I’ve been off the eating right train due to life happening and I’ve seen my gains slowly fade away.  but I’m back!! . . Tonight’s meal was very simple.  I Sous Vide a chicken breast with rosemary and lemon. Then pan seared it and served over top a cauliflower, mushroom and asparagus medley.  Had enough to make two meals out of it. . . Chickpea Cookie Dough Bars by @laurenslovelykitchen Headover to her page for loads of deliciously healthy recipes! #recipe 👇 ➕➕INGREDIENTS 1 can chickpeas, rinsed and drained 1/2 cup creamy peanut butter 1/2 cup pure maple syrup 1 tsp vanilla extract 1/2 tsp each: baking soda & baking powder 1/4 tsp salt 1/2 cup chocolate chips, plus more for sprinkling on top . ⏩⏩Instructions ⠀⠀⠀⠀⠀⠀⠀⠀⠀ In a food processor, add all ingredients except chocolate chips. Blend till completely smooth. Transfer batter to a bowl, stir in chocolate chips. Grease a loaf pan and line with parchment paper. Pour batter in. Dough will be sticky! Wet your fingers with water to press dough into an even layer. Sprinkle with extra chocolate chips. Bake at 350 for 25 minutes. Cool in pan on wire rack. Cut into 8 squares. I’m always about setting mini goals to help take steps towards big goals. My goal this week is to dial in my sleep especially if I want to start goin back to doin my fastest cardio in the morning before work. For me sleep has always been my weakest link. Riding the train home from NYC and enjoying my favorite snack from @starbucks. I usually only eat the fruit 🍇🍎 and the hard boiled eggs 🥚 but I had a few extra points left, so I used the 3sp pack of @justins honey 🍯 peanut 🥜 butter on my apple slices. The @ww app lists the points for the eggs and cheese protein box as 8sp. So if the pb is 3, then the points between the cheese and multigrain bread is 5*. If I had any more points left, I'd be more likely to go for the cheese. 🧀 *Edit - when I got home, I weighed the cheese just for the sake of knowing. 14g/0.5 oz, which would equal 2sp. Low-carb, high protein, easy chicken stuffed zucchini boats 🚣‍♀️ 🚣‍♀️ Great recipe😄 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS 3 zucchinis Cooking spray 3/4 lb. chicken breast cut into cubes 1 Tbsp olive oil 1/4 tsp Italian seasoning 1/4 tsp garlic powder 1/4 tsp salt 1/4 tsp ground black pepper 3/4 cup pasta sauce 1/4 cup grated parmesan cheese 1/4 cup shredded mozzarella cheese . INSTRUCTIONS Preheat oven to 400°F.  To prepare the zucchini, cut the zucchini in half lengthwise, then use a spoon or melon baller to scoop the center flesh and seeds from the zucchini. Repeat for the remaining zucchini.  Place the zucchini in a baking dish or cookie sheet cut-side up and lightly coat with cooking spray. Place in the pre-heated oven for 15 minutes until the zucchini cooks slightly and becomes tender. Meanwhile, to prepare the chicken, heat the olive oil in a large non-stick skillet over medium-high heat. Add the chicken along with the seasoning, salt and pepper. Cook for 8-10 minutes until the chicken is cooked through. Add the pasta sauce and cook for an additional 2 minutes, stirring occasionally.  Scoop the chicken mixture into the zucchini boats. Top the chicken with parmesan cheese and mozzarella cheese. Return the zucchini boats to the oven for 5 more minutes, or until the cheese is melted. I did BBG WEEK 3 LEGS today!  So happy that I woke up and got it done. honestly nothing better than the feeling of accomplishment and happiness when you get through a workout. i put my alarm clock early and started at 5:30am and finished at 6:00am🌅 I feel like being mentally ready for it and telling yourself you have no excuse not to is the best way to go!  Here are a few tips that have helped me along the way and that could maybe help you too:👟 -set your alarm clock early and just get it done,  you'll then not have to worry about squishing it in the whole day -lay out your workout gear before hand!!