A great dinner spot in the Trastevere neighborhood of Rome! Their menu focuses on Roman classics like cacio e Pepe, amatriciana, Carbonara and suppli. We ordered 3 of those! . . Tonnarelli Cacio e Pepe, Rigatoni Amatriciana, and assorted Suppli (cacio e pepe, ragu, potato, amatriciana) . . The star of this meal was the cacio e pepe. I love how al dente the pasta noodles were cooked (maybe even slightly undercooked but I like that) and the sauce was so velvety and so so cheesy. Portions are huge, prices are cheap, and everything was amazing. This is a great place to get a good sampling of Roman classics. Here’s how you make ‘em!👇🏻 . Healthier Carrot Cake Muffins In a large bowl mix together: 2 cups @kodiakcakes mix or whole wheat flour 1 tsp baking soda 1/2 tsp baking powder 1 tsp cinnamon 1 tsp nutmeg 1/4 tsp cloves . In another bowl whisk together: 1 cup milk {or unsweetened almond milk} 2 eggs 1/3 cup pure maple syrup Stir wet ingredients into dry ingredients. Then stir in: 1/4 cup melted coconut oil 2 cups shredded carrots . Fill muffin tin 3/4 full. Optional-sprinkle turbinado sugar over the tops then bake at 350 for 15-18 minutes or until a toothpick inserted comes out clean. . Enjoy!

One of my favorite muffin recipes! Here are my healthy, omega-3 filled, chocolatey muffins that have no added sugar!  I made this recipe of Chocolate Protein Chia Muffins! These muffies are full of protein and healthy fats, which is perfect to eat for breakfast or to hold you over for a fulfilling snack! . 1.5 C. Ground old fashion oats 1 C. Unground old fashion oats 3 Ripe bananas 2 Eggs (beaten) 1 Tbsp. Stevia 1 C. Almond Milk 2 Tsp. Vanilla 2 Tsp. Cinnamon  2 Tsp. Baking powder 1/2 Tsp. Baking soda 1/2 Tsp. Salt 4 Tbsp. Cocoa powder 2 Scoops chocolate protein  2 Tbsp. Chia seeds 3/4 C. Walnuts  1.) Spray a muffin tin or apply cupcake wrappers and preheat oven to 350 degrees. 2.) Ground 1.5 cups of old fashion oats into a flour consistency via blender or food processor.  3.) Combine all dry ingredients into a bowl. 4.) Mix beaten eggs, mashed banana, and other wet ingredients until a smooth consistency.  5.) Combine the wet ingredients to the dry ingredients (except chia seeds and walnuts) until smooth. 5.) Fold in walnuts and chia seeds. 6.) Let batter settle for 10 minutes.  7.) Bake at 350 degrees for 20-22 minutes.

To my esteemed IG friends and followers, I’m taking a short break from baking but I’ll be back with more and hopefully better baking ideas ☺️ So I’m leaving you with this  LV INSPIRED MONOGRAM DECO ROLL with Chocolate mousse and fresh whole strawberries as fillings & STRAWBERRY PRINT DECO ROLL filled with sweetened whipped cream and cut strawberries 🍓 I made last year. A light sponge filled with fresh cream and fruit, these eye-catching cake artistry is very popular in Japan. It was Japanese baking celebrity, Junko, who took the baking world by storm by taking the classic cake and adding a personalised touch to it. This may look complicated, but actually it's not difficult although it does require some patience. Using the surface of the cake as a canvas, I basically piped images and patterns with pre-coloured cake batter on a baking sheet, then pour cake batter on top. Once it's all baked, the pattern will be stuck on the cake, which creates the "deco" on the surface and it’s that easy! Random Buddha Bowls always end up being the best dinner! They don't have to be complicated to be delicious. I usually bake some yams, steam some veggies and add a raw veggie component for all of the textures. I think the trick is the sauce on top! My favorite things to top my veggie bowls with are: tahini (often mixed with fresh lemon and maple syrup) home made oil free beet hummus, sriracha or hemp ranch! This bowl has:  Steamed Broccoli Steamed cherry tomatoes Baked Yams Panfried Tempeh Brocolli sprouts @farmhouseculture Dill Pickle Kraut (forever obsessed) And of course.. topped with nOoCh!!

