Food prepping ... this is week two for me. The actual time it saves me during the week is so worth it! Plus I don’t just grab for quick snacks (like protein bars and nuts) when I have my meals ready to go .

🏔FIRST COLORADO SHOPPING TRIP🏔 I’ll be honest, I’m still in awe that I live in Colorado && get to go grocery shopping in the middle of the day on a Monday, plus with a great view of the mountains. ✨ I remember having to go grocery shopping on two of the busiest days of the week, Saturday & Sunday. I hated it because that was the only time I could go. As a classroom teacher, there were days I wouldn’t leave the school until 8 or 9pm at night because I was planning, prepping and getting my classroom ready for the next day. While I was trying to at least. Most of the time I was sitting on my classroom floor in tears because of feeling OVERWHELMED & ANXIOUS about the next day of school. ✨ Not only did I have to grocery shop on the weekends but also had to meal prep all my meals for the week. Most of the time it was a basic meal like chicken, rice & broccoli while I was counting my MACROs because I thought that’s is what was going to help me stay consistent and become healthier. ✨ Boy was I wrong! It became boring real quick, then led to me over eating and stuffing my face on the weekends with everything and anything. My body was over it! ✨ I’m grateful that I made the choice to leave the classroom. Was I scared? Yes! Was I worried about my income? Yes! But, I knew that my mental health and well being were important than being stuck in a classroom & at a school that made me feel anxious, stressed & worries all the time. ✨ Today, I am able to shop at the grocery store anytime and any day I want. I’m now following a healthy, balanced & food freedom nutrition plan that I’m excited about because I don’t have to only eat chicken, rice & broccoli. I STILL get to eat ALL the foods I LOVE & ENJOY! ✨ Who wants to live a healthier & happier lifestyle while eating ALL the foods you LOVE while getting results? A tip for a great green smoothie: use FROZEN spinach! This is about 1.5 cups of frozen spinach, 1/2 a frozen banana, almond milk, and Vega vanilla protein powder. Best part is you don’t taste spinach AT ALL!

Who wants the recipe?! ✨ . #deats 1: almond flour tortillas (so expensive but seriously so worth it) + rocket + buffalo cauliflower (sauce made from hot sauce, butter, and garlic powder) + avocado 🥑 + vegan cashew ranch + sprinkle of chili powder . #deats 2: Ingredients: - 1/2 head of cauliflower, chopped into florets - 2 tbsp butter or vegan butter - 1/2 - 3/4 cup hot sauce (depending how hot you like it) - 1 tbsp garlic powder - 2 handfuls kale - 1/2 avocado, diced into chunks - 2 tortillas (I used Siete almond flour kind) - Dressing of choice Directions: 1. Preheat oven to 200C/400F. Cut cauliflower into desirable sized florets. Place on oven sheet, cover in garlic powder to taste, and bake for 25 min. 2. While cauliflower cooks, melt the butter for 15 sec in microwave. Mix in the additional garlic powder and hot sauce. Stir to combine and set aside. 3. Place 1 tsp olive oil in pan over low-medium heat. Sautee kale until crispy, about 5-10 min. 4. Take cauliflower out of oven and coat in buffalo sauce mixture. Place back in oven for additional 10-15 min. 5. Heat up tortillas. Place kale and avocado chunks. Take cauliflower out of oven and place in tortillas as well. Top with dressing and any additional desired spices. This salad is so filling and scrumptious!!!! Shredded purple cabbage, Grated carrots, chopped green onions and fresh sprouts!! nothing better than a spicy ginger peanut butter dressing on top!!
