I started my journey exactly 1 year ago today, February 3rd! 🎉 72lbs down, with a lot of muscle gained 💪🏻 I wasn’t going to let this one be another failed diet. This time I committed to a lifestyle change. I began learning about nutrition and what was actually good for your organs, not just what calories they contained! I was pre-diabetic, lethargic, my depression was worsening, I was always sick in some way, and it was tiring. I followed some weightloss accounts on Instagram, commented on how they inspired me to begin, and now I’m the one getting messages that I’m inspiring others! It’s mind boggling that I have made it to a year, let alone I am others’ inspiration!I plan on continuing my journey to lose 100lbs and push myself to the best I can be physically. 3 ingredient pancakes! 🤩 This is one of the most popular recipes in my recipe app 👌🏼 This works perfectly fine to do in a blender as well. The best part about this recipe is that I always have the ingredients at home, they are staples. Don’t have oat flour? Do not worry!! You can make it in no time: add rolled oats in a blender/food processor and blend until it becomes flour, store in a jar until next time your making these bad boys 😎 The recipe can be found in the app “Plain banana pancakes” or down below✨ BANANA PANCAKES (2 servings) - 1 very ripe banana - 1 cup oat flour - 1 cup plant milk (I used oat milk) - Optional: add whatever taste you like, I used cardamom STEPS 1. Make the oat flour if you haven’t got any (see in caption above) 2. Put all ingredients in a blender or mash the banana and blend all the ingredients with a whisk 3. Let rest for 5 minutes 4. Cook on medium heat (until bubbles appear, flip and cook for another 2-3 minutes) preferably in a non-stick pan without oil or water 🍫 PS. The chocolate sauce is just some cacao powder mixed with agave syrup 😁 . Veggie Pasta Bowl by @veganreset 💜 . Ingredients: (serves 2) 5oz whole wheat or gluten-free pasta of choice (dry weight) Veggies: 1/2 small golden acorn squash 1/4 head cauliflower 1/2 zucchini 1/2 red bell pepper 1/2 cup Brussels Sprouts, halved 1 (golden beet), peeled 1 small carrot 1/2 lemon, the juice 1/4 cup water 2/3 cup cashew milk 1/4 cup cashews 1/4 celery stalk 3 cups of kale 1 green onion Spices and condiments: 1/4 tsp Smoked Paprika 3 tbsp Nutritional Yeast 1 tsp onion powder 1/2 tsp Sea salt 1/4 tsp Garlic Powder 1 pinch Crushed Red Pepper (optional) 1 tsp olive oil 1 tbsp cornstarch  Directions: 	1	Preheat the oven to 350F 	2	Chop the veggies (except for the kale, green onion and celery), line a baking tray with parchment paper, drizzle the olive oil and a 1/4 of garlic salt on top of the veggies and bake them for 40-45 minutes. 	3	About 10-15 minutes before the veggies are done, cook the pasta according to package instructions. 	4	In a high speed blender, blend the water, cashews, 1/3 cup cashew milk, roasted acorn squash, all the remaining spices and condiments, the green onion, lemon juice and celery until smooth. 	5	In a large pan, mix the kale and cheesy sauce and cook for 2 minutes at medium to high heat. Add 1/3 cup cashew milk, the roasted veggies and pasta to the pan, stir well and remove from the stovetop.  Serve in bowls and top with a little more nutritional yeast and crushed red pepper. 	6	Enjoy! Notes: 	1	Instead of the cashew milk, you can simply use more water. 	2	Feel free to replace any of the vegetables with other vegetables. Sweet potatoes are a great substitute for the acorn squash. 	3	If you’re allergic to nuts, use 1/4 more acorn squash, 2 tbsp more nutritional yeast and 1 tbsp more cornstarch instead of the cashews (and water or soy milk instead of the cashew milk). 4	If you’re allergic or intolerant to gluten, use rice pasta or quinoa instead. #bestofvegan  Please follow me: -@Vegan_fan_insta

Eating salmon on Sunday feels so conformist (who else is on the #salmonsunday train today? 🙋🏼‍♀️), but in the absolute best way 😍. -  #whatsonmyplate: honey garlic chipotle salmon 👉🏻 1) in a bowl, combine 1 tbsp. honey, 1/4 tsp. chipotle chili powder, 1 tbsp. melted ghee or butter, a punch or salt + a punch of pepper. Vegan Carrot Cake with wild blueberry cream frosting by @ellenfisher 💜 Recipe:⠀ Ingredients⠀⠀ For the filling:⠀ 4 cups carrot pulp⠀⠀ 1/2 cup walnuts⠀⠀ 1/2 cup raisins⠀⠀ 1/2 cup coconut flakes⠀⠀ 6 medjool dates, pitted⠀⠀ 1 pinky size piece ginger⠀⠀ vanilla ⠀⠀ 4 tbsp maple syrup⠀⠀ 1 tbsp Cinnamon ⠀⠀ ⠀⠀ For the frosting: ⠀⠀ 3 cups soaked raw cashews, 1 cup coconut water, 1/2 cup coconut meat, maple syrup to taste, vanilla⠀⠀ ⠀⠀ How To Make:⠀ Blend the frosting ingredients until smooth. Freeze for a few hours to thicken/harden. Food process the filling ingredients. Then take the frosting out of the freezer and layer the filling and frosting in a cake pan. top with a layer of frosting that is stirred with wild blueberries. Freeze for a few more hours. Serve. 🌱Mushroom Chickpea Ragout🌱 So ‘meaty’ with all the mushrooms. Too much deliciousness for words🙊 and I never run out of things to say!! Happy Chinese New Year💛. 🌱Recipe: Cook 3 finely minced (small) onions in enough vegetable broth to moisten (or olive oil) until softened and starts to brown a little (about 10 minutes). Add 3 minced garlic cloves, 1-1/2 tsp dried rosemary, 1-1/2 tsp dried thyme and 1/4 tsp ground sage and cook another 30 seconds until fragrant. Add 1 lb (16oz) thickly sliced mushrooms (cremini or white button) and cook on high until mushrooms have released their liquid and start to soften. Add 1/2 cup vegetable broth, 1/2 cup coconut milk, 1 tbsp balsamic vinegar, several turns black pepper and 1-1/2 cups cooked chickpeas. Simmer until liquid has thickened. (You can add more broth or coconut milk depending on desired consistency.) Remove from heat and stir in 2 cups spinach and about 2-3 tsp fresh lime juice. Salt to taste. . . Chocolate Hazelnut Cake by @klaraslife 💜  200 g hazelnuts, ground 200 g all purpose flour 60 g dark chocolate pieces/chunks 200 ml of vegan milk (oat, rice, almond, soy) 50-100 g of coconut blossom sugar 150 g softened vegan butter 1 tbsp of baking soda 1 tbsp vinegar 1 packet of tartar baking powder 2 tbsp apple sauce Chocolate frosting 80 g dark chopped chocolate, optionally with hazelnut bits 3 tbsp oatmilk  Preheat the oven to 180 ° C/350F, grease and dust the baking tin/cake form. Mix flour, nuts, chocolate, baking powder, sugar, baking soda in a bowl. Beat the butter with the hand mixer until creamy white (takes approx. 5 minutes) Add apple sauce and mix. Add flour mixture, milk and vinegar and mix quickly. Don’t over mix. Pour the batter into the cake form and bake for about 40-45 minutes. Toothpick sample before removing the cake from the oven. Allow to cool in the tin for 5-10 Minutes before turning out onto a wire rack to cool completely. Melt chocolate in the microwave or above the water bath. Yo, imma let you finish, but (almond flour) pasta, skillet-tossed with TONS of sauce, garlic, mushrooms, fresh basil, and red chili flakes is one of the best meals of all time! 😉💥 〰️ INGREDIENTS * 1 (9 ounce) package @cappellos fettuccine or other grain-free pasta * 8 ounces mushrooms, cleaned and sliced * 2 cups sugar-free marinara sauce * 4 cloves garlic, minced * 1 tablespoon olive oil * 1 teaspoon chili flakes * 1 teaspoon salt * Fresh basil, chopped 〰️ METHOD *  STEP 1 Cook pasta according to package directions, then set aside. *  STEP 2 In a large cast-iron skillet, heat olive oil over medium heat. Add the sliced mushrooms, and cook until they have softened. Add the minced garlic and cook until fragrant, approximately 30 seconds. *  STEP 3 Next, stir in the marinara sauce, cooked pasta, chili flakes, and salt. Waffles topped with berries, banana slices and syrup 💙  Recipe: Ingredients For the waffles:⠀ 2 cups Wholemeal Spelt Flour (or flour of choice)⠀ 1 & 3/4 cups soy milk⠀ 2 Tbsp apple cider vinegar ⠀ 2 Tbsp almond butter (or PB)⠀ 2 Tbsp natural sweetener to taste⠀ 4 tsp baking powder⠀ 1/2 tsp vanilla extract⠀ Pinch of salt⠀ ⠀ How To Make: Preheat waffle iron⠀ Mix soy milk and vinegar in a jug and allow to sit for 5 mins⠀ Mix dry ingredients, mix wet ingredients ⠀ Add wet to dry and stir until just mixed⠀ Allow batter to rest for 5-10mins. Raw Rainbow Pad Thai 🌿 by @rawandfree served in our Jumbo Coconut Bowls!  Serves 2 - 4 2 cups shredded red cabbage 2 spiralized or peeled ribboned zucchinis 1 carrot peeled in ribbons 1 cup chopped green beans 1/2 cup spring onions 1 cup mung beans 
1 cup coriander 
1/2 cup red capsicum 
1/2 cup raw crushed peanuts 
1/2 cup black or white sesame seeds Mix together in a large salad bowl • Lime Thai Dressing 1/4 cup raw almond butter 1 clove garlic, chopped 2 tbs fresh lime juice 2 tbs tamari 2 tbs filtered water 2 and 1/2 tbs pure maple 1/2 tbs sesame oil 1 tsp freshly grated ginger Blend all ingredients for a few seconds until combined! PEANUT BUTTER & HOMEMADE RASPBERRY JAM BREAKFAST QUESADILLAS 🥜 So my homemade jam actually piggy backs off of my sugar post yesterday. This jam is totally sugar-free, has healthy fats & is even packed with protein. It takes 5 minutes to make & you can use it on just about anything. No need to run to the store to grab that jam cuz you can make it yourself by controlling the ingredients! What is your favorite fruit jam flavor? ______ dEATS👇🏼 1️⃣ Raspberry Jam: Microwave about 1/2 cup of fresh/frozen raspberries (or any other berry), for about 10 seconds, heat longer if using frozen. Add 1 tsp chia seeds + 1/2 scoop of @furtherfood marine collagen (OPTIONAL, I added to give it protein & help the gut). Mix/mash & set aside in the fridge for 5 min to thicken. 2️⃣ Take your tortilla of choice, I’m using @cutdacarb lavash bread. Slather one side with @pbfit.official peanut butter spread & the other side with the jam. Sandwich them up! 3️⃣ Heat about 1/2 tsp coconut oil in a non-stick pan over medium heat. Add the closed “quesadilla” to the hot pan & heat for 2 min each side just until slightly crispy. Serve with a sprinkle of cinnamon on top.

5 spice burger by @epivegan 💚 .  1cm thick block of firm tofu 2 teaspoons of rice flour 1 teaspoon of 5 spice 1/2 a peach in 4 slices 1/2 spring onion roughly chopped 1 teaspoon vegan mayo 2 teaspoons hoisin sauce 1 slice of lime 1 bun sliced 3 table spoons of vegetable oil Method: Heat the oil in the pan. Take your square of tofu and coat it in the rice flour and 5 spice. When the oil is smoking hot carefully place the tofu in the pan. Allow to go golden brown on each side and turn. Add the slices of peach in the pan and cook for 30 either side. Spread the base bun with mayo, place the tofu on top, add the slices of peach and spring onion on top and drizzle with hoisin sauce and lime juice. I started my journey exactly 1 year ago today, February 3rd! 🎉 72lbs down, with a lot of muscle gained 💪🏻 I wasn’t going to let this one be another failed diet. This time I committed to a lifestyle change. I began learning about nutrition and what was actually good for your organs, not just what calories they contained! I was pre-diabetic, lethargic, my depression was worsening, I was always sick in some way, and it was tiring. I followed some weightloss accounts on Instagram, commented on how they inspired me to begin, and now I’m the one getting messages that I’m inspiring others! Baked vegetable salad with avocado sauce: You will need: 1 red pepper in pieces 450g of kabocha pumpkin 450g brussels sprouts 2 tablespoons of oregano 1 teaspoon salt 1 teaspoon pepper 3 tablespoons olive oil 100g of green salad Avocado sauce Avocado avocado 1 clove garlic 1 lemon juice 1/4 cup olive oil 1/2 teaspoon of salt 1/4 teaspoon pepper  Method of preparation: 1. Preheat the oven to 200ºC. 2. In a large bowl, combine the pumpkin, bell pepper, brussels sprouts, oregano, salt and olive oil well. 3. Place the vegetables in a baking dish and bake for 40 minutes. 4. For the sauce, place the avocado, garlic, lemon juice, olive oil, salt and pepper in a processor and beat until homogeneous. 5. To set up, place a serving of green leafy salad on a plate, cover with the roasted vegetables and sprinkle the avocado sauce on top. Enjoy! . Agave-lime massaged kale, chipotle baked sweet potato, red pepper, taco-seasoned roasted chickpeas, purple cabbage, grilled corn & an avocado heart with red pepper flakes Taco-seasoned roasted chickpeas: • 1 can organic chickpeas or 1 1/2 cups cooked chickpeas • 1/4 tsp garlic powder • 1/4 tsp onion powder • 1/4 tsp chipotle chili powder • 1/4 tsp paprika • 1/2 tsp cumin • 1 tsp chili powder • 1 1/2 tsp olive oil • salt & pepper to taste - Preheat oven to 400F. - Rinse and dry 1 can of organic chickpeas.  After draining, I lay mine on top of a paper towel-lined baking sheet, roll them back and forth a bit, remove the skins and let them air dry for a few minutes. - When dry, place chickpeas in a small bowl.  Add olive oil, garlic, onion, chipotle chili, paprika, cumin and chili.  