The best kind of mushroom toast is the one where you can't see the bread because it's buried under so many mushrooms 🍄😛🍄 . Sautéed veggie hash topped with organic pasture raised fried eggs, organic salsa, avocado, and sunflower seeds.  This meal took me less than 10 minutes to make, and is full of healthy fats, protein, fiber, essential amino acids and key vitamins and minerals. Clean eating does so much more than just create a healthy microbiome, it also helps to support the immune system, protects DNA, and gives the body key nutrients and resources to fight disease.  Served with a coconut milk chai latte, it will keep me feeling full and provide sustained energy over the next several hours (without any crash) so that I can focus on working. I make 1 or 2 large batches of roasted veggies each week to have on hand so that I’m never more than 10 minutes away from a good meal. MORNING FUEL!👩🏻‍🍳 . Do you have a go to breakfast routine? Jeffrey & I have perfected our best breakfast that we enjoy pretty much daily. THIS is what the real food big breakfast plate looks like😋 @mcdonalds got nothing on my big breakfast plate!😄 . We like to have a lil' bit o' errthaang. These plates consists of; maple glazed & hemp seed topped bacon, local free-range eggs, seasoned red potatoes, fresh mustard & bok choy micro-greens, fresh alfalfa broccoli & radish sprouts, fresh sauerkraut, avocado, grass-fed beef liver pate, a little mix of steamed broccoli carrots &asparagus from last night & a fresh shot of wheat grass juice🍳🥓🍠🥦🥕🥑🌿🌱😍🎉 . I can honestly say we don't get tired of it. The potato & veggie mix constantly changes based off of what kinds we have in the house, but the base of it remains the same & we feel full & fueled up each day after breakfast. Who could complain?!😀 . There is a lot of debate going around about what is the "correct" diet for us to be eating. In the words of Buddhist monk @thichnhathanhsangha we should be eating a diet based off of our intelligence. What does this mean to me? It means that I use my intelligence to tell me what I need to be eating, & I highly recommend others to do the same versus basing their eating habits off of what they see everyone else doing. My intelligence tells me that my bodies anatomy adapted to a design that is able to utilize & assimilate the consumption of animal foods. Furthermore, my intelligence tells me that the original plan was for humans to live, work, & eat in a garden with the most diverse & abundant plant life. It is for these reasons in which I consume a high amount of plant varieties as well as good quality animal foods too. And with all this side, you'll forget your main 🎵 • Will I ever stop eating this brussels caesar salad? Probably not. And you shouldn’t either. It’s super easy to throw together, uses minimal ingredients, and I’ve eaten it for breakfast, lunch, and dinner...so it’s versatile AF. No regrets, MAKE THIS 👇🏼 • 🥬 Brussels sprout caesar salad : Add some avocado oil to a pan on medium low heat. Toss in 1 bag of shredded brussels sprouts (I get mine at Trader Joe’s), garlic powder, salt, and pepper and stir. Sauté for about 5 minutes. Transfer to a big bowl and let sit for 10 minutes to cool. Add a handful of parm cheese and your choice of caesar dressing to the bowl and mix until combined 👏🏼👏🏼 I usually top mine with a piece of salmon or a burger patty ✌🏼

Mirepoix ⁣⁣ Mushrooms (just a few!)⁣⁣ Boxed Miso broth⁣⁣ Ginger, garlic⁣⁣ Mixed veg and Okra (frozen)⁣⁣ Rice noodles ⁣⁣ Chili powder, salt and pepper⁣⁣ Sriracha⁣⁣ ⁣⁣ ⭐️Boil water and then remove it from the heat to cook the rice noodles. Toss them in for about eight minutes while you finish the soup (I used the time to cook the frozen veg to a nice tenderness). YESTERDAY was a pretty exciting day! (I know...a day late, haha) ⠀ I am quite passionate about nutrition and some days I am on point and others I am not, unfortunately, hehe. This passion has come out of a lot of ups and downs in the past few years when it came to my weight loss. It seems different stresses in my life cause me to lose control of my nutrition: shoulder surgery, plantar fasciitis, work stress, life stress...you name it.⠀ ⠀ You cannot out exercise a bad diet. I was trying to mix in a work out here and there and thought I could keep up with the hopes the weight would fall off. It NEVER happens! ⠀ I thought I could eat less and drink more WINE, I thought I could try hard during the week and let it go on the weekends...nope, nope and nope.