POTATO WEDGES WITH HUMMUS INGREDIENTS: Potato Wedges: 500 g potatoes 2 tbsp olive oil 1-2 tbsp potato seasoning 1 tsp garlic pepper INGREDIENTS HUMMUS: 250 g drained chickpeas 2 cloves of garlic 3 tbsp sesame butter 50 ml Olive oil pepper salt paprika powder cumin 1/2 tsbp of juice DIRECTIONS Preheat your oven to 200 degrees (or 180 degrees circulating heat). Clean and dry potatoes and cut them in quarters. Put them together with oil and seasonings in a bowl with a lid on it and shake well. Spread everything on a baking sheet lined with baking paper and bake for about 45 minutes (or until crunchy). Meanwhile, open the door of the oven now and then and turn the wedges. Blend all hummus ingredients @biancazapatka
Breakfast for dinner! 🍳 Whoever said eggs were just for breakfast is so wrong 🙅🏼♀️ I fully support breakfast for dinner and probably could have it for every meal, no joke 😂 Tonight’s ~brinner~ (idk if that’s even a thing, but whatever) is an egg white and spinach omelette with sautéed mushrooms and cheddar cheese and @shopritestores wholesome pantry organic veggie bites on the side, which were so tasty! Pretty much a tater tot, but with organic vegetables and healthier ingredients 🤗 Happy weekend!

Why is cold leftover pizza always so much better than hot freshly made ‘za? I might even take it as far as saying I kind of don’t like pizza unless it’s cold 😬 Who’s a cold ‘za lover & who’s a reheater?! . Made this gluten-free, vegan pizza the other night using @meaningfuleats homemade dough recipe (👌🏻) Topped with @muirglen marinara sauce, @applegate turkey pepperoni, chopped pineapple, diced jalapeños & @parmelacreamery shredded mozz (melt factor was not the best, but still super yummy!)
she may not be a looker... but this 💪🏻 vegan SUPERbroth 💪🏻is healing me right now. earthy, spicy, and full of veggies, this broth is great on its own as a good sick-day soup but also is an AMAZING base for vegetable dumplings, tofu, or rice noodles! recipe below 👇🏻👇🏻👇🏻 Ingredients: 1/2 c yellow onion, chopped 1 medium carrot, grated 1 large garlic clove, minced 7 cups vegetable broth 1 tsp @traderjoes umami seasoning 1/2 tsp chinese five spices 2 tsp coconut aminos/soy sauce 1.5 tsp sesame oil salt, pepper, and chili flake to taste 3-4 heads baby bok choy, roughly chopped 2 cups red cabbage/cabbage blend Method: • spray a dutch oven/soup pot with olive oil and cook onion, carrot, and garlic until soft, about 5 minutes. • add the veggie stock and all spices/coco aminos/sesame oil and allow bring to a simmer. simmer for 5 minutes. • add the baby bok choy and cabbage and allow to come back to a simmer. simmer for one minute. • add in cooked dumplings, cooked noodles, or tofu if you like! and enjoy 😉

Been dreaming of this bowl since I went grocery shopping on Wednesday 😍. The easiest thing to do for a quick and easy dinner is throw everything you have into a bowl and call it a night. Burned the most calories I’ve ever burned at orange theory today, so definitely needed a good meal to make my body happy 😊. Also, I think it just hailed here for a hot sec? No meat, no problem😏 Last week I was home on Spring Break and ordered this ahi tuna burger. So🤤Good🤤🤤 Plus it was a given that I paid the extra $1.50 to sub sweet potato fries cuz just look at em💁🏼♀️ And now fast forward to today where I ate a salmon burger from the dining hall. I just posted the EASIEST ramen on my stories using these very few ingredients. After finding some @lotusfoods rice noodles at Costco I rushed home to try them. (They’re organic and gluten free 🙌🏽) I also made a super basic, 5 minute #pantbased and #glutenfree broth using these two Trader Joe’s pantry staples. When I’m hungry IM HUNGRY....just ask my husband 😆 Having items like these in my kitchen allow me to eat healthy, yet quickly.
