|Cobb Salad| here is the break down of this springtime cobb salad. I did a bed of bib lettuce & arugula. I added purple cauliflower, blanched haricot verts/asparagus, marinated artichokes, crispy prosciutto, soft boiled eggs, pistachios, blue cheese, watermelon radishes and served with a homemade herbed buttermilk dressing. I love how all the colors came together and the different textures. It’s the perfect hearty salad for a crowd. Sundays are for meal prep 🥗🍳........... and I am getting back to it I have been trying to balance changes in my life and have been eating so randomly lately and with an increased exercise program it just isnt working for me. 1st meal of the day will be spinach, tomato, black olive with feta frittata 2nd meal will be a chicken Cobb salad with blue cheese dressing. For Snacks I made, coconut flour pancakes into mini muffins, have pre boiled eggs done, and some pre cut green veggies with ranch dip portioned out.