👟💅 -know exactly what workout you are going to do! Green Bean and Turkey Asian Stir Fry. 15 min from start to finish. The bigger the dream, The harder the grind!! I am so excited and motivated to study my next qualification in community services to reach my end goal of university! This will be a huge fucking achievement and I honestly hope I can get there! I’m starting to see a future of some sort again and ready for once again “a new chapter” 😂😂 I’ve honestly actually been missing studying and the whole idea of assessments. I really think and hope this will be a way of distraction away from my crazy “up and down mind”. This might not mean much to anyone here. But life has been a fucking mess especially these last two years with not even having a place to call “home” and going from one place to another, dealing with mental health, eating/ exercise problems, conflict, loneliness... Another easy peasy dinner that I make at least once a month, especially when my family starts showing signs of illness. 🤧😷🤒 The onion, garlic, ginger, garam masala, cumin, cilantro, and cinnamon are jam packed with essential natural antibiotic, anti-inflammatory, antioxidant properties. A great big butt kicking boost to the immune system. 🦸🏻‍♀️💪🏼 . . Crockpot Vegan Thai Coconut Chili 1 tsp garam masala  1 tsp cumin  1 tsp cinnamon  1 chopped onion  3-4 cloves garlic, minced  1 handful fresh cilantro, chopped 1 jalapeño, thinly diced with seeds  1 can diced tomatoes, organic  1 can of tomato sauce, organic  1 can black beans, organic  1 can kidney beans, organic  2 cans Great Northern beans, organic 2-3 inches of fresh ginger root, processed or blended  1 1/2 cup coconut milk  2-4 cups organic, low sodium vegetable broth (depending on how thick or soupy you want it)  shredded coconut as garnish . . Sauté the diced onion and mined garlic on medium high heat until translucent. Turn heat to medium-low and add the garam masala, cumin, and cinnamon. Stir until evenly blended for about 2-4 minutes.  Add the onion mixture and the rest of the ingredients to a crock pot, cooking on low for four hours or on high for two hours.  Side note: I wash and rinse all the canned beans before adding them. And I go heavy on the spices, ginger and garlic.🤤 Add some roasted asparagus and fresh okra as a side. 🌿 #healhtyisliberating  Thanks to my sweet friend @chelle_belle87 for sharing this gem. 😘

I honestly don’t have a lot to report today! I’ve been busyyyy. I taught 2 back to back yoga classes this morning and the energy was palpable. Came home and washed my hair for the first time in 7 days😑😑...Caught up on random work and some other random stuff. And then Stu and I went to hang out w friends for a few drinks. And now I’m working w ear plugs in and he is in the kitchen cooking away blasting his music lol. #marriedlife. And so yeah, some days my posts are super deep like last night and other days my post are quite random and my way of just simply saying, “hey I like ya I’m here”. And both exist for a reason. I made it a #meatlessmonday lunch today and loaded up on the greens. 🍆🥬Last night I sautéed 2 handfuls of #babyspinach with a tbs of olive oil + 3 small garlic cloves minced + Mrs dash garlic & herb seasoning. Plus batch prepared for the next couple days some #blackbeans + steamed #whiterice. 🍚 . Next Baked at 425 ➡️ 2 medium zucchini’s sliced, with 1 tbs olive oil + a spray of olive oil cooking spray, mixed in, added black pepper + Parmesan cheese mix in, you can also use non dairy cheese. Placed in oven on baking tray for 20 minutes. Had a baked gluten free tostada shell with my beans. 💕 This right here is my reason WHY.....💕 It's WHY I keep myself healthy and well, WHY I choose this lifestyle, WHY working from home is my dream job.  When my kids were little, there was nothing I wanted more than to be able to spend time with them, be available for them, and focus on them. I was fortunate enough that when my children were growing up, I was married & able to be a SAHM and have all those things. It was a dream for me.  Now my circumstances have changed. I'm no longer married, no longer a SAHM, and my kids are getting older and needing me in different ways. However, I value my time with my children more than ever because I know the clock's speeding up. Before long, they will be off living their own lives and I will be seeing them less and less.  It's days like today, Family Day, that help remind me how blessed I am to be able to work from home and still be available to my children when they need me...even though I'm not technically still a SAHM. It FEELS like I am because and still be able to spend time with them on their schedules, while earning an income in the pockets of my day.
