BREAKING NEWS: “William Peace University has closed on a $34 million deal to sell Seaboard Station, according to those who worked on the deal. The transaction is bringing in a substantial return for the university and clears the way for the new owner to launch a $250 million redevelopment project at the aging retail center. PN Hoffman, a mixed-use developer active throughout Washington, D.C., is acquiring the roughly 7 acres and cluster of low-slung shops at the north end of downtown Raleigh that makeup Seaboard Station and has a multi-phase plan to grow the size of the shopping center from less than 100,000 square feet to 800,000 square feet, according to company officials.”

Yes? No? Well, that’s what it makes me think of now that I’m using it alongside other Wintry prints. Im REALLY good at convincing myself that something is self care when it’s just sort of like a compromise because I’m not willing to slow down. I’ve been running on newborn-baby type sleep the last two months because of various Eleanor things and today I feel like I got hit by a truck. My body is throwing a giant stop sign in my face and for some reason I stilllll want to rebel. PERSPECTIVE:: I’m sure there are better views around the city, but this seat has served me well for the past six months. Positioned next to the window inside a brand new start up local coffee shop in Durham, which itself is located inside the Central Park/Liberty district... in other words, home of much newness and construction. Some things being built from the ground up, others being restored back to their former glory. The constructions site just across the street wasn’t there when I arrived in July, but now the foundation has been laid and the pillars of this new building are being formed. Practically every space around this coffee shop is being renovated or transformed into something new. I’ve watched the crowd go from a few people passing by, to nearly every seat always occupied. More importantly, I’ve had the the honor of watching Ms. Tracy’s journey of risk, faith, fear, doubt, frustration and success take place before my very eyes, all the while building and forming the foundation of @rescuechurchnc. • May what’s in our hearts, be built before our eyes. May we bring life and vibrancy to whomever and whatever is around us. God, that we would partner with you to restore what once was. To reclaim and recover what was lost. This is the state of my cars health when i rolled into Jiffy Lube corner of 751 and 54 today. Bah ha ha... ha. Nail in tire, no brakes, somehow I’d run out of every fluid necessary and I don’t know how I’d gotten to the place. But when I left, it drives like a dream, had free WiFi I’d stop down the street at Bean Traders first for coffee😳 but otherwise it was super. Also, don’t forget to tag a friend in the comments of this post to be entered to win a FREE produce box! •• INGREDIENTS 2 large eggs 1 1/3 cup (280 g) sugar 2 teaspoons vanilla extract 3 cups (packed) grated fresh zucchini 3/4 cup unsalted butter, melted 2 3/4 cups (400 g) all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/4 teaspoon salt 2 teaspoons cinnamon 1 teaspoon ground ginger 1/2 teaspoon nutmeg 1 cup walnuts (optional) 1 cup raisins or dried cranberries (optional) •• METHOD You don't need a mixer for this recipe. 1 Mix eggs, sugar, vanilla, then add zucchini and melted butter: Preheat the oven to 350°F (175°C). Beat the eggs in a large bowl. Mix in the sugar and vanilla extract. Stir in the grated zucchini and the melted butter. 2 Mix dry ingredients: In a separate bowl, mix together the flour, baking soda, baking powder, cinnamon, ground ginger, nutmeg, and salt. 3 Combine to make batter: Stir these dry ingredients into the zucchini mixture. (Do not over-mix!) Stir in walnuts, raisins or cranberries if using. 4 Fill muffin pan: Coat each muffin cup in your muffin pan with a little butter or vegetable oil spray. Use a spoon to distribute the muffin dough equally among the cups, filling the cups up completely, above the surface of the muffin tin. 5 Bake: Bake at 350°F on the middle rack until muffins are golden brown, and the top of the muffins bounce back when you press on them, about 20-30 minutes. Test with a long toothpick or a thin bamboo skewer to make sure the center of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin let cool another 20 minutes.

Even better, if you tag a friend in the comments of any/all of our 12 Days photos, you’ll be entered to win an Ungraded Produce box FOR FREE! •• @inagarten’s Rosemary Roasted Potatoes via @foodnetwork • Ingredients 1 1/2 pounds small red or white-skinned potatoes (or a mixture) 1/8 cup good olive oil 3/4 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper 1 tablespoons minced garlic (3 cloves) 2 tablespoons minced fresh rosemary leaves Directions: - Preheat the oven to 400 degrees F. - Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, garlic and rosemary; toss until the potatoes are well coated. Dump the potatoes on a baking sheet and spread out into 1 layer; roast in the oven for at least 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure even browning. - Remove the potatoes from the oven, season to taste, and serve.
