Stopping by just to quickly share a delicious Christmas breakfast idea - VEGAN GINGERBREAD PANCAKES served with yogurt, homemade gingerbread man and puffed quinoa 😊. . . VEGAN GINGERBREAD PANCAKES (this recipe makes about 12 pancakes) ♡ 125 g all purpose flour ♡ 2 tbsp brown sugar ♡ 2 tbsp coconut sugar ♡ 1 tsp gingerbread spice mix ♡ 2 tsp baking powder ♡ 1 tsp baking soda ♡ a pinch of sea salt ♡ 240 ml milk of choice ♡ 1 tbsp apple cider vinegar ♡ 3 tbsp molasses ♡ 1 tsp vanilla extract . Mix all dry ingredients in a large bowl. Mix the liquid ones in another bowl. Pour liquids over dry and mix to combine. ALMOND JOY VEGAN PANCAKES (this recipe makes 10 pancakes) 🥞 50 g raw almonds 🥞 2 tbsp agave syrup 🥞 1 large ripe banana, mashed 🥞 1 tbsp coconut oil, melted 🥞 200 ml milk of choice (I recomand using almond milk) 🥞 130 g all purpose flour 🥞 1+1/2 tsp baking powder 🥞 1 tbsp @rawnice pink pitaya powder 🥞 1 tsp @rawnice blue spirulina powder 🥞 50 g dark chocolate chips (or chocolate chuncks) 🥞 2 tbsp crunchy almond butter 🥞 2 tbsp dessicated coconut . Roughly chop almonds. Add them in a non stick pan with 1 tbsp of agave syrup and cook them on low heat for 5 minutes until they become fragrant and they caramelise. Let them cool. In a large bowl mix together mashed banana, coconut oil and milk. Add in next flour, baking powder, pink pitaya and blue spirulina powder. Mix well. Now add in coconut, chocolate chips and caramelised almonds and fold them in with a spatula. Lastly add in the almond butter and mix to incorporate it. Let the batter sit for a couple of minutes then start cooking your pancakes for about minute per side. . . . .

BRUNCH😍I made my fluffy whole wheat pancakes this morning!🤤Its SO easy to make takes less than 10 minutes!👌🙌I also want to create/ adapted an oil-free crepe recipe that disent use banana in it. Wholewheat blueberry pancakes 🥞 with blueberry sauce. ❇️Recipe below. ✅ Flour quantities can be interchanged, ❎ we put choc shot on and regretted it so don’t do it! The blueberry sauce is enough 😉 📝 Pancakes: 5 tsp flax in 1/2 cup measure fill with water and leave for 5 mins 1 1/2 cups wholemeal 1/3 cup spelt 1 heaped tsp baking powder 3rd tsp baking soda 1/4 cup coconut sugar 1 1/2 cups plant milk I.e almond/soya/oat 1.5 tsp vanilla essence 1 cup blueberries (or more if you like your blueberries!) 1 tsp Coconut oil for frying (may need more for each batch). Mix dry ingredients, then add wet ingredients and mix. Fold in blueberries. Blueberry sauce: 1/4 cup water 1/2 cup blueberries 1/2 tsp Coconut oil Tbsp agave nectar 1/4 tsp arrowroot Tsp lemon juice Cook blueberries on medium heat with oil, add in water and cook for a minute, add agave nectar and arrowroot then mix, add lemon and mix then let simmer until pancakes are ready. Makes 9 small pancakes. Apologies, we’re still stuck in the weekend pancake rut 🥞. Man, is it a good rut though. I went big on the baking powder today for super fluffy ones. I also cooked the last one in residual bacon fat 🥓- rather lovely (but definitely a once in a while thing!). I’ve discovered that passion fruit, crumbled bacon and dark maple syrup (intensely flavoured) are a triumvirate made in heaven 💕. And such a great way to use up fruit that is starting to look a little meh 😔.
