I sat the @negociantsau Working With Wine entrance examination today. Working With Wine is an exceptional wine education program where successful applicants have the opportunity to learn about and taste wine from international wine superstars.⠀ ⠀ I was reminded of the session in the 2016 program on Tuscany. Hearing Paolo de Marchi of Isole e Olena talk so passionately about wine absolutely opened my mind to just how much Tuscany has to offer. The region has since become a favourite. ⠀ ⠀ I particularly love his version of Chianti Classico. The wine has to be at least 80% Sangiovese under the DOCG rules and Isole e Olena eschews the permitted international varieties for indigenous grapes canaiolo and colorino.⠀ ⠀ The result is a beautifully elegant, perfumed expression of Chianti Classico that really allows the fruit, savoury herbal notes and the structure of Sangiovese to shine through (without it hiding behind the often used and potentially quite dominant Cabernet Sauvignon). ⠀ ⠀ Pictured here with an incredible home made Pasta Carbonara using Guanciale, Pecorino, loads of free range eggs and not a drop of cream in sight. Who else wants to move to Italy?

It seems to be empty. ^ '08 Ch Léoville Las Cases Saint-Julien 1.5L, 2nd growth. 78% Cabernet, 12% Cab Franc, 10% Merlot. ^ Although not coming from a "great" yr in Bordeaux, this infant of a wine was still tasty. Black cherry, cassis, crushed rock, forest floor, charcoal and mushroom. The secondary flavors are just starting to peak their head. It was nice to see where the wine was today, if you have any let them rest for 5+ yrs and you'll be rewarded. @savaterre 2015 Chardonnay - 93 Points, Mike Bennie, Wine Front, "Beechworth and chardonnay is a conversation we often have, but perhaps it’s at a little quieter volume than other regions over the past little while. Savaterre makes a good case to turn up the hearing aids. Honey and toast scents, flinty sulphur, complex fruit profile with lots of citrus, then stone fruit, exotic tropicals, with a mesh of savoury, nutty aromas in the mix. I think I like the cut of the jib here. Firm edge to the palate, puff of sulphur, chunks of limestone and chalk, zesty acidity underlying, really tightly wound fruit flavour but rewarding in its firm, bitey feel. Like alternating between chewing on a lemon wedge and licking limey pumice. Wow, good to be alive. This has some personality. 2010 Felton Road Block 1 riesling - Kero, passionfruit and peach on the nose. Feels slightly monodimensional on the palate, all lime and honey, but there’s a nice concentration to it and the acidity is well balanced. Drinking well at this stage of its life and best in the next couple of years I feel. Thanks to @walsh3802 for bringing this one along, nice to see some of this kiwi gear.
The champagnes at the StripSteak dinner. The 2009 Dom Pérignon was a great start. This vintage is lively and with fresh acidity, but this bottle seemed to be rounder than previous bottles. The 2000 Dom Pérignon P2 was clearly a step up in complexity and was a fantastic bottle with its toasty brioche. You can’t go wrong with these P2s. The question is: Which is better, 1998 or 2000?

Mott 32 65 day aged Peking Duck a Hong Kong tradition. It paired perfectly with the 2009 Domaine Francois Lamarche Nuits Saint-Georges 1er Cru Les Cras which was fruity and round but a little short on the palate it might be shutting down which I have found with a lot of 2009’s. #pekingduck#hongkong#mott32hk
