🏔FIRST COLORADO SHOPPING TRIP🏔  I’ll be honest, I’m still in awe that I live in Colorado && get to go grocery shopping in the middle of the day on a Monday, plus with a great view of the mountains. ✨  I remember having to go grocery shopping on two of the busiest days of the week, Saturday & Sunday. I hated it because that was the only time I could go. As a classroom teacher, there were days I wouldn’t leave the school until 8 or 9pm at night because I was planning, prepping and getting my classroom ready for the next day. While I was trying to at least. Most of the time I was sitting on my classroom floor in tears because of feeling  OVERWHELMED & ANXIOUS about the next day of school. ✨  Not only did I have to grocery shop on the weekends but also had to meal prep all my meals for the week. Most of the time it was a basic meal like chicken, rice & broccoli while I was counting my MACROs because I thought that’s is what was going to help me stay consistent and become healthier. ✨  Boy was I wrong! It became boring real quick, then led to me over eating and stuffing my face on the weekends with everything and anything. My body was over it! ✨  I’m grateful that I made the choice to leave the classroom. Was I scared? Yes! Was I worried about my income? Yes! But, I knew that my mental health and well being were important than being stuck in a classroom & at a school that made me feel anxious, stressed & worries all the time. ✨  Today, I am able to shop at the grocery store anytime and any day I want. I’m now following a healthy, balanced & food freedom nutrition plan that I’m excited about because I don’t have to only eat chicken, rice & broccoli. I STILL get to eat ALL the foods I LOVE & ENJOY! ✨  Who wants to live a healthier & happier lifestyle while eating ALL the foods you LOVE while getting results? Sticky Glaze Salmon Tray Bake - complete meal done in ONE tray! No chopping needed, 5 mins prep! • The marinade is sweet, sticky, and spicy (omit cayenne pepper if you don't like spicy food). I licked the plate clean 😁, it was truly so delicious! • I left Adam's one without any glaze as last time I put glaze on, he rubbed his eyes with his hand and got upset. So no glaze for him, he still finished the whole salmon fillet. 😁 • Other variation: We use asparagus as thats what we have on hands, however broccolini, sliced zucchini, and carrots would work well here too. To complete the meal, I throw in some potato gems, alternatively serve with crusty bread or rice. ☺️ • We bought our Salmon from @aldiaustralia frozen section. I like to have frozen salmon in our fridge for easy brunches. I usually defrost the day before in the fridge. #morning #matcha #overnightoats with Apple and #gojiberries 😋 #recipe below ⬇️ #floconsdavoine au thé vert matcha, pomme et baies de goji #recette ci dessous ⬇️ INGRÉDIENTS /INGRÉDIENTS =>1/2 cup #oatmeal /1/2 cup de flocons d'avoine =>1 Tbsp #chiaseeds /1 cac gaines de chia =>1 tsp #matchapowder /1 cac poudre de thé matcha =>1/2 ripe banana 🍌 mashed (natural sweetener!) /1/2 d'une banane bien mûre écrasée (sucrant naturel !) =>1 cup almond milk or milk of your choice / 1 cup de lait d'amande ou de votre choix =>1/2 an apple cut into chunks /1/2 d'une pomme coupée en morceaux =>Few goji berries / quelques baies de goji ➡️Mix the matcha powder first with a bit of hot water, when all is dissolved add the almond milk, mashed banana and dry ingredients + apple. Mix well again and let it sit on your counter about 10 min. Mix again and top with goji berries (they will become nice and soft with the moisture) - place in your  fridge overnight and  your #breakfast is ready to grab the next morning. Surprisingly there aren’t too many good seafood places around Clear Lake. The majority serve the typical fish and crab cake dishes you’d find on just about any menu. Shellfish are hard to come by and especially if you don’t want them breaded and fried. Needless to say we stayed in and did it up ourselves: wild caught gulf skrimp, lil’ neck clams, spanish chorizo and diced veggies in a warm turmeric coconut milk broth finished with plenty of fresh dill and orange zest. “Is our baby still breathing? Is he alive?” Literally the first words out of my mouth this morning 🙈 this guy slept a 7 hour block 😮 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ We’ve never done that before. We are usually up 3-4 times on average & have just come off the back of some nights were I stopped counting at 7 🤦🏽‍♀️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I know it’s probably a once off, but hey, I can still celebrate it!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ If you’re a new mumma or about to be a mumma & you get a baby that sleeps, seriously the most blessed thing. But if you don’t, let me tell you, it’s normal! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ There is also no quick fix (in my opinion) my daughter was horrendous & didn’t start sleeping through until after one, despite doing absolutely everything. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This little guy isn’t as bad. But I’ve learnt to just go with it. After trying everything first time around with no success, I’m more at peace with it this time. Who wants the recipe?! ✨ . #deats 1: almond flour tortillas (so expensive but seriously so worth it) + rocket + buffalo cauliflower (sauce made from hot sauce, butter, and garlic powder) + avocado 🥑 + vegan cashew ranch + sprinkle of chili powder . #deats 2: Ingredients: - 1/2 head of cauliflower, chopped into florets - 2 tbsp butter or vegan butter - 1/2 - 3/4 cup hot sauce (depending how hot you like it) - 1 tbsp garlic powder - 2 handfuls kale - 1/2 avocado, diced into chunks - 2 tortillas (I used Siete almond flour kind) - Dressing of choice  Directions: 1. Preheat oven to 200C/400F. Cut cauliflower into desirable sized florets. Place on oven sheet, cover in garlic powder to taste, and bake for 25 min.  2. While cauliflower cooks, melt the butter for 15 sec in microwave. Mix in the additional garlic powder and hot sauce. Stir to combine and set aside. 3. Place 1 tsp olive oil in pan over low-medium heat. Sautee kale until crispy, about 5-10 min. 4. Take cauliflower out of oven and coat in buffalo sauce mixture. Place back in oven for additional 10-15 min. 5. Heat up tortillas. Place kale and avocado chunks. Take cauliflower out of oven and place in tortillas as well. Top with dressing and any additional desired spices.