It has amazing properties that reduce inflammation in the skin and neutralize free radicals that cause premature signs of aging.⁣ ⁣ Recipe below 📝👇🏻 ⁣ ⁣ INGREDIENTS:⁣ 🔹2 tsp blue spirulina powder ⁣ 🔹2 tbsp chia seeds ⁣ 🔹1 frozen banana⁣ 🔹1 scoop Vegan Vanilla protein powder ⁣ 🔹1 cup almond milk⁣ 🔹1 cup coconut milk⁣ 🔹Frozen rasberries, for topping⁣ 🔹Banana slices, for topping⁣ 🔹Granola, for topping⁣ ⁣ ⁣ INSTRUCTIONS:⁣ 1. Combine 1/2 cup coconut milk, 1/2 cup almond milk and chia seeds and whisk for 1 to 2 minutes. Cover with cling film and chill in the fridge for 1 hour, stirring occasionally.⁣⁣ 2. Combine the remaining coconut milk , almond milk , spirulina powder , vanilla protein powder and banana in a food processor or blender and blend until smooth.⁣⁣ 3. It’s a gorgeous dessert that will wow your guests at a party, and it also works perfectly as a homestyle pudding for mango lovers. ⁣⁣⁣ The best part?? You can make it up to several days ahead of time!⁣⁣⁣ Recipe below 📝👇🏻⁣⁣⁣ ⁣⁣⁣ INGREDIENTS:⁣⁣⁣ For the coconut panna cotta:⁣⁣⁣ 🔸1 can of coconut milk (400 ml)⁣⁣⁣ 🔸250 ml coconut cream⁣⁣⁣ 🔸2 agar agar powder⁣⁣⁣ 🔸3 tbsp coconut sugar⁣⁣⁣ 🔸1 tbsp shredded unsweeted coconut⁣⁣⁣ 🔸½ tsp vanilla powder⁣⁣⁣ ⁣⁣⁣ For the mango-passion fruit coulis:⁣⁣⁣ 🔹1 mango⁣⁣⁣ 🔹3 passion fruits⁣⁣⁣ 🔹Dash of organic orange juice (optional)⁣⁣⁣ ⁣⁣⁣ INSTRUCTIONS:⁣⁣⁣ 1. Coconut Panna Cotta: Dilute agar with the cold coconut milk. In a medium saucepan, bring coconut milk, coconut cream, shredded coconut, vanilla powder and sugar just to the boil, then turn it down to a simmer, stirring until sugar is dissolved. Cook for about 2-3 minutes whisking it constantly.⁣⁣⁣ 2. To create lines, place your verrines or dessert glasses on top of an other glass, or inside an egg box. Pour the mixture into the verrines and chill in the fridge for at least 1 hour.⁣⁣⁣ 3. Mango-passion fruit coulis: Mix the mango flesh and passion fruit juice (I discarded the seeds using a mesh strainer) in a blender. You can add a dash of orange juice if wanted.⁣⁣⁣ 4. Pour the coulis in the verrines. Decorate with mango chunks before serving. Easy to make, vegan, refined sugar-free; a truly a feel-good dessert! Enjoy straightaway or chill until serving. 🍹😋⁣ ⁣ Recipe below 📝👇🏻⁣ ⁣ Ingredients ⁣ 🔺200ml coconut milk⁣ 🔺50ml almond milk⁣ 🔺4 tablespoons chia seeds⁣ 🔺2 tablespoons maple syrup, divided⁣ 🔺2 small mangoes - peeled and cubed⁣ ⁣ INSTRUCTIONS :⁣ 1. Combine the coconut milk, almond milk, chia seeds and 1 tablespoon of the maple syrup. Whisk for 1 to 2 minutes. Cover with cling film and chill in the fridge for 1 hour,stirring occasionally.⁣ 2. Combine the cubed mango and remaining tablespoon of maple syrup in a food processor or blender. Blend till smooth.⁣ 3. Spoon the pureed mango into serving glasses. Top with chia mixture.⁣ 4. April 14th....⁣ And just like that , My baby boy turns five years old today! With every passing year, I get a better understanding of what my mom was feeling when I was growing up. She’d look at me on each birthday and say, “You’ll always be my baby.” ⁣ ⁣ Adithya, YOU will always be my baby.