I’m trying out two different techniques with the fish to decide which I want to try for tomorrow. The one on the left is without buttermilk. Honestly, after I fried chicken a month or so ago using a buttermilk batter I was OVER IT!!! Batter fell off...I felt defeated. Lolol BUT ON TUH’NIGHT...I’ve got the victory!!!! Lol Both ways are good, I prefer the buttermilk way though because it seems to soak up the seasonings more. Anyway...THIS WAS JUST A TEST!! Hey friends, it’s Ice Road season! I get to live like a normal human... ha, well that’s not true... the ice road is far from normal. H̶o̶l̶y̶ 𝗪𝗵𝗼𝗹𝗲𝘆 𝗳𝗶𝘀𝗵 𝘀𝗮𝗻𝗱𝘄𝗶𝗰𝗵! This weekend while the Strip District was crazy and every restaurant was busy, I opted for a Pittsburgh classic and a favorite of mine, the @wholeysfish fried cod sandwich. I love that it's heavily breaded and fried golden and crispy. I'm also not ashamed to reuse a pun so close to the last time I used it.
Dinner today... fried fish! We have fried red mullet, which I coated in a cornmeal and flour mixture before frying, served with rice and organic and locally grown kidney beans, topped with a sautéed red onions, tomatoes, green olives and white wine sauce. Bon Appetit! * * * * *