🤯⠀ ⠀ Instead of doing NOTHING I sought help and I learned about clean eating, proper portion size and that the quality of what you eat matters!⠀All stuff I use to know years ago and had completely forgotten about. ⠀ Instead of eating in a hurry I went back to reading the labels better, understanding what to eat at what time of day and after what events.⠀ ⠀ The biggest HEY-DUMBASS moment was when I realized I could actually eat a lot of food and lose weight, it just had to be the RIGHT foods again!⠀ ⠀ All of this is coming back to me now. I can eat a lot of food and still lose weight and get stronger! ⠀You just have to eat the right foods. None of the processed junk that a BUSY schedule seems to promote. ⠀ So years later after knowing all about how to do this I am energized and excited to help myself again and WANT to help others, too!! Super Creamy, Veggie-Loaded Ramen for supper!  Wow, I totally surprised myself with this meal, I threw it together so quickly because it was getting late, and the smell was a little off (some browned broccoli) so I was worried that the kids wouldn’t eat much. However, all 3 kids cleared their plates and Carlie and Kaden had seconds!  A few bites into her meal, Carlie said “Wow, this is amazing! I want leftovers for lunch tomorrow!” 🤣🤣🤣 I may have to make more because there isn’t much left!  I started by melting some coconut oil in a pot, added a bunch of minced garlic, turmeric, black pepper, and salt. Then I added broccoli, carrots, and green beans. I let them sauté a bit, and got distracted then realized the broccoli was starting to burn 🙈 I added about 2 cups of water, some nutritional yeast, 3 blocks of brown rice ramen, and a full can of coconut milk. Lemon Orzo Mediterranean Stuffed Peppers 1. Preheat the oven to 400 degrees F. 2. In a 9x13 inch baking dish, toss 3 red bell peppers halved with 1 tbsp olive oil, 3 minced garlic cloves, and a pinch each of salt and pepper. Add sprinkle of fresh oregano. Transfer to the oven and roast for 20-25 minutes or until the peppers are beginning to char. 3. Meanwhile, bring a large pot of salted water to a boil. Cook 1 cup dried orzo according to package directions until al dente. Drain and toss with 2 tbsp balsamic vinegar, 1/2 cup kalamata olives, 2 pepperoncinis diced, 1/4 cup pine nuts, and 1/2 cup crumbled feta. 4. In separate skillet brown 4-6oz baby Bella mushrooms and 2 cups spinach. Incorporate into orzo mixture. 4. Make the lemon basil tomatoes dressing by combining 1/2 cup chopped fresh basil, 1/4 cup EVOO, 1 cup halved cherry tomatoes, zest from 1 lemon, and a pinch of salt. 5. My dinner was super colourful and delicious.  I made a spiced curry veg thing using half of a very large head of roughly chopped broccoli (including the stalks), a diced red onion, two diced tomatoes, sweetcorn, chickpeas, spinach, water, cumin, ground coriander, ground ginger, cinnamon, smoked paprika, chilli flakes, garlic powder and turmeric.  I had half of the mixture I made with a little leftover salad from lunch / three Farmfoods falafel / a toasted thin with Vitalite, garlic powder and nutritional yeast  and a lovely squirt of Sriracha and sprinkle of nutritional yeast on top of everything. As I recollect on our past two growing seasons, I am proudest of our first major bell pepper haul in September 2017. It was also our first year growing in this garden and I swear it was primarily a major stroke of luck. My then second grader enjoyed a lot of these sliced up in his school lunch, and I have to say, there’s no better feeling as a mother to run out for string beans, cucumbers, and bell peppers in September for a garden fresh veggie tray for my little one. I really didn’t pay any special attention to my peppers — as in, I fertilized at transplant, watered if needed, and mulched. That same year, I failed miserably at both our tomatoes and cucumbers, and our potatoes suffered from early blight. So I chalk this success up to the garden having a little mercy on my tender heart, and to the true rhythm of a garden where it’s never perfect. Instead there are highlights and lowlights, but with a diversely planted veggie garden, one crop failing does not make or break your garden. I don’t have the