The fact is that while some foods have more nutrients than others, there’s no such thing as a “bad” food.  If you eat whole foods it doesn’t make you a better person. Equally if you eat processed foods, it doesn’t make you a bad person. My mini single serve blueberry cheesecakes are the PERFECT dessert!⁣⠀ .⁣⠀ Here is the recipe below!⁣⠀ .⁣⠀ Ingredients⁣⠀ Base⁣⠀ 1 cup milk arrowroot biscuits⁣⠀ 4 tablespoons butter⁣⠀ Filling⁣⠀ 250g light @phillyaus cheese⁣⠀ 1/4 cup @chobaniau blueberry yoghurts⁣⠀ 1.5 tablespoons honey⁣⠀ 1.2 tablespoon lemon juice⁣⠀ 1 teaspoon vanilla essense⁣⠀ Extra⁣⠀ @morlife cacao nibs⁣⠀ ⁣⠀ Method⁣⠀ 1. Prepare a cupcake tin with cases and set aside⁣⠀ 2. Crush the arrowroot biscuits and mix with melted butter until well combined⁣⠀ 3. Press 2-3 spoonfuls of mixture into the paper cases and press until the mixture is packed down⁣⠀ 4. Place the trays into the freezer for 15-20 minutes⁣⠀ 5. Happy Wednesday 🐪 I’m missing my mini vacation to San Diego and I’m yearning for another trip! So what do you do with a glut of Purple Sprouting Broccoli?  We decided to put some in the freezer. This is how to prep it: 🥦 . 1. Bring a pan of water to the boil 🥦 . 2. Put your broccoli in the boiling water and make sure it’s returns to a bubbling boil. 🥦 . 3. Leave it in the boiling water for no more than a minute. 🥦 . 4. Pick it out of the boiling water (I used tongs) and plunge it straight into cold water to stop it cooking any further. 🥦 . 5. Growing up I loved to eat frozen waffles, toast, pancakes, cereal, and granola bars for breakfast. Oh, and I can't forget about the extra sugary toppings that I was adding to those….. At the time, I didn’t know I was hurting my body, and I thought the discomfort that I experienced was normal, and a result of over eating a little bit.  Now that the cause of my tummy issues has been identified… What on earth do I eat for breakfast? Well, honestly it depends on two things: what’s in my fridge, and the amount of time I have ;) Lately, I have been throwing mushrooms, spinach, red onions, tomatoes and eggs together in a frying pan and whipping it up as fast as I can manage. Look oily? That’s because it is!!! I am an olive oil addict. Extra virgin olive oil keeps me full, tastes delicious, and people say its nutritious, so heck, why not add just a little more.  My breakfast has fat, protein, carbs, iron, calcium, fiber, and plenty of vitamins to spare. Plus, lots of colorful food makes me smile and sets me up for the day.  Avoiding lactose and gluten helps me to have a happy tummy. Food used to be my enemy, and I am still figuring things out, but having a go to list of ingredients that are safe for my gut has helped put my mind at ease, and gives my body a break from all the symptoms that come along with poor digestion. Disclaimer: my food that I eat every day will never be arranged as nicely as I have shown here. #aintnobodygottimeforthat  Tip of the day: use tons of different spices with your eggs, go crazy. Salt, pepper, garlic powder, oregano, paprika, maybe even some creole seasoning? It has helped me feel more satiated and actually enjoy the meal I'm eating. Additionally, nothing has to be perfect, most of the time I quickly chop up an onion, throw in some spinach, scramble in some eggs rush out the door… But at least I have got some fuel for the morning and I can last until lunch time or even a mid morning snack.

For those of you that know me, you know that being healthy is important to me, and I look after myself as best I can.  I haven't always valued my health as much as I do today, in fact in my early 20's I didn't care for it much at all. I ate and drank whatever I wanted, whenever I wanted and I got away with it for a while. However over time it all began to take its toll on my body, I was bigger than I should have been for my petite frame and I generally did not look or feel good!! To cut corners I tried numerous fad diets, with the Atkins diet being the worst and I haven't been able to look at tuna the same since lol.  That all changed 6 years ago when I moved to Melbourne. It was during this time that my attitude towards my health and fitness done a complete 180, and I definitely have the super health conscious Aussie's to thank for that one!! I was getting up at 5am every morning to go to the gym before work and went to Crossfit. I was eating well and was in the shape of my life in no time!!! That attitude to look after my body and be good to it as continued ever since. Yes, I have days where I can't face the gym and just want to eat rubbish all day, believe me! But I have finally found that balance of living life and living healthy!  Health and fitness isn't meant to be hard, it's not meant to make you dread your next meal or your next exercise session! It's meant to slot nicely into your life so that it doesn't feel like effort.