Mix gently and add salt & pepper to taste. - Spread chickpeas on a parchment-lined baking sheet. - Bake for approximately 20-25 minutes or until the outside of the chickpeas are crisp. FYI: the girls opted for a deconstructed salad and chicken without the onions 😉😉. . . Spring Mango Salad with Balsamic Chicken . . INGREDIENTS: •Balsamic Chicken • 1.5 lbs chicken breast, butterflied 1 tsp each basil, oregano, garlic powder 1/2 tsp salt and pepper 2 tbsp each balsamic vinegar and extra virgin olive oil (EVOO). . •Mango Spring Salad• Spring Salad Mix 1 mango diced 1/4 red onion thinly sliced 1/4 cup crumbled feta or goat cheese Balsamic Vinaigrette  Cracked black peppercorn . . DIRECTIONS: 1. In a gallon ziplock baggie, combine chicken, seasonings, balsamic vinegar and EVOO. Shake well to coat and combine. Allow marination for 1-4 hours. 2. Once chicken has marinaded , heat oven to high broil setting and broil chicken on a foiled line baking sheet for 6-8 minutes each side. 3. While Chicken broils, assemble salad. Toss spring greens in balsamic vinaigrette and top with mango, red onion and cheese crumbles. 4. Once chicken is done, slice and combine with salad. Top with cracked black pepper and ENJOY!!!! . .

Vegan gyros by @lazycatkitchen. Ingredients for Jackfruit Pork: 4 tbsp olive oil 1 medium red onion, finely diced 4 cloves garlic, finely diced 1/8 tsp ground cloves ¼ tsp ground cinnamon ½ tsp ground cumin 2 tsp dry oregano & more for fries ½ tsp chilli power, adjust to taste 2 tbsp tomato paste 2 tins of young (green) jackfruit in water 4 tbsp soy sauce 2 tbsp maple syrup ¼ tsp white pepper (or black) 2 tsp apple cider vinegar Remaining ingredients: 1 small cucumber, sliced a handful of sweet cherry tomatoes, quartered vegan tzatziki 6 large Greek pitas 6 Romaine lettuce leaves, shredded 1 small red onion, finely sliced 2 medium potatoes (optional) olive oil Drain both jackfruit tins. Cut the firm, pointy ends off each triangular piece of jackfruit. Set aside. Heat up olive oil in a medium, heavy-bottomed, pan. Fry diced red onion until softened, translucent and lightly caramelised. Add chopped garlic and fry off gently until soft and fragrant. Add most of the spices: cloves, cinnamon, cumin, and oregano to the onion-garlic mixture. Fry them off gently, stirring the whole time, for a minute or so. Mix in the tomato paste. Now add in the prepared jackfruit along with soy sauce, maple syrup and apple cider vinegar. Mix everything really well. Squash the jackfruit pieces with your mixing spoon so that the individual fibres separate more. Season with white pepper and a pinch of ground chilli if you wish. Simmer the mixture gently for another 10-15 minutes and then allow it to cool down. Place in the fridge overnight to intensify the flavour. Just before you are ready to assemble your gyros, set the oven to 200° C / 390° F (fan function). Spread the jackfruit pieces on a baking paper-lined baking tray and bake for about 20-25 minutes, until a little caramelised and browned around the edges. Place warmed-up pitas on a work surface, fluffier side down. Fill with lettuce, cucumber, tomato, onion, baked jackfruit pork and warm potato fries. #veganrecipes #vegan

How was your weekend? • • • Deets @lotusfoods millet and rice noodles cooked in 1/2 cup of full fat coconut milk, 1/2 cup of water, 1 teaspoon curry powder, 1 teaspoon turmeric and on tablespoon coconut aminos. Bring the liquid to a boil then turn to medium and allow the noodles to cook through and then use the leftover sauce as more sauce to coat the noodles if you wish. Chicken breast seasoned with salt, ginger, garlic powder and thyme and coconut aminos and seared over medium high heat in coconut oil breast side down for 4 minutes then flip and allow to finish cooking. On the eve of Lunar New Year we walked over to Saffron Mantra Cafe and realized that they were closed as they were having their reunion dinner with their niece who’s working there as well. They came out politely to tell us that they were closed and welcomed us to take a look at their menu while in the midst of their reunion dinner preparation. They told us to come back the next day which was the first day of Lunar New Year to join them for lunch. And we have zero regrets going back again for the scrumptious food and their ambience!
