth. 8. Fold in chocolate chips and chocolate chunks (reserve 1 ½ tbsp of chocolate chunks to top muffins with) 9. Scoop in muffin batter into the muffin pan. Fill each muffin cup almost all the way. 10. Top with choco chunks and ½ banana (chopped in small chunks) 11. Bake for 35-40 minutes depending on how moist you want the muffins to be. 12. Let cool 13. My first experience with making homemade vegan steamed buns stuffed with jackfruit and shiitake..so delicious with hoisin sause!! ****************************** Je kunt ze kant-en-klaar kopen maar zelf Dim sum maken is veel leuker..en absoluut niet zo moeilijk als ik dacht..en alleen met gezonde ingredienten👍 Dim sum betekend letterlijk "het hart rakend"..nou bij mij is het gebeurd..helemaal verliefd op deze hapjes😁 er zijn veel variaties van Dim sum..ik ging deze keer voor bao..gestoomde witte broodjes gevuld met een pittige combi van jackfruit en shiitake, twee heerlijke sausjes erbij..hemels!! Afgelopen weekend was mijn stoommandje binnen dus ging ik gelijk aan de slag..aan de vorm moet ik nog werken😁 maar de smaak was er zeker👌 Ingrediënten voor het deeg: 350 g kokos melk light 500g zelfrijzend meel Snufje zout Voor de vulling: 200g shiitakes gesneden 1 blik fairtrade young jackfruit 2 teentjes knoflook, fijn gesneden 1 tl geraspte verse gember 2 el rice vinegar 3 el sweet chili saus 1el hoisinsaus 2 el soya saus 1/2 chili peper,fijn gesneden 100g taugé grof gesneden Verse koriander, grof gehakt 2 el sesam olie Maak eerst de vulling..giet het jackfruit af, spoel het met het water, laat het uitlekken en dan afdrogen..verhit de olie in de pan en fruit de knoflook met de gember aan... Voeg de rest van de ingrediënten er aan toe behalve de koriander, roerbak het geheel (ong 15 min) tot het jackfruit gemakkelijk uit elkaar te trekker is.. Roer daarna de koriander er door en laat het afkoelen....maak ondertussen het deeg. Mix alle ingrediënten voor het deeg goed door elkaar..kneed het deeg vervolgens ong 5 min..verdeel het deeg in 10-12 gelijke stukken..maak er de bolletjes van en laat deze 15 min staan..maak met je handen van de bolletjes rondjes..leg de vulling in het midden en vouw de deegrand over de vulling naar binnen zodat een mooie bal ontstaat. Leg de broodjes in een stoompan en stoom ze in ong 15 min gaar. Bestrooi ze met wat
