Fabulous little appetizers! You can eat these little Boudin Bites of goodness for breakfast, lunch, and dinner. The bites are a mix of pork and rice put inside of a casing and served with a Creole Mustard. LOCAL EATS: As always, we had the most epic and delicious night at @inatitoshare celebrating our belated Valentines. 馃槉 The food here is inspired, creative and beyond incredible. And the service is always top notch. We love sitting at the massive brass chefs table and chatting with the team, getting little insights on all the love that goes into each dish. Inati is a family run business and it really doesn’t get better than this for a fabulous night out in Christchurch. . We tried several new dishes including the Stonyhurst lamb with salsa verde (the little fried cubes are delectable braised lamb neck). We adored this dish which was surprisingly light after several small plates. We also had the slow cooked hens egg with spinach and summer truffle, the reinvented donkey carrot (confit in lamb fat) with lamb neck, and the special dish (not on the menu) beef tartare on top of a Brie cheese toastie. Wow! 馃槏 The fish crudo was the perfect light start with fermented chilli, apple and fennel flowers. And of course we had to have their signature duck trumpets - duck parfait, blackberry jam, seed mix and duck salt. Epic! @cuisinemagazine good food awards are a bit of a joke in my opinion for not awarding a single hat to these legends. Such a standout experience which embodies the true spirit of sharing good food with passion and respecting the produce!

We had salmon leftover from yesterday’s dinner and I had to put it to good use. I pan seared the salmon then broke it apart to make a salmon salad sandwich with roast red peppers, cherry tomatoes, fresh herbs, spices and Greek yogurt. Delicious! * * * * *

The last time that I made teriyaki chicken my son told me he wanted me to make it for him as a sandwich. And today I did! Sunday dinner... salmon and tuna melt! Today I made use of the salmon and tuna odd ends and pieces, from my trips to the fish market, that I currently have in the freezer. * * Process: -I seasoned and cooked the fish in the oven. -Removed the bones and shred by hand. -Seasoned with red onions, parsley, black pepper, and homemade yogurt that I bought the other day (extra health points!) -Topped with mozzarella cheese and popped them in the oven. Dinner is served! Tonight we have a Cape Verde style Chinese fried rice. My version is made with tuna, carrots, and fresh red kidney beans instead of the green peas in the recipe. Tonight for dinner we had... Moroccan chicken calzones! A couple of weeks ago I made Moroccan chicken for the first time and thought it was delicious! Today I made it again, with a small twist, as a calzone! Today in my kitchen we have SENEGALESE food! This dish is called “Poisson Yassa” or fish Yassa, and I used salmon in my version, with baked potatoes. See recipe link below 馃憞馃従. Today the spotlight is on my love and biggest culinary inspiration by far, Chef Joao. This dish was cooked 6 years ago in September 2012. It is an original dish of his own creation that he called “Ras Salmon Papaya.” The first picture is the finished product and the second picture is a process shot. As you see in the second picture, he baked the salmon INSIDE the papaya on low heat for a few hours, then he used the papaya as a serving dish adding rice and fries for the final presentation. How is that for creative plating guys? Even though all these years have passed I still remember this dish clearly and can you tell that it is the most delicious salmon dish I have had in my life. You can feel the passion that he has for cooking in every dish that he makes.
