I wanted to experiment with one rack of ribs this past weekend, so I decided to try a Vietnamese fish sauce marinade. This rack was cut in half and placed in a marinade of nước mấm, lemongrass, sugar, and scallions. After letting them marinate overnight, I also basted them with the mixture as they smoked. The results were a slightly sweet, umami bomb set of ribs that I will definitely make again.
This was meant to be gigli with chickpeas, but I spent so long plucking every single thyme leaf from the many, many stalks to make the deeply tasty sauce that I had no time to get gigli pasta, and even the artisanal hand-made pasta place thought I meant ‘gnocchi’ when I told them what I was after, my pursuit not aided at all by my reticence to just say ‘it’s named after that terrible Ben Affleck and Jennifer Lopez film!’ So this is chiocciole (snail) with chickpeas and apparently it’s a Middle Eastern pasta so I hope @ottolenghi will approve. Garum diary: Day 1📸 It's no news that I like playing around with yeasts and fermenting stuff, from keeping the mother yeast alive for years to making wine with grandpa and some uber-delicious Nattō at home. I always loved the funky smell of fermented products so after working with a few chefs that made their own garum/fish sauce🐟🎣 I decided to give it a go myself. I'll be posting a picture a day following the maceration process and the steps needed over time to get to some serious umami juice and hopefully I won't end up with a food poisoning lol😂 For this first attempt I'm using wild New Zealand snappers. The intestines, liver, gills, bits of flesh from the head and some of the eggs have been chopped down to small pieces and mixed with seasalt. Many recipes around the Internet call for 20% salt to 80% fish, if you're not sure remember that "more salt is better than not enough" as the salt is the only preserving agent in this recipe and the fish could go bad uncontrollably if not enough salt is added.