confidence yet that every year is a shoe-in for pepper glory, but my plants are looking strong and I will actually be paying attention to them this year, trying this thing called staking them. I don’t know why I’ve not done this is the past (yes I do, I’m lazy) but these peppers really weigh down the branches so supporting them is just a logical thing a gardener would do. The warm up continues here this week, and the sunshine’s screaming Spring is on the way. In fact our Frankenstein food combined with lack of physical work is making us weak, lazy and malnourished (empty calories do not give your body what it needs). ⠀⠀⠀⠀⠀⠀⠀⠀⠀ We have more people dying from over eating (and the diseases associated with eating empty calories non stop) than dying from lack of food around the world. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ How did we survive almost 200k years? How about millions? What did we eat, what did we value? Because at our rate of innovation and frustration, we are only looking to last as long as we can without poisoning (by pollution or food) or nuking ourselves out of existence. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ We like to think of ourselves as superior and advanced, as constantly finding ways to live longer and smarter. Coconut yogurt chia pudding in the fridge this week. It's a good addition to the rotation of overnight oats, milk rice, and various pastries in my house. 🥥🥛 . . For many years, before the kids were born, PB&J sandwich was my breakfast almost every morning.  I've since gotten picky about the quality of the PB ( chunky, natural, no added sugar) and the J but even though I am still a PB&J addict, I can't serve PB&J for breakfast everyday because to my dismay, the rest of the clan don't share the same passion for PB&J as I do. One of them don't even like peanut butter!!! Oh the traitor! 😣 So instead of PB&J sandwiches, it's a rotating supplies of various easy, self serve breakfasts on weekdays. 🥛 Individual jars of pre portioned pudding help to speed things up in the morning. Today, they'll be topped with bananas.  I like to use a larger mason jar so there's plenty of room to add the toppings and if we are running short on time, I can put the lid on the jar and take it to go. Weekday mornings are all about efficiency. 🥛 Here's the ratio I use for yogurt chia pudding: 1 cup unsweetened coconut milk ( the cartoned coconut milk in the refrigerated section of the store, not the ones in the can), 1 cup plain whole milk yogurt, 1/4 cup chia seeds and 2 tbsp maple syrup. Combine and let sit overnight. Jackfruit, or mfenesi, is the largest tree-borne fruit in the world and had sooooo many uses! . . . We met Gideon at the farmer’s market this weekend, where he hacks open the ripe fruit for customers. When I asked him if he had unripe jackfruit, he got quite excited. “Why? Do you know how to cook it”?, he asked. Why yes, Gideon. Yes. . . . He didn’t have any at his stand but just delivered this to our house, and is coming back tomorrow for a cooking lesson. How fun is this! I showed him pictures of the pulled jackfruit I make and he bubbled with joy. He had tried it once and didn’t have the technique. It’s on. Cook-off tomorrow! 🙌🏻

It’s because I’m Italian.. duh 💁‍♀️🇮🇹 HAPPY ST. JOES DAY BABY!  You’re gonna want to face plant in this delicious guilt free bowl of G N O C C H I yum.  Annndd it’s loaded with nutrients, fiber and all the good stuff your body is craving!! 🤗 —Gnocchi does take some time to make so if you’re going to try this at home set aside some sweet kitchen love in your schedule! 🇮🇹 2 baked med sweet potatoes 🍠 🇮🇹 2 cloves garlic minced 🇮🇹 1.5 flax eggs (1.5T flax seed + 5T water) 🇮🇹 1.5C almond flour 🇮🇹 1/2tsp kosher salt —Remove skin from potatoes then food processor w/garlic until smooth. Add flax eggs && pulse in about 1/2C of almond flour a little at a time. —Sprinkle a tad of the flour on a cutting board and place the mix on top. —Knead in the rest of the almond flour into the dough. When it firms up start rolling the dough into 1” logs. —Cut log into 1” pieces and set aside on baking sheet sprinkled with almond flour. —Bring water to a boil then add in your gnocchi. *** When they float to top remove *** Afterwards I like to lightly pan broil or sauté until golden. 😍 . . #thebalancedblend

