💫Salsa Verde Shredded Chicken Enchiladas💫 One of my favorite Mexican dishes to prepare at home. The most flavorful chicken enchilada baked with a creamy green chili queso & @herdeztraditions Salsa Verde. Layered with lots of cheese and topped with fresh cilantro, jalapeños, and diced avocados. Recipe below for the most delicious meal💚 Cook chicken breast with s+p, cumin, and paprika. Once done, shred and put aside. In the same pan, sauté chopped onions and jalapeños until onions because translucent. Toss in shredded chicken and mix. To make sauce: mix heavy whipping cream, Mexican cheese, and @herdeztraditions canned green chili’s. Also add in garlic powder and s+ p to taste. Sauce should be a creamy and thick consistency. Assemble enchiladas using medium tortillas and place in baking dish. Then pour the creamy sauce over them and spread to coat. Then pour some @herdeztraditions salsa verde salsa over this. Top with more shredded Mexican cheese and sliced jalapeños and bake in oven at 350 degrees for about 10 minutes, or until cheese is melted over all enchiladas. My husband cooked this delicious meal while I sat in the couch and watched SVU (he’s truly the best lol). Pardon the interruption of whole food postings, while I bring a way more potent dose of inspo. My 4th grade daughter, Channah, (yes, the same one that has been giving me tons of insta content with her increasingly creative confidence in the kitchen, not to mention yummy eats for my belly 😋) came to me this morning and asked if she could have a friend come over, walk with her to the store, purchase ingredients from a recipe she was inspired by from @whiskbyami (Yup, the same one I write a weekly health column for... #touche) and bake a cake with her friend. BUT, this wasn’t going to be just any cake- she wanted to use the leftover Purim candy, and make a cake to take to school, so all her friends can recite blessing on it (In our religion we say blessings before and after all foods - see my book link in bio for more info) to help pray for people who are sick to get well! She even went further to ask me to post for people to add names and got out a piece construction paper with her furry pen, to write down the names (you can still post them here in comments or in my “question” on my instastory now!) ❗️There are so many lessons for us all to learn from this which is why I wanted to share it with you, but one that’s relevant to my platform is this: We can easily get in the habit of saying “no” to ourselves and our kids, but we have to keep an open mind always, and take things in stride, because sometimes the lessons are in what your instinct is to shut down. And those moments are so much more impactful to learn than the one you thought you had to teach. There’s a time to teach and there’s a time to shut up and learn. In this scenario, it came from the opposite sides... 💛❤️💛❤️ @foodnetwork
I absolutely love that @tacobell has a whole new vegetarian menu (that can be made vegan)! Pictured above is the tostada minus the sauces and cheese! There are tons of options that can be made vegan such as the tacos, crunchwrap supreme, and mexican pizza (all substitute beans for the meat and no dairy products)! The vegetarian objects that are simply made vegan are the bean burrito (without cheese), veggie cantina power bowl (no sauce or cheese), and black bean burrito (no cheese or sour cream)! The chips and guacamole/salsa and cinnamon twists are naturally vegan! Many menu items can be made vegan by asking for the item “fresco style”! 🌮

All about the bruschetta this week! Went to the farmers market yesterday and bought a container of mixed cherry tomatoes and 1lbs of tomatoes. But do you want to know something ironic, I use to hate tomatoes. I couldn’t stand the taste, texture, juice... any of it. But somehow over time and with some work, I have learned how to enjoy them. Do I think part of that is a change in my taste buds over time? Yes. But I also strongly believe you can train yourself to enjoy healthier and a larger variety of foods. So this week, try something you’ve crossed off your menu and see if just maybe you can enjoy it. That’s all, enjoy the rest of your Sunday all!
Red lentil soup 🍵🍵🍵 Lentil soup is always my go to when I feel sick because of its great source of protein and of Zinc which is great for sickness, as well as many other spices, and it is so easy to make! Details: Makes 4 portions -2 large onions, chopped; - 2 cloves garlic, chopped; - 1 tsp ground cumin; - 1 tsp ground cinnamon; - 1/2 tsp smoked paprika; - 1/2 tsp pepper; - 100g red lentils; - 200g canned tomatoes; - 2 large carrots, chopped - 2 cups vegetable broth - 4 bay leaves; - Juice of one lime - Fresh parsley for topping Start by heating the onions and garlic, then adding the spices. Gradually add the other ingredients and finally the vegetable broth, and bring to boil. Let cook for 20min at lower heat.
