This weekend has consisted of yoga, lots of sourdough toast, cbd oil, mouse data analysis, and (controlled amounts of because caffeine lol) cold brew. Heading to hot yoga with @kaleigabri and no plans for the rest of the day besides calling my dad!!! • Trying to feel okay with just chillin can be hard when I get into the groove of being GOGOGOGOGOGO so we puttin in the work on dat!!

WHAT WENT DOWN: • 1/2 a @canyonglutenfree English muffin topped with the above (soooo good 🤤) • the other 1/2 topped with @kitehillfoods blueberry almond milk yogurt • a side of fresh @driscollsberry berries • not pictured: my usual collagen-MCT coffee situation ☕️ . One of those indecisive mornings where I can’t decide which flavor I wanted, so I made both! LEFT: GF crispbread with smashed avocado, fresh tomatoes, feta cheese and everything but the bagel seasoning! RIGHT: GF crispbread with @traderjoes egg salad with chives and red pepper flakes! You don’t need to sacrifRICE taste for a GF version of this classic 〰️ Try my RICE CRISPY MARSHMALLOW TREATS & you’ll be transported back to happy childhood memories 🥳👏🏼 I used @erewhonorganic crispy brown rice for the cereal & @mydandies marshmallows 😋🍭 AND, they make a perfect last-minute dessert idea for Father’s Day 🥰 . The recipe is simple! 👉🏼 In a large pot, melt 5 tbsp of butter over medium-low heat. Once melted, add 1 bag of marshmallows, stirring frequently until fully melted, then remove from the heat. Add in 1 tsp of vanilla extract and mix together. Stir in in 5 cups of rice crispy cereal (I used a 10oz bag of marshmallows; if the bag you use is 16oz, add 1 more cup of cereal & 1 more tbsp butter) until all ingredients are fully mixed together. Transfer the mix to a baking dish lined with parchment paper to prevent sticking. With a spatula or piece of parchment paper, gently press down to fill the dish and to make them even. The more you pack it down, the chewier the treats become, so try not to over-do it! Let sit at room temperature for 1 hour, then enjoy 😍 . A big shout out to all the dads out there!! here’s the thing, noodle and veggie filled bowls are kinda my jam, served in a creamy, salty, nutty sauce and i am one happy happy girl. creamy pasta sauces, but without the cream – one of my all time favourite things to eat. this 🍝 VEGAN VEGGIE MISO TAHINI PASTA 🍝 is a dream and so easy to do! packed full of crunchy veggies in creamy sauce, this glow bowl is the perfect fast, healthy and satisfying lunch or dinner bowl 😋// made from ground sesame seeds, tahini is a source of healthy fats, protein, calcium, iron, and magnesium. so, while this pasta sauce may feel decadent and creamy, it’s actually full of nutrition 👍🏻 tahini is not all, however. mushrooms also play a super important role! not only are they delicious, they are good source of nutrients for strong bones – full of calcium and vitamin D which are heroes for your bone health 🍄 ingredients: 1️⃣ 1 yellow onion, thinly sliced 2️⃣ 90g mushroom, sliced 3️⃣ 1 tablespoon white miso paste 4️⃣ 1 cup vegetable broth 5️⃣ 1 tablespoon nutritional yeast 6️⃣ 2 tablespoons @mayversfood tahini 7️⃣ veggies of choice 8️⃣ 200g pasta of choice 9️⃣ toasted sesame seeds, to garnish instructions: 1. in a skillet over medium heat, then add in onions, cooking for 5 minutes until translucent. 2. add in mushrooms and miso paste, and saute for another 1-2 minutes. Add in the dry pasta, broth, and nutritional yeast, and bring to a boil. 3. reduce heat and simmer for about 15 minutes until pasta is cooked, stirring occasionally. 4. turn the heat off and mix in the tahini, lemon juice and veggies, stirring vigorously until everything is incorporated. cover for a few more minutes until greens are wilted 5. garnish with toasted sesame seeds and serve.

Apple, Parmesan & Pecan salad 🥗 👆🏼👆🏼Its been on high rotation lately - perfect with any grilled fish or meats or as a BBQ side dish! ☀️😎 I just love 💛 the roasted pecans + tangy dressing + crunchy apple 🍎 such a fresh & tasty combo! 👊🏼😋 #yespecan . . Mixed green leaves Toasted pecans Sliced red apple Grated carrot Parmesan cheese . . Dressing 2 tbs extra virgin olive oil / or coconut oil 2 tbs red wine vinegar 2 tsp honey
Salmon + veggies, oh my! 😍 . Throwing it back to this one-sheet pan meal, which was totally worth throwing back to. 😉 . WHAT WENT DOWN: • salmon filets (I usually ask them to slice them about 2” thick length-wise for even cooking) • organic grape tomatoes • asparagus spears, trimmed . Place everything on a sheet pan. Drizzle veg with EVOO + sprinkle everything with black pepper + @seesalttaste sea salt flakes. Place into a COLD oven and then set temp to 325 F.
