I recently visited a small local restaurant and tried a chickpea salad for the first time and ever since then I’ve been hooked😍 I decided to take up the challenge of trying to recreate the dish, and I think I’ve pretty much nailed it. This dish is SO SIMPLE and SO DELICIOUS it’s going to be hard to pass up! ———————————————————— Chickpea Salad * 1.5 c chickpeas * 1 c purple cabbage * 1/2 c shredded carrots * Walnuts to taste * Dried cranberries to taste * Sprinkle of red and green onion * Lean protein (I prefer chicken or shrimp) Combine all ingredients in a large bowl and toss. Squeeze lemon juice and drizzle with balsamic dressing for a super easy and delicious lunch! Chickpeas are an excellent source of fiber, protein, and contain vitamins and nutrients that aid in digestion! They have even been going to help control hunger and aid in weight loss! This bowl is the perfect balance of protein, healthy fats and carbs to help get you through a long day of class (or work)😋 Let me know if you try this out and I hope you enjoy!
