Smoked parsley roots! 🀯  I ordered flat-leaf parsley, but received a couple bunches of parsley roots. Instead of wasting the roots, we smoked them until tender. They taste like a cross between celery and carrots... so good! POTATO WEDGES WITH HUMMUS  INGREDIENTS: Potato Wedges: 500 g potatoes 2 tbsp olive oil 1-2 tbsp potato seasoning 1 tsp garlic pepper  INGREDIENTS HUMMUS: 250 g drained chickpeas 2 cloves of garlic 3 tbsp sesame butter 50 ml Olive oil pepper salt paprika powder cumin 1/2 tsbp of juice  DIRECTIONS Preheat your oven to 200 degrees (or 180 degrees circulating heat). Clean and dry potatoes and cut them in quarters.  Put them together with oil and seasonings in a bowl with a lid on it and shake well.  Spread everything on a baking sheet lined with baking paper and bake for about 45 minutes (or until crunchy). Meanwhile, open the door of the oven now and then and turn the wedges. Blend all hummus ingredients  @biancazapatka

I might even take it as far as saying I kind of don’t like pizza unless it’s cold 😬 Who’s a cold ‘za lover & who’s a reheater?! . she may not be a looker... but this πŸ’ͺ🏻 vegan SUPERbroth πŸ’ͺ🏻is healing me right now. earthy, spicy, and full of veggies, this broth is great on its own as a good sick-day soup but also is an AMAZING base for vegetable dumplings, tofu, or rice noodles! recipe below πŸ‘‡πŸ»πŸ‘‡πŸ»πŸ‘‡πŸ» Ingredients:  1/2 c yellow onion, chopped 1 medium carrot, grated 1 large garlic clove, minced  7 cups vegetable broth 1 tsp @traderjoes umami seasoning 1/2 tsp chinese five spices  2 tsp coconut aminos/soy sauce 1.5 tsp sesame oil  salt, pepper, and chili flake to taste 3-4 heads baby bok choy, roughly chopped  2 cups red cabbage/cabbage blend  Method: • spray a dutch oven/soup pot with olive oil and cook onion, carrot, and garlic until soft, about 5 minutes. • add the veggie stock and all spices/coco aminos/sesame oil and allow bring to a simmer. simmer for 5 minutes. • add the baby bok choy and cabbage and allow to come back to a simmer. simmer for one minute. • add in cooked dumplings, cooked noodles, or tofu if you like! and enjoy πŸ˜‰

For #dinner tonight I made @justjessieb #whole30 chicken tenders which I now make regularly with @livinglovingpaleo chipotle aioli and some sautéed Brussel sprouts and baby zucchini.  I love the chicken tenders because I’ll make 1 package of @butcher_box chicken tenders have 2 or 3 tenders for dinner and then have he rest for leftovers.  I reheat them in the #airfryer and they get nice and crispy again.  This was a tasty dinner.  I cooked while watching the #wisconsinbadgers game play Oregon in #marchmadness as of right now the #badgers are losing. CREAM • of • ASPARAGUS • SOUP • I haven’t had soup in ages and felt like making some and I love asparagus! Made sense to me 🀷🏻‍♀️ Please don’t mind the reflection of the fire escape in the soup. This soup took all of like 15 minutes to make and it was tasty!. . INGREDIENTS. • 1 bunch of asparagus • 2 cloves garlic f garlic • 32 oz of stock (I used #swanson chicken broth) • Chopped onion (since I don’t eat onions I used onion powder) • 3/4 cup of heavy cream • 1 tablespoon ghee • Salt and pepper. . DIRECTIONS  1. Trim any woody stems from the asparagus and cut into small pieces. 2. Melt ghee in a pot. Add garlic and onions and cook gently for a few minutes. 3. Add asparagus to pot and sauté for 1-2 minutes. (This is when I added the onion powder). Add chicken stock and increase heat to high. 4. Cook for a couple of minutes, or until asparagus is just tender. 5. Remove from heat and use an immersion blender to blend until smooth. 6. Add cream, salt and pepper. 7. Heat gently until hot. 8. Just before serving, drizzle some olive oil on top of the soup. Peanut butter probiotic French toast 😁 after trying the @rokebyfarms drink the other day I had a stalk of their insta and found this French toast recipe. So the toast recipe is basically the same except I used the plain probiotic drink instead of blueberry. However I topped it with a twist on one my my favourite dips. It’s simply: -3/4 cup of the probiotic drink -4tbsp @mayversfood peanut butter -4tbsp honey -1tsp cinnamon  Then all mixed together! They were interested in methods and innovations that the Västerås companies work with. Västerås companies are world leading within the applied energy field. Even though the city is a small town globally we are strong in energy, automation, technique, ICT, robotics and train for example. I just posted the EASIEST ramen on my stories using these very few ingredients. After finding some @lotusfoods rice noodles at Costco I rushed home to try them. (They’re organic and gluten free πŸ™ŒπŸ½) I also made a super basic, 5 minute #pantbased and #glutenfree broth using these two Trader Joe’s pantry staples. When I’m hungry IM HUNGRY....just ask my husband πŸ˜† Having items like these in my kitchen allow me to eat healthy, yet quickly.
