𝘎𝘳𝘪𝘯𝘥𝘪𝘯𝘨 𝘪𝘯𝘧𝘰𝘳𝘮𝘢𝘵𝘪𝘰𝘯 Double Grind Method. First as a coarse with kinu ground to remove layers of silver skin then second grind to smaller size comandante to produce particles sizes that are more evenly distributed which raises the cleanliness and flavour in her coffee. 𝘉𝘳𝘦𝘸𝘪𝘯𝘨 To extract the solubles in different stages of brewing, Jia Ning Du adjusted the speed of water she poured to control the contact time between water and ground and divided into 4 pours. First pour - 6g water/second for 10seconds. 60g yield extracted the acidity and sweetness in coffee. wait 10 second. Last pour - direct pour from middle to minimise the whirlpool effect until 240g of water are used up. my time is not 1:45 but 2:30. Result : a clean cup though I'm not shift the double grind. Sweet and balance cup, with a little bit mellow acidity, ot produce a good round body and silky textured from costa rica, . Sweet cherry, passion fruit, red berries, and milk choco ending. . Still amaze with her effort to achieve a perfect cup.
