It’s the season for roasted veggies! Set yourself up for yummy and delicious lunches and breakfasts by making a few sheet trays of a variety of veggies of your choosing. We roasted carrots, sweet onion and grape tomatoes. I dislike carrots in general but once you roast them then they are fantastic. We drizzled avocado oil, salt and chopped fresh tarragon and roasted them at 425 for 25 minutes or until browned and or charred in a few spots (flavor spots!). We made some salmon to go with it. In the morning we added the left over veggies with a fried egg and it was 👌🤤. Added some avocado to top it off and for some healthy fat. Kept me full all morning. My suggestion to you this winter is to get into roasted veggie pans. They’re easy and delish! Need to aim for 5-9 servings of veggies a day and this is easier to do with these. Tonight our babysitter cancelled last minute, and I truly wasn’t even upset 😂 I was happy to cook some of the delicious food I bought today between the @concord_farmers_market And @traderjoes ❤️ I am a HUGE fan of #roastedveggies and #sauteed veggies. I prepare them a very simple way with #spanisholiveoil and Himalayan sea salt and fresh ground pepper, and I just love them so much 😍 Tonight I made some #brownrice noodles and topped them with these babies 👌🏻👌🏻🙌🏻 #quickmeals .
Disneyland was amazing.... but so was eating REAL fresh and crazy delicious toast at @toastsocietycafe on the travels home. I mean, let’s be honest that the food is always the highlight for me. I finally got around to making @natalieawheeler’s #grainfree#dairyfree#paleo pizza crust and it was great 👍🏻. . To make the crust, I mixed 1 1/2 cups @bobsredmill almond flour, 4 tbsp @hodgsonmill coconut flour, 4 tbsp coconut oil, 2 eggs, and 1/4 tsp each sea salt, basil, rosemary, oregano, and thyme until it formed a dough. Then I spread it over a greased pizza pan and cooked at 350 degrees for 20 minutes. I topped it with marinara sauce, arugula, roasted red peppers, and goat cheese and baked for another 10 minutes. Delish!
