Pasta Aglio Olio with Butternut Squash by @nytcooking INGREDIENTS 1/2 cup roughly chopped, toasted nuts (preferably hazelnuts, almonds or pecans). I used whole natural almonds from @bluediamond. 2 tablespoons freshly squeezed lemon juice (from about half a lemon) 3/4 cup plus 1 tablespoon extra-virgin olive oil Kosher salt and black pepper 1 pound cavatappi or other curly pasta (I used #pennerigate#41 from @dececco_pasta 5 garlic cloves, thinly sliced 1/2 teaspoon chile flakes 5 packed cups butternut squash, from 1 (2-pound) squash, peeled and grated using the large holes on a box grater or food processor. PREPARATION Step 1 Bring a large pot of heavily salted water to a boil. Meanwhile, in a small bowl, stir together the nuts, lemon juice and 1 tablespoon olive oil, seasoning to taste with salt and pepper. Set aside. Step 2 Once the water’s boiling, add the pasta and cook until al dente according to package directions. As the pasta cooks, make the sauce: In a sauté pan or skillet large enough to hold all the pasta, cook 3/4 cup olive oil, garlic and chile flakes over medium heat until the garlic turns blond, about 2 minutes, adjusting heat as needed to avoid burning. Step 3 Add the squash and a pinch of salt and pepper and cook, stirring occasionally and pressing down on the mixture so it steams, until softened, about 5 minutes. Remove 1 cup of water from the pasta pot. Add 3/4 cup of the pasta water to the sauce, and let simmer until the water evaporates and a glossy sauce forms, about 2 minutes. Turn the heat to low. Step 4 When the pasta is done, drain and immediately dump it into the sauce, tossing to coat. Adjust with salt, pepper and remaining pasta water. The perfect healthy comfort food for this chilly ❄️ season (I think I’ve officially become a Floridian now that 50• feels freezing to me). This butternut squash “pasta” bake is so yummy and easy to make! Ingredients: •butternut squash zig zags from @traderjoes, only $3.49 for a 12 oz bag!! •1 tablespoon of olive oil •your favorite tomato sauce, I used Cucina Antica Tomato sauce (low in sugar and sodium compared to other popular brands) and is surprisingly delish •Shredded Mozzarella cheese •Salt, pepper, oregano and chopped fresh basil. Instructions: Coat zig zags with olive oil and add heirloom tomatoes (optional). Roast for 420•F for approx 30 min (flip at 15 min) or when cooked to desired texture. Add your favorite pasta sauce, mozzarella cheese, and put back in the oven until cheese is nice and melted (approx 5 min). Add desired seasoning (salt, pepper, oregano and chopped fresh basil). A bright Thai curry butternut squash soup to brighten up this rainy day here in DC. So deliciously easy, and healthy too! You can see how I made it in my highlights. Thai Red Curry Butternut Squash Soup . 1 TBSP coconut oil (or olive oil) 2 cloves garlic, minced 1 medium yellow onion, diced 1 tsp freshly grated ginger 1 1/2 to 2 1/2 TBSP Red curry paste (I use 1 1/2 which gives a little heat, use more if you want more spice. I use @thaikitchen brand) 1/2 tsp sea salt 2 1/2 cups vegetable or chicken broth 2 lbs (about 8 cups) peeled, cubed butternut squash (I like @traderjoes 1 lb packaged peeled and cubed in the produce aisle and use 2 packs) 1 apple, peeled and diced 1 15oz can unsweetened coconut milk (full fat or light also works) Juice of one lime Optional garnishes: yogurt, chopped fresh cilantro, pepitas, crushed red chili flakes . Instructions: . Heat coconut or olive oil over medium heat. Add diced onion and cook 5-7 minutes until translucent, stirring frequently. Add garlic, ginger, curry paste and salt. Lower heat slightly and cook 1-2 minutes stirring frequently until very fragrant. Add squash and apples, cook 4-5 minutes, stirring often. . Add the 2 1/2 vegetable or chicken broth, bring to a boil. Turn down to a simmer, cover, and cook about 25 minutes until squash and apples are tender. At this point, taste the soup and decide if you want to add more curry paste if you want more heat or more Thai flavor. . Remove pot from heat. Use an immersion blender (or regular blender in batches) and blend until smooth. . Stir in coconut milk and lime juice. Season