i freaking love donuts. like top 10 fav foods (but I’m also v particular about my donuts, mostly because @sidecardoughnuts and once you eat those, all other donuts seem subpar 🤷🏻‍♀️) so when i tell you these raspberry donuts meet my standard for a GOOD (and paleo!) donut - that says a lot 🙌🏻 here’s how to do it  DONUTS: 1 C almond flour 1/2 C coconut flour 1/2 C tapioca flour  1 1/2 tsp baking soda  3 eggs  1/4 cup maple syrup  1/2 cup cashew milk  2 Tbs @fourthandheart vanilla bean ghee (melted) 1 tsp vanilla extract  1 cup fresh organic raspberries (mashed after measuring)  GLAZE: 1/2 C @artisanaorganics coconut butter  1/2 C @navitasorganics cacao butter (melted) 2 Tbs cashew milk  2 Tbs maple syrup  1 tsp vanilla extract  dash of salt  DIRECTIONS: mix dry ingredients together. mix wet ingredients together separately. combine, then fold in mashed raspberries. pour into generously greased donut pan (do not overfill or you’ll get donuts without a center as seen on some of mine 😏) bake at 350 for about 14 min. for glaze - melt all ingredients in a saucepan on low and whisk together until smooth. place glaze in the fridge for a few min to thicken. let cool fully before dipping in glaze. dip twice and pop them in the fridge to let the glaze harden. 🍩🍩🍩 what’s your favorite donut flavor? #hungrypaleogirl

My sister sent me the current @forksoverknives issue since it's my fave 😆 We have nothing similar here in Europe that is wholefood and has all the great tips etc. Thanks guys👏 Tried out what they call Delhi Chaat menu and boy was it delicious👌 Had to change a bit as per what was in da fridge. The quick chickpea curry, tomato salsa and a green coriander kale spinach chutney aka pesto gave it the perfect layers.👌 And the perfect bento style wrapping (swipe left to see more) inspired by lovely Sara @shisodeliciois ♡. Have the VERY best Tuesday EVER lovelies😘😘❤💚💛 ~~~~~~ ♡ ♡ ♡ ♡ Aloo Tiki Ingredients: 2 1/2 lb potatoes 1/4 c wholemeal gluten-free breadcrumbs* 1 c unsweetened plant milk 2 tbsp lemon juice 2 tbsp fresh ginger, grated 1 tsp cumin, ground  1 tsp coriander, ground  1 tsp turmeric, ground  1/4 tsp chili, ground Pink himalayan salt & pepper Method: 1. Cut peeled potatoes into cubes, place into steamer and steam until soft. Move to a medium bowl and mash to desired consistency. I like mine a bit lumpy😉 2. Mix remaining ingredients in a bowl. 3. Add spiced breadcrumb mix into mashed potatoes and mix well.  4. Preheat oven to 175°C/350°F. Line baking tray with silicone mat or parchment paper. 5. Using 1/2 measuring cup, scoop out dough, remove dough from cup and roll into balls. Alternatively, use a tablespoon or ice-cream scoop... 6. Place balls onto baking tray and carefully flatten balls to form patties.  7. Bake for 40 minutes, turning patties after 20 minutes. Bon appétit! Notes: * I make my own gluten-free wholemeal breadcrumbs from leftover bread slices whenever I have some. oh wow have these cookies given me life. they’re like little pillows that melt in your mouth, so delicious i’ve already eaten three of them 🤟these soft baked chocolate chip oatmeal cookies have a slight coconut and cinnamon taste and are dairy-free, gluten-free and refined sugar-free. basically if you like joy, you should make them. you won’t regret it!  what you’ll need 1 cup almond flour 1 tbsp coconut flour 1 cup rolled oats 1 tsp cinnamon 1/4 tsp salt 1/2 tsp baking soda 1/2 tsp baking powder 1 egg 1/3 cup liquid coconut oil, cooled 1/4 cup maple syrup 1 tsp vanilla extract df chocolate chips (didn’t measure, added some to batter and more on top!) - how to preheat oven to 350°F combine the first seven ingredients listed, sifting together to remove any possible lumps in flour in a separate bowl, whisk together the rest of the ingredients (besides the chocolate chips) add the wet ingredients into the bowl of dry and fold together add desired amount of chocolate chips and mix again form balls of dough (about 1.5 inch diameter), place on a greased baking sheet, slightly press down on each one then add more chocolate chips to the top (not required but why not) bake for 10 minutes then let cool out of the oven on the baking sheet for another 5 (don’t skip this part!) enjoy friends 🕺 - (i used @bobsredmill gluten free rolled oats and coconut flour, @simpletruth4u almond flour, @betterbodyfoods coconut oil and @traderjoes semi-sweet chocolate chips)