⁣ Even if you’re a big five-year-old now and nobody would mistake you for a baby.⁣ ⁣ At five, Adithya is tall for his age, and still keeps me on my toes like he has since the day he was born.⁣ ⁣ It’s such a blessing being a parent and watching our kids grow. Even if we lament the passing of each year because we know once it’s gone, we won’t get it back, it’s also such joy to see them experience each new age. I’m excited to watch Adithya be five. The main ingredients to make poori are wheat flour, oil and water.⁣ And what’s more , it’s vegan , delightfully delicious and quite easy to make!😊⁣ ⁣Recipe below 📝👇🏻⁣ ⁣⁣ INGREDIENTS:⁣⁣ 🔻2 cup wheat flour⁣⁣ 🔻2 tbsp semolina ⁣⁣ 🔻pinch sugar⁣⁣ 🔻salt to taste⁣⁣ 🔻water - to knead⁣⁣ 🔻oil for deep frying⁣⁣ ⁣ INSTRUCTIONS:⁣⁣ 1. In a wide mixing bowl, add wheat flour, salt, pinch of sugar and semolina. Mix well.⁣⁣ 2. Add water little by little and make a tight, smooth and stiff dough and knead well for 5 minutes.⁣⁣ 3. Add litttle oil and knead for few minutes to make it smooth and soft.⁣⁣ 4. Make small lemon sized balls.⁣ 5. Roll the dough evenly into circles using a rolling pin.⁣⁣ 6. Keep in a plate and cover.⁣⁣ 7. Heat oil in a deep frying pan. When the oil is sufficiently hot, add one puri and press with the ladle to puff up.⁣⁣ 8. Once they puff, turn over.⁣ 9. Fry the poori till it’s golden brown all over.⁣⁣ 10. Remove the poori and place it in a tissue paper to remove the excess oil. Fry all pooris same way.⁣⁣ 11. These have been one of my household’s favourite go-to meal !🍽😋⁣⁣⁣⁣ ⁣ Dosa is a simple , easy to make , appetizing and nutritious dish. It’s a fermented low carb-high protein food, packed with fiber and natural probiotics. And what’s more , it’s VEGAN and GLUTEN FREE as well 😋🍛⁣⁣⁣⁣ ⁣⁣ Dosa is one such food item which is extremely appetizing and relatively light, made from rice , lentils and other spices , adding low calories in your body. It's a healthy choice to overcome obesity.⁣ ⁣⁣ A properly made crisp and savory Indian dosa is  fairly simple to make, with this caveat: the batter must be fermented overnight for the correct texture and requisite sour flavor. Good Morning Everyone!🌞⁣ Today’s amazing breakfast Elixir : Blue Chia Pudding💙⁣ ⁣ I love my Blue Chia Pudding with Butterfly Pea Flower tea, layered with soy joghurt and blueberries. Easy to make, gluten-free and vegan. This Chia Pudding looks like from outer space and your kids will love it!! 💙⁣ Recipe below 📝👇🏻⁣ ⁣ INGREDIENTS :⁣ 🔹1 cup water⁣ 🔹3 bags butterfly pea flower tea⁣ 🔹2.5 tbsp white chia seeds⁣ 🔹1/2 cup soy yogurt⁣ 🔹2 tbsp honey⁣ 🔹4 tbsp blueberries fresh or defrosted⁣ ⁣ INSTRUCTIONS :⁣ 1. Bring water to the boil and add 1 bags Butterfly Pea Flower Tea. Let brew for 10 minutes. Then remove tea bag, squeezing it slightly. Add 1 tbsp honey and allow to cool.⁣ 2. Mix chia seeds with the blue tea and mix vigourously for 60 seconds. Allow to rest for at least two hour, stirring once in a while.⁣ 3. In the meanwhile, mix soy jogurt with the content of the the second tea bag (just rip it open). Add 1 tbsp honey.