This little treat comes in a variety of purples, pinks, and whites, and even tastes like arugula right at the end there! It was all over the bike ride home, which makes me think its wild cousins must be very active this time of year. #2. Borage. I met borage on a farm in Colorado 5 years ago. It's the first flower I ever ate. They have fuzzy stems and a mild, sweet flavor and a very special place in my heart. #3 Broccoli flower! This guy is in the brassica family, which includes mustard (!!) Oh the things you learn. He's delicious. Hard to stop with this one. #4 Nasturtium. We just met for the first time on Sunday. It's so much flower to put in your mouth, and at first it's just sweet and flowery and delicious and then there's this sweet punch similar to when you eat a spoonful of wasabi, that is, it moves up and across your upper palate just the same. We owe the Earth our life and yet we seem so intent on destroying it. We are out of time, half measures and easy options are simply not going to help. We must hold industries and governments accountable, their inaction is a travesty and their greed is catastrophic. But we must turn inwards and face our own actions as well. With such limited time left to change we must assess our lifestyles and evolve accordingly. Combating climate change was never going to be convenient or easy, but we can hold ourselves up as well and encourage positive change from each other. A five year study from The University of Oxford, which is the most comprehensive study ever to analyse the relationship between farming and the environment, revealed that the single biggest thing we can do to help fight climate change is be vegan. Time and time again science is showing us that we have the power in our own hands to change the world. Let’s not ignore the science about animal agriculture in the same way that our governments have ignored the science about fossil fuels. Our home is dying, there is no more time. Make a stand and demand change from those in power but also from yourself and those around you as well. Education is empowerment and through empowerment we can shape the future for our children and grandchildren. Our future hangs in the balance.
