The last 3 weeks I have been participating in a test group for a new strength training program and it’s been kicking my booty but it’s been such a powerful experience for the mind, body and soul. I’m grateful for my amazing coach and mentor @chelsea.lipstreu - we really click even though we lead very different lives! She’s a full-time elite coach for our company. She’s shown me how to grow my own team balanced with part-time hours and pushed me to grow as a leader and really consider how I wanted my own team to function (and Team Forking Fit is now such a positive force 💙). I’m a cat mom, while she’s a dog mom. Admittedly she does like cats, but I don’t see them pawing around your house, Chelsea, so you’re a dog person now. She has three daughters, all with unique and beautiful personalities. I’ve got 26 new kiddos each year in my classroom. We did fall in love with the same starter program, but a few years apart! So we’re both rocking the recent reboot. 😎 I’m looking to expand my team with women who want to become their best, healthiest selves and encourage others to do the same. Are you up for the challenge? I have cerebral palsy. I used to say that like it left a bad taste in my mouth. As a child I didn’t see the ways it taught me regarding perseverance, problem solving, and or the world in general. I know for a child that might be a lot to comprehend but it was even harder having a twin sister. A twin sister who I thought was perfect because she didn’t have a disability. That’s probably why I would yell at her for wearing my leg brace 😂 but who knows maybe she wanted to be like me? I had something kind of unique to live with. I’m glad my perspective on it has changed over the years but it has taken so much personal growth and to this very day! I’m 26 years old and starting driving lessons again because my ego at 21 did not want to look at special driving accommodations.. but that’s another story. Being unique as I say was something I cringed at in the past. But I see it as a form of empowerment no matter how small your uniqueness might seem **belly roll** anyone? It makes us us, different from the person next to you and that’s a pretty powerful thing.
Runner- if you run that is what you are! I don’t care if you run 1 or 26, YOU ARE A RUNNER! 10 miles is my goal this week and 4 of those miles are now done! I almost used the, it’s too windy excuse, but this girl is dedicated because there was no motivation 🙅🏼♀️ Make yourself proud! Like I truly mean that, STOP trying to please the people around you! I am living proof it doesn’t work, it just will end up burning you out! 🤦🏼♀️
We all know that being a wife AND a mother AND have a career is not easy! We had the BEST dinner tonight!!! 😋 . Where are all my spaghetti squash lovers at? 🙋♀️ . Healthy Tuscan Chicken Over Spaghetti Squash by @oursaltykitchen . Ingredients 1 large spaghetti squash 2 tbsp olive oil divided 1 c coconut milk 1 c chicken bone broth 1 tbsp arrowroot powder 4 slices bacon chopped into 1/2" dice 8 oz mushrooms sliced 1.5 lb boneless skinless chicken breasts diced into 2" cubes 2 tsp italian seasoning 1 tsp sea or kosher salt 1/2 tsp cracked black pepper 3 cloves garlic minced 3 ounces oil-packed sundried tomatoes sliced into 1/2" ribbons Instructions 1. Heat the oven to 425°F. Slice the spaghetti squash in half lengthwise. Scoop out the seeds. Lay the squash cut side down on a parchment lined baking sheet and roast until tender and the top is caving in, 30-35 minutes. 2. Combine the coconut milk, broth, and arrowroot powder in large measuring glass. Whisk until throughly combined, then set aside. Prep the bacon, mushrooms, chicken, garlic, and sun-dried tomatoes. 3. Heat a skillet over medium high heat. Add the chopped bacon and sautee, stirring occasionally, until the fat renders and the pieces are crispy, 7-8 minutes. Remove the cooked bacon using a slotted spoon and set aside. 4. Add the mushrooms to the pan and saute in the bacon fat, stirring occasionally, until golden brown and crispy, about 8 minutes. Remove the mushrooms using a slotted spoon and set aside with the bacon. 5. Add the remaining tablespoon of olive oil and heat until it shimmers. Add the chicken to the pan and sprinkle with the italian seasoning, salt, and pepper. Toss to coat the chicken pieces in the fat and seasoning. Saute, stirring occasionally, until cooked through (165°F), 9-10 minutes. 6. Make a well in the center of the pan. Add the garlic and sun-dried tomatoes, and saute until fragrant, about 1 minute. Return the bacon and mushrooms to the pan and toss all ingredients. Pour in the coconut milk slurry. Simmer, stirring once or twice,

‼️PREP UPDATE‼️ I am now 5 Weeks into my prep and the time is flying by. This prep is so different then my last prep. I am eating more food and doing less cardio. This prep I decided to follow MACROS vs a Meal Plan. Although I have been eating mostly the same meals everyday, it is less stressful knowing that I can switch things up when I want. Which I was able to do over my vacation last weekend. I don’t feel near as restricted as I did last prep. I have had a couple down days (not every day will be perfect). Yesterday was my first real struggle day with craving sweets and wanting to go to a gas station and buy every candy bar in site! 😋 But for the most part I am thriving! Going to start kicking up my posing practice. So ready for this summer!! Focusing all of my energy on my goals! Do you ever have a long list of To Do's, and the ones at the bottom never get done? Schedule the task on your calendar, and make sure you follow through.
