Took a #vegan cooking class during my stay at the Fairmont Mayakoba and the food we made was awesome! I finally got to try jackfruit — in the form of jackfruit tacos with green tomatillo sauce — and was surprised at how good our vegan almond cheese turned out. You don’t need meat everyday!
Cyndi’s Cooking Class: . Last week one of our educators, Cyndi, showed some of the senior children how to make pasta from scratch! . Teaching children to cook helps them develop highly transferable skills, from how to do basic math to how to see a project through from beginning to end. . They learn patience, because cooking has its own timeline and can’t be rushed . Teaching children to cook even exposes them to the value of money, since cooking at home is far less expensive than eating out. . But most importantly, cooking with children is a great opportunity to talk about health. During our lesson we talked about the difference between healthy and unhealthy ingredients and between healthy and unhealthy cooking techniques. We looked at food packaging we had in the cupboards and showed the children how to read product labels, so they begin to understand the difference between real food and junk food. . Mapo tofu&beef curry rice 🍛 Mapo tofu (麻婆豆腐, ma po dou fu) is one of the most popular classic Sichuan dishes. It has a spicy, pungent, and appetizing flavor that goes perfectly with steamed rice. Marinate 120 grams (4 ounces) ground meat (pork, chicken or turkey) 2 teaspoons Shaoxing wine (or Japanese Sake) 1 teaspoon light soy sauce 1/2 teaspoon ginger , minced (or 1/4 teaspoon ginger powder) For braising 1 teaspoon cornstarch 2 teaspoons Sichuan peppercorns increase to 3 teaspoons if you like your dish extra numbing 1 tablespoon vegetable oil 3 tablespoons Doubanjiang spicy fermented bean paste 2 tablespoons green onion , chopped 1 block (400-g / 14-oz) firm or medium firm tofu , cut into 1.5cm (1/2 inch) squares 1 cup water (or chicken stock) 2 teaspoons Chinese chili oil 1 teaspoon for a less spicy dish 1/4 teaspoon five-spice powder 1 teaspoon sugar (or to taste) 1 tablespoon green part of chopped green onion for garnish (optional) steamed rice to serve with (optional) Since it is VERY hard to describe the instructions just by writing.
