I had some @traderjoes goat’s milk cheese in the fridge that I needed to use so I decided to make pizza for dinner using my @califlourfoods crusts and one of the six jars of @ragu’s Simply sauce that I had in the pantry (No sugar and they use olive oil! I stock up when it’s on sale, hence my stock pile.). It was easy enough that I could do it with nine working fingers. 😜 . Brynlee had plain cheese, my hubby added steak to his [plain cheese], and mine had zoodles, a little of the shredded cheese, and some cut up @hilaryseatwell mini veggie bites. I may or may not have eaten about 5/6 of the zoodles pizza. 🙈

A weekday Taiwanese night for the family, as I shan’t get to cook for them for the next 3wks. I am a feeder, and the thought of not cooking for my family for all that time really made me feel quite odd… . . So after cooking a curry for dinner- this was the state of my hob! I used @elbowgreaseuk to lift the grease and burnt food and then went over it with my @waitroseandpartners ceramic hob polish. I swear by this stuff, leaves your job so shiny ✨ swipe to see how I did it and the end result 💥
Fish Tuesday Tuesday night is fish night in our house. A lot of patients often ask me for ideas on how to cook fish. I find people often struggle to find Flavorsome ways to cook fish and so most are not eating enough fish during the week. I got this recipe from the same book as last nights and it was delicious. I really enjoyed this meal.It is a fish (hake) curry with coconut lime brown rice and I added broccoli. I used mild curry powder so it wasn’t hot at all for the kids and they both ate the fish. They didn’t touch the broccoli ( surprise surprise) but ate their grapes and a bit of the rice. I dished up way too much for us as I was so excited to eat this meal as it smelt amazing. Eating healthy doesn’t have to mean cutting out all the stuff you love. It’s about moderation. . When @sharayray started our goal of feeling better last year, we knew that our diet needed to change. But we also knew neither of us was great at the “cold turkey” method, so we decided to make incremental changes over time. . One of those has turned out to be using tools like an Instant Pot to make dinner. Put in a bunch of raw ingredients, and out comes a fully cooked dish that’s healthy (cause we made it with basic and balanced ingredients). In this case, a simple curry with potatoes and peas. . Don’t ever believe that a ‘diet’ is your only option to start feeling better. That is A way, but isn’t the ONLY way.

•I MEAN...THIS COULD BE BREAKFAST, LUNCH OR DINNER FOR ME 😆• It was actually lunch but I’ve got leftovers which will probably end up as breakfast. Who here loves a fritter 🙋♀️? I’ve made some yummy cavolo nero and sweetcorn fritters which made up lunch for the baby and me. It’s a great veggie family meal - I think my boys might want to lose the cavolo nero but even without these fritters are great 🙌. .. With all the talk of fibre this week, it’s worth remembering that sweetcorn are a good source of insoluble fibre which is what the gut microbiota use to generate products which play a role in the regulation of appetite. There are hormones within the gut which can be released in response to the breakdown products of insoluble fibre, and these hormones include those that make people feel full. It’s work still in progress (I had a look at some early stuff during my PhD) but results look promising 🙌. .. Recipe 2 cups sweetcorn 2 tablespoons flour (I used chickpea flour but you can use most types) 2 spring onions, finally chopped 1/2 teaspoon garlic powder 1 teaspoon salt 1/2 teaspoon pepper 2 eggs, beaten 4 large cavolo nero leaves, finely chopped 1 fresh red chilli - finely chopped (optional) .. 1. Heat a non stick frying pan, add a spoon of oil. 2. Mix all the ingredients in a bowl and place dollops of the batter in the pan, flatten slightly, and cook for a few minutes on both sides (carefully flip) until nice and crispy and golden brown.
