Most of us have heard that breakfast is the most important meal of the day.  We think all meals are a chance to make healthier choices, but breakfast is the first opportunity of the day! If you love morning oats, try this delicious quinoa 'pudding' recipe from our nutritionist @eatright_rd! • Ingredients: 1/2 cup quinoa 2 cups of water 1/4 cup milk of choice 1 tbsp. coconut oil 2 tbsp. maple syrup 1/4 cup chopped nuts 1/4 cup dried fruit 1/2 tsp. vanilla extract 1/2 tsp. cinnamon A pinch of salt • 1. Place quinoa in water and heat over medium with the lid on for 7-8 minutes (it won’t be fully cooked but that is perfect!) 2. Strain and drain quinoa and place back in a cooking pot  3. Add milk, coconut oil, maple syrup, and slices to the quinoa and Allos to cook on low-medium heat until thickened. 4. Remove from pot and top with your choice of dried fruit and nuts! The long weekend is here! Reward you and your family with a healthy sweet treat - WATERMELON PIZZA! This refreshing snack is perfect for the summer heat and is a great opportunity to be creative in the kitchen. • Ingredients:  1 small watermelon Plain or vanilla Greek, Skyr, or coconut yogurt Cinnamon and Honey (if you'd like) Fresh or frozen berries (any fruit topping of choice) Shredded coconut (the 'cheese' to top it all off!) • 1. Slice watermelon in round slices, starting by cutting it in half. The slices should be about one inch thick. 2. It's National Fresh Fruit and Vegetables Month so its only fitting that we feature one of our favourite superfoods - Asparagus! • Asparagus are rich in both soluble and insoluble fibre and are a phenomenal source of gut-friendly prebiotics. • - Preheat oven to 425F and line baking tray with parchment paper. - Place asparagus on top and drizzle with olive oil (about 2 tbsp.), salt, black pepper and minced or dried garlic. - Bake for 12-15 minutes and sprinkle with lemon juice and Parmesan cheese before eating! • Enjoy! Everyone has a sweet tooth so here is a delicious and health conscious mango sorbet recipe for those upcoming hot summer nights: • What you need: 2-3 cups frozen mango 1/2 lime juiced 1 cup full fat coconut milk (optional, if you want something creamy)  1 tsp. vanilla extract (optional) • 1. In a food processor, add mangos, lime juice and coconut milk. Blend until smooth.  2. Optional, add some lime zest, shredded coconut and fruit (we love peaches) on top!