with additional salt and pepper to taste. Add additional broth if needed to reach desired consistency. The soup will thicken as it stands. Indulging in the beautiful Mexican cuisine at @lasiguanas I must say I was so pleased to have a meal here after such a long time. The crunchy but fluffy curly fries were a treat which were served with aioli sauce. I then ordered a veggie enchiladas which was a mix of sweet potato, butternut squash, chickpeas, tomatoes and onions all wrapped up and coated with chipotle sauce and generous amount of cheese. All of this was sitting on a very tasty rice and refried beans bed. For the drinks it was 2-4-1 on mocktails so I had the tropical and raspberry cooler. Which was so good! Food rating- 9.5/10 Price- £17.70 (excluding one of the mocktails price)
Warming winter butternut squash soup. I made it in the @instantpotofficial 1 onion 4 garlic pieces Ginger slices 3 celery sticks 2 fresh chillies (optional) 1 700g to 1kg of butternut squash (long to cut and de- seed but well worth it) 2 carrots Chop up everything Saute onions and celery in oil for Add chopped carrots and butternut squash pieces Add chilies (optional) Stir it all up. Add vegetable stock Close lid and place on Manual High pressure for 20 mins. Make sure the whistle is on pressure. Go and have a cuppa or clean up the mess! Open lid once ready. Always remember to vent pressure and wait till the silver ball goes down. Thats when it is safe to open the lid. It may look like vegetables floating in boiling water...it is until you LIQUIDISE IT ALL! The silkiness and smoothness of the butternut squash starts to come through as well as the beautiful orange-yellow colour. Serve with rosemary and sea salt foccacia from @sainsburys or ciabatta bread. Don’t tell my husband, I am having a fling, no make that a serious love affair..... with butternut squash. 😆.⠀⠀ ⠀⠀ I know, sounds well, a little off or maybe silly..... But I must confess, it is my favorite vegetable!!!! Butternut squash tastes deliciously decadent but really is not!! One of my favorite versions is a Gratin of Butternut Squash. The recipe is below. On a week night or special meal, it always makes an appearance during the holidays. ⠀⠀ ⠀⠀ Gratin of Butternut Squash - Place a split and seeded 1.5 - 1.75 lb butternut squash face side down on a lightly oiled baking sheet. Add water to coat the bottom of the pan and creep up sides; no more than 1/4”. Place in a 350F oven for at least a half an hour or until the thickest pieces are easily pierced with a fork.⠀⠀ ⠀⠀ 15 min. In, place 4-6 unpeeled cloves of garlic drizzled with olive oil in an oven safe dish or wrapped in foil in the oven. ⠀⠀ When roasting is complete, remove the squash and garlic to cool.⠀⠀ ⠀⠀ Once garlic and squash are cooled, scrape or cut the squash meat from the skins and remove the cloves from the paper. ⠀⠀ ⠀⠀ Add the two to a food processor fitted with a steel blade. Add a 1/2C of finely grated Parmesan and roughly chopped mint yes mint to taste. (I like at least 1/8 C packed. Purée the mixture and drizzle olive oil through the top as it spins to help smooth out the purée. Taste and adjust the seasonings as needed. Add more Parmesan or a bit of garlic powder and sea salt if needed. Pour into a sprayed or oiled baking dish and bake at 350F until bubbling on the outer edges and surface has darkened a bit. Done and a crowd favorite!! We had our staff Christmas lunch at Belgos and I have to say I was underwhelmed. There was one vegetarian option on the Christmas menu "Vegetable Casserole" which turned out to be two bits of butternut squash, a slightly spicy sauce and a handful of cous cous. The food took a long time to come and I was definitely still hungry at the end. Dessert was a crepe with vanilla ice cream and prunes. Quick & Easy Semi-Homemade Butternut Squash Ravioli Casserole 🎄This dish is delicious, fast, and easy as can be! Line a Pyrex baking dish with @evolutionfresh frozen butternut squash & sage ravioli. Top with a bag of baby spinach. Pour one jar of Butternut Squash Pasta Sauce from @williamssonoma on top (covering all of the spinach evenly), then top with thin slices of fresh mozzarella cