Since being married to a Swiss I have been quite excited to try and cook some of his native Swiss delecacies. Now, since fondue is more of a meal, for more than 2 people, to have as you cook them I wouldn't make it just for myself. Also, I have quite an inkling for potato dishes myself hence I quite love these amazingly simple yet uber delicious röstis with meat or vegetables. It needs only about a few ingredients (1 mainly) for the recipe and takes barely 10 mins to cook. Originally a peasant dish in Switzerland, it is a lovely treat to have as mains or side from time to time. 3 ingredients quick rösti would need: 🥔2 large floury potatoes like russet 🥔2-3 tbsp oil to fry 🥔sea salt and freshly ground black pepper for taste For the rösti, grate the potatoes coarsely into the a clean tea towel. Fold the towel around the potato to form a ball and squeeze to remove as much moisture as possible. Season the potato with black pepper, then divide into four equal portions. Heat a large frying pan over a medium heat and add two tablespoons of the oil. Make a small flat cake from the potato and put it on the pan. Fry the rösti for 3-4 minutes on both sides, or until golden-brown all over and tender all the way through, adding more oil if required. Season with salt, then remove from the pan and drain on kitchen paper. You can also add eggs, onions, garlic and paprika to make it interesting. You can also parboil the potatoes a bit before grating and making the cakes.