⁣ 4. Mix blue chia pudding with 4 tbsp blue yogurt. ⁣ 5. Layer blue chia pudding and the remaining blue yogurt in a jar, ⁣ 6. Top with blueberries.⁣ 7. Pressure cook 1 cup of masoor dal with 4 cups of water for 20 mins.⁣⁣⁣⁣ 2. Heat oil in a non-stick pan and saute onions till they turn golden brown.⁣⁣⁣⁣ 3. Add crushed garlic , ginger, chopped tomatoes ,red chilli powder , turmeric and coriander powder and fry without burning the spices.⁣⁣⁣⁣ 4. Now add in cooked daal and mix well ⁣⁣⁣⁣ 5. Add salt to taste.⁣⁣⁣⁣ 6. Adjust the consistency by adding required water.⁣⁣⁣⁣ 7. Preheat the oven to 350°F (180°C).⁣⁣ 2. Sift the flour into a mixing bowl and add the sugar, baking soda and salt. Then add the soy milk, vegetable oil, vinegar, vanilla, lemon extract and lemon zest. Whisk briefly with a hand whisk to combine properly and remove any lumps.⁣⁣ 3. Line a cupcake tray with cupcake liners and divide the batter between them.⁣⁣ 4. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.⁣⁣ 5. When baked transfer to a wire cooling rack and allow to cool completely before frosting.⁣⁣ 7. Prepare your frosting by adding the powdered sugar, vegan butter, lemon juice and lemon essence to an electric mixing bowl. Start at slow speed and gradually increase speed until smooth and thick. If it’s too thick, add a little more lemon juice until you reach the right consistency.⁣⁣ 8. Mango, Coconut and Chia Seed Pots.⁣ Good Morning my dear friends! 🌞⁣ Happy Wednesday! ⁣ ⁣ Today I decided to treat my family to this Glorious little pot of goodness! ⁣ ⁣ The first layer of smooth mango purée  is topped with a second layer of cool chia seeds and coconut milk. Easy to make, vegan, refined sugar-free; a truly a feel-good dessert! Enjoy straightaway or chill until serving. 🍹😋⁣ ⁣ Recipe below 📝👇🏻⁣ ⁣ Ingredients ⁣ 🔺200ml coconut milk⁣ 🔺50ml almond milk⁣ 🔺4 tablespoons chia seeds⁣ 🔺2 tablespoons maple syrup, divided⁣ 🔺2 small mangoes - peeled and cubed⁣ ⁣ INSTRUCTIONS :⁣ 1. Combine the coconut milk, almond milk, chia seeds and 1 tablespoon of the maple syrup. Whisk for 1 to 2 minutes. Cover with cling film and chill in the fridge for 1 hour. stirring occasionally.⁣ 2. Combine the cubed mango and remaining tablespoon of maple syrup in a food processor or blender. Blend till smooth.⁣ 3. Spoon the pureed mango into serving glasses. Top with chia mixture.⁣ 4. Preheat the oven to 350F.⁣ 2. Spray a bundt cake pan with nonstick spray, dust with flour, and set aside.⁣ 3. In a large bowl, whisk together the flour, cocoa, sugar, salt, baking powder, and baking soda.⁣ 4. Add in the almond milk, water, and oil, and mix vigorously. Add in the vinegar and vanilla and mix until well combined.⁣ 5. Pour the batter into the prepared pan, and bake for 40-45 minutes.⁣ 6. Let cake cool completely before removing from the pan.⁣ 7. While the cake cools, make the glaze.⁣ 8. Combine the coconut milk and chocolate chips in a microwave-safe bowl, and heat in 30 second intervals, mixing in-between, until the mixture is smooth and melted.⁣ 9. Once cake is cooled, flip onto a plate and pour the glaze on top.
