Keeping lunch interesting 🌱  3 cups of mixed greens tossed in lemon 🍋 tahini dressing and covered with:  Baked tofu dressed in citrus vinegar and soy sauce Roasted turmeric potatoes Chopped red pepper Roasted portobello mushrooms Pinto beans (my Instant Pot staple) Broccoli  Honeycrisp Apple slice Pepitas  Lemon Tahini Dressing  Add to food processor: 1/2 c tahini 1/2 c lemon juice 1/2 c water 2 tbsp nutritional yeast 1 tsp Dijon mustard Pinch sea salt  Process for 1 to 2 minutes. Dressing will thicken nicely. Store in a glass jar for up to two weeks. Add a small amount of water if needed to thin out consistency. “Bread makes ya Spread”. Anyone else hear that super cruel saying in their head whenever they indulge in some bread?  Maybe it’s just me but I used to feel so guilty anytime I partook in one of the greatest gifts to mankind.  While bread doesn’t carry enough nutrients to make the calories worth it for every meal.... treat Yo Self!  Bread is ok people!  Mine #celiac of course has to be gluten free and today’s is #threebakersglutenfreebread which is so soft and chewy... qualities often lost on gf substitutes.  They do a great job!  When I first stopped eating most meats I used to eat salmon almost everyday. Now I probably eat it 2-3 times a week and my veggies fill in the rest!  Today my body was craving carbs and this super delicious wild caught salmon.  Salmon grilled cheese it is!! I used a vegan cream cheese spread and half an avocado to sandwich this nutrient dense fish between the ... yes, bread!  It would also be delicious between 2 roasted sweet potato slices or portobello mushroom caps.  Organic blueberries on the side and that’s lunch folks!!! Eating outside again ... vitamin D for dessert!!! I never put labels on my diet... when my body wants something I know there is a reason and I fulfill its wishes.  I even had a bite of a chicken wing over the St Patty’s Day weekend!  That was a first in over 2 years.  It was gross.... I’m good for a few years!  We overthink and restrict our diets too much these days in my opinion.  As long as you’re eating for your bodies overall health and well-being and listening close to what it needs you’re doing a great job!  Our bodies really are a temple.  And no punishment when you make a mistake and eat that bag of sour patch kids... guilty!!!! 🖐  just choose to make a smarter choice next time and move on.  Enjoy the sun folks!

Initially it was my understanding that he discovered cancer but he actually discovered the cause which in my opinion is even more valuable than discovering cancer. Many people have recognized a problem, a disease, a tumorous lump growing on someone and labeling it a disease. The cause of that disease is even more important and relevant than the disease itself if you want to do something about it. His work came to be known as the “Warburg Effect” or the “Warburg Hypothesis” which basically entailed that cancer cells live off sugar (glycolysis) and that they also thrive in an anaerobic environment. These causes lead me to believe the opposite would help to reverse the cancer growth. What do you think? 🌿 He’s one of the most relevant figures in our history when it comes to cancer, what causes it and how to really treat it. Most people have no idea who this man is though, why is that? is it because of what he has to say about cancer and about disease in general? There’s no question that he was a brilliant man during his time. Okay.  So 2 nights ago I had what I would consider a “cheat meal” for my first time in about 6 weeks.  What’s the cheat? I used a piece of the healthiest pita bread my money could buy and added some vegan cheese and vegan “chicken” which is really just vegetable protein made with soy and I topped all of my veggies with a balsamic reduction.  1. Delicious.  2. A serving of pita is allowed on a diet focused on nutrition so it’s really not even considered a cheat but I know how my body reacts to food like this so I’ve done away with bread products of all types. 3. I’m honestly not stoked or eager to do this again and here is why:  I have felt like garbage ever since I put this into my body.  I’m bloated, I am fatigued, I’m just blah.  I feel as if I cheated in a fairly healthy way and my body is still sad.  Which is horrifying to think back to only a few short weeks ago about the food I have pumped into my body DAILY for the past 31 years.  What we think is “healthy food” usually is not very healthy in some way or another. If you’re still alive than it’s never too late to begin the reversal process of all of the damage we unknowingly - and sometimes knowingly - have done to our insides by eating outside of a whole food/nutritional based diet.  I may not be able to see what this one meal did to me but I sure as fuck feel what it did to me and I don’t want to feel like this.  I can only imagine what a serving of my favorite food - French Fries or 1 piece of sugary cake would make me feel like at this point.  Ahhhh. 😖 This feeling makes it easy not to have cheat days and to adopt the healthiest eating choices everyday.  What I’m trying to say is this: If a “healthier” meal such as this makes me feel so gross, imagine what a filthy meal would do. This roasted chickpea recipe is great for snacking and also as a crunchy salad topper.  Cooked chickpeas Roasted Walnut oil or grapeseed oil Sea salt Onion powder Dill  Toss your chickpeas in a bowl with your seasonings and oil. Bake on 425-450 for 45 minutes to an hour. Stir them every 20 minutes. Are you tired of looking for veggie burgers at the store without all of the crap in them? You know what I’m talking about, the artificial stuff, the gums, fillers, oils, emulsifiers, the 💩... . If you’re vegan or plant based I know you’ve experienced this because I have 🙋‍♀️ and if you’re not quite there but are participating in #meatlessmonday then you’re in the right place 😆 . So if you’re tired of feeling bloated from eating heavily processed plant based alternatives then you might want to start making your own 👍 . I know what you’re thinking, I don’t have time for that, right?! Well I’m here to tell you it doesn’t take any longer than the time it takes you to get to a store to buy some 😀 . Additionally, you probably already have the ingredients you need to make some in your kitchen right now 👌 . I don’t want you to get hung up on this recipe that I used to make these because there are endless options. Also I didn’t measure and I don’t think you should either ☺️ . Have fun with it, use your hands and feel the consistency, you’ll know if you need to add more or less of something based on how the mixture feels 💖 . Here’s what I used in this batch👇 . 🍃 cooked lentils (you can sub any legume) . 🍃 oat flour (you can sub any flour) . 🍃 chopped onions (you can add any vegetable) . 🍃 salt and spices (you can use whatever tastes good to you) . .  That’s it, nothing else is needed besides an oven of course. While I was in Philly I was looking for something quick to eat late one night and didn’t want to drive far so was looking into just getting some veggies from a near by restaurant.
