Happy #holi & Happy #spring! In celebration, I made my mom's lime rice, but subbed out rice for quinoa, and added in some veggies (onions, sweet peppers, and carrots) for a punch of sweet flavor and a mix of textures. ...... . I also learned recently that you can make quinoa in a rice cooker, just like rice, right down to the ratio of water to quinoa. Seriously, a game changer for me! (thanks @notaleafeats). .. . . So, heat up a couple tsp of ghee and saute 1 tsp mustard seeds, urad dal, and roasted chana dal (if you have it), one dried red chilli - broken in half (optional), a generous pinch of turmeric, with a pinch or three of hing (optional). When the seeds start to sputter, add chopped veggies (i had a red pepper, an orange pepper, a bag of grated carrots, and a half red onion on hand. Whatever works!) and 6 or 7 curry leaves, and saute until almost done to your liking. Add a couple cloves of garlic (optional) and heat through a couple minutes to finish the veggies. . . Add in cooked quinoa (see note above regarding cooking it in a rice cooker; can be done in parallel to the veggies. Leftover quinoa works too). Stir until Incorporated (and warmed through if using leftovers), then add a few tablespoons of lime. Growing up as a vegetarian was rather difficult, a lot of people didn’t understand it and couldn’t figure out what I actually ate. Restaurants in my hometown were very limited when it came to vegetarian options and it was pretty disheartening. In NYC though, I have never felt limited. Moments like last night are so special. I dined out with two of my great friends and we feasted on vegan food and it felt so normal, there were no limits, just delicious food that we could all share. I’m so grateful for this beautiful city and these butternut squash nachos ❤️ #eatingwitheva
Cavatelli with broccoli ripassati and anchovy pangratto. Proper southern italian fair. Whenever I cook this I think of @rachelaliceroddy talking about growing up with vegetables cooked until unfashionably giving. The Italian ripassato technique is definitely a step that the English missed out on. No romanesco unfortunately but local tendestem working just fine.

It's been a good couple of weeks eating (and drinking) like an unsupervised 12 year old, but my body says it's time to start eating vegetables and drinking actual water again 🌚 but regardless, let's appreciate this beaut of a burger from @cngburgers 😍. First time visit and had the skinny (lol) classic with sweet potato fries (always, always upgrade to sweet potato fries). They also make their own condiments, and the ketchup was SO GOOD I could probably have gone through the whole bottle if I tried 🌚.

Ever notice that with smoothies less is more? I’m kind of a pile everything I see into the blender kinda person but the flavor is always way better when I stick to a few ingredients. . We’ve been implementing the Fab Four principle by @bewellbykelly and my smoothie game is on point. . 1 T walnut butter 3/4c frozen zucchini 2 scoops collagen 1/2 frozen apple 1 T flaxseed Vanilla Cinnamon We were out of walnut milk so this one is blended just with water. Topped with hemp hearts and cacao. . Also, all the frozen items are from our garden or fruit trees. I stockpile the extras in the deep freezer so we can enjoy them all year 🍏🍎
