🍋 Lemon Garlic Butter Chicken and Green Beans 🍋 ⠀ . This meal was AMAZING!!! The best part, I was able to make everything in one pan. 🙌🏻 Less dishes! ⠀ * 1 pound skinless, boneless chicken thighs * 1 pound green beans, trimmed * 3 tablespoons butter, divided or * 4 garlic cloves, minced * 1 teaspoon paprika * 1 teaspoon onion powder * Salt and fresh cracked pepper * Juice of 1/2 lemon * 1/2 cup chicken broth * Crushed red chili pepper flakes * 1/2 cup fresh chopped parsley ⠀ . . Directions: . 1. In a small bowl, combine onion powder, paprika, salt, and pepper. Season chicken thighs generously with the spice mixture. Set aside while you prepare green beans. ⠀ . 2. Steam green beans until almost done but still crisp. ⠀ . 3. Melt 2 tablespoons butter in a large skillet over medium-low heat. Lay the seasoned chicken thighs in one layer in the skillet. Cook for 5-6 minutes then flip and cook another 5-6 minutes, until cooked through. If chicken browns too quickly, lower the heat. Adjust timing depending on the thickness. Transfer chicken to a plate and set aside. ⠀ . 4. In the same skillet, lower the heat and melt the remaining tablespoon butter. Add chopped parsley, garlic, red crushed chili pepper flakes, and pre-cooked green beans and cook for 4 to 5 minutes, stirring regularly, until cooked to your liking. Add lemon juice and chicken stock and reduce the sauce for a couple of minutes, until slightly thickened. ⠀ . 5. So many people ask me what I eat throughout the day... I would love to tell you and share with you everything I do, (hint follow me on Instagram as I do share a ton there... sarahlarose.mn) but let's be real, its usually off the cuff and quick! I do try and do some type of food prep on Sunday's, but usually it's my protein because that stays pretty awesome and easy to heat up! The other thing I love to make are fat bombs. These fat bombs from Fit Foodie Finds are my favorite ones I have ever found! They are super easy to make, only 5 ingredients and I toss in my freezer for easy grab and go! When you are carb cycling, low carb days are hard for some to hit their caloric intake without going over in carbs and replacing with healthy fats. These are a great food to have and so easy to prep! Raspberry rhubarb cookies (made 21 cookies) 104cals per cookie (carbs 17.2g, fat 3g, protein 2g) 215g (2 cups) oat flour 45g (1/3 cup) tapioca starch 100g (2/3 cup) coconut sugar (less of you desire) 1tsp baking soda 1/2tsp baking powder 1/4 tsp salt 1 large egg 110g (1/2 cup) pumpkin purée 45g (1/4 cup) coconut oil 75g (1/3 cup) maple syrup 1 tsp vanilla 120g fresh raspberries sliced in half 110g fresh rhubarb diced Whisk wet ingredients together then add to dry ingredients. Mix well, then fold in fruit. Bake at 350 for 15 minutes
Today was hot, humid and at times sunny. By the end I was sweating to the degree it looked like I was hosed down and my eyes were stinging (not enough water intake). To say I wasn't in the mood for an elaborate dinner is an understatement. I had this easy quick Orange Beef dish on my radar do I gave it a shot. Took about 30 minutes start to serving and the result was pretty darn tasty. The beef came from my farmer and the snap peas from the garden. Sometimes if I get good lighting and turn to the side enough it looks like I have muscles🤪 ⠀⠀ On the real though, I will always be working on crafting my body from the inside and out. ⠀⠀ From eating nutritious food to lifting weights to bettering my mental health. ⠀⠀ All of these things can be difficult to do all the time and personally I fall off the wagon every now and again. ⠀⠀ But I try to be real and understand that life isn’t perfect and neither are we. ⠀⠀ We all have good days and bad days, but what matters is that we move forward. ⠀⠀ May your Sunday and week ahead be filled with good food, fun workouts and happy thoughts✌🏼
