Another no filter San Diego afternoon trail run. A couple of folks have messaged me and asked me how did I get in shape at 50 years old. I ran and stuff but my overall condition gotten worse and worse since the year I left the Army in 1989. First step was getting my DNA analyzed at #fitnessgenes And understanding my inherent strengths and limitations. After about three months of going to the gym at #eosencinitas my clothes started to not fit – they were too small. Pretty soon I was almost 220 pounds and for the first time in my life could see my stomach muscles! It took me about four nights per week for a few months to do this. for me personally this was a challenge, after the end of a long workday and with two small children is so easy for me to say “let me stay inside and eat fondue and drink this wine”, but the simple act of putting on my gym clothes is enough to snap me out of this mentality and is a neat trick to get one self to the gym. I eat whatever I want, bacon cheese eggs wine – as long as it’s as unprocessed as possible and organic. This diet does not worry me because along with Magnesium supplements and the luck of good genes I have a perfect cardiac score of 0.0. Recently, the #pruvit Keytone drinks have helped me not only curb appetite but trim more fat, a nice tool. So there you have it – the gym for five times a week, between 45 minutes an hour and a half each time, typically after 8 PM when the kids are in bed, weekend trail runs, Bacon eggs and wine. Perfect time to have a cup of hot chocolate as the weather is getting chilly... This is by far the best hot chocolate I have ever had... using dark chocolate with layers of complexity and a long finish ( in a way like a fine wine vs. a simple wine) ..., you may adjust the level of bitterness by adding in hot milk as you wish...the chocolate used is from the Alain Ducasse brand and it is indeed at the gourmet level... 🤩🤩🤩 Tips:  you may enjoy a drink and some desserts by Cédric Grolet (awarded World’s Best Pastry Chef 2018 by the World’s Best Restaurants list) in tranquility at the bar area should you want to avoid the full afternoon tea set at the lobby which required advance booking nowadays... - - - - - - - - -
A fairytale like Chateau with the second largest collection of antique paintings in France, after the Louvre Museum.  What’s more interesting to me, is that it is here, the grand chef François Vatel, an early creator of elaborate banquets for the royal and nobles in French Culinary History, created the first Chantilly cream in the world.  Enjoyed very much reading traces of information about French Gastronomy and the French Art de Vivre back in the old days of the 17th century... 🎂🎂🎂 Tips:  The culinary works of Vatel influenced the chefs of his time and all the French chefs for the next 100 years before Antonin Carême brought order to French Haute Cuisine in the early 1800´...He was in the same era when Le Notre created the first French Jardin in History. - - - - - #fairytale #beautifuldestination #frenchchateau

Simple classic Bouillon food with an effort to modernize its presentation.  A place to immerse in the Paris of the 1900’s. 🍷🍷🍷 Tips: back in 1855, the first bouillon was created as a type of soup/broth made with the left over meat for the workers in Les Halles, it has then became the first chain of restaurants for the working class in Paris. In 1900s, there were around 250 Bouillons in Paris, serving quality fast food.  Some cater to the upper class.  Nowadays, only a few left, and are frequented by tourists and locals for the nostalgic ambiance and its relatively low fare. - - - - - - -
First morning without class! 🤓🤓🤓 Feeling heavenly with my super runny Époisses cheese de Bourgogne and mushroomy Camembert de Normandie accompanied by some good pieces of bread while bumping into Les Carnets de Julie on tv...talking about regional specialties as usual. 🤓🤓🤓 Tips- just like wine, there is an AOC system for French cheese, only 10% of production is qualified for Camembert de Normandie, using only lait cru- unpasteurized cow milk from the region and must be produced in this region. Other regions producing this cheese could only be called Camembert and indeed there is a difference in taste due to the difference in terroir. - - - - - - -
Contemporary French cuisine by Japanese chef Shinichi Sato, trained at L’Astrance ( 3-Star Michelin on the innovative side) and now awarded 2-star.  The 10-course surprise menu was mostly seafood based, interplaying with some Japanese culinary skills.  E.g. I tasted some Robata charcoal grill smoke from my blue lobster, that was cooked with girolle mushrooms...the intense flavor of the blue lobster was uplifted while remaining very tender....the dish look very simple (that’s what they refer to as modern minimalistic?! ) nevertheless it was well made... 🥂🥂🥂 Tips:  they only do surprise menus here and they serve the 10-course menu for lunch and dinner... they are under Relais & Chateau. - - - - - #happyweekend #yummy #brunch #happymoments
Tradition in simplicity- one of the last authentic gourmet bistros in Paris, bought out by Alain Ducasse. From Burgundy to Bangkok, and this time in Paris, meet up with my foodie friend here mainly for their signature Challan Duck with olives, which didn’t disappoint us.  A place we could enjoy classic French dishes with pleasures. 🍷🍷🍷 Tips:  The restaurant is founded in 1932 by a peasant mother from the Burgundy region who traveled up to Paris carrying her sincere and generous family recipes. The dishes here are solidly yum. Nothing fancy.  Tips 2: after a full dinner bien mangé, it’s a nice short walk to La Seine river and The Notre Dame church to appreciate city of lights at night. 🍷🍷🍷

Introduced by my born-in-Paris-left-bank French friend (that’s what he was proud of himself😜) a few years ago, the restaurant has been well established itself on Boulevard Port Royal since 1900’s, serving la cuisine bourgeoise. 🍷🍷🍷 Tips: This is my first time trying this branch on the right bank, the lobster salad is still yum and I’d recommend it for summer time.  I had a craving for some meats and my entrecôte (rib eye steak) with morel mushrooms didn’t disappoint me.  For those who wanted to try something typical French, I would recommend the frog legs here. While on my way to South West of France, so thrilled to have learned that @restaurantmirazur , located in Mention (the world famous Lemon Town), South of France, has climbed up its ranking to no. 3 in the just released World’s Best Restaurants 2018. 😎😎😎 Throw back some of my moments in 2015 when it was a 2-starred restaurant ranking no. 11 on the same list. It was indeed one of my most enjoyable dining experiences in France (in terms of food). In between a Pauillac or a Chateau Neuf du Pape as proposed by the sommelier, what would you choose? 法國廚神煮乳鴿,真的有一手,肉質鮮嫩味濃,與香港吃開的燒乳鴿丶滷水鴿、煙燻鴿等肉質有點點不一樣。這碟餸啡啡的有如農家菜peasant food, 三款不同的野家禽,肉質各有特色,精華汁輕身而入味,整體處理確是到家的。這瓶波爾多Pauillac, 與鴿配合,也喝到波爾多該區經典的味道,沒有點錯。 😎😎😎 Tips:  In France, it takes 7 years of work at a restaurant before someone could officially become a sommelier despite his education in the field. At a top quality restaurant, the sommelier should have enriched experience with his wine list and the food serving there. With my food order, I would usually let the sommelier propose his options to learn from their opinions, and to stay open minded,  from there I pick what I feel like at that moment.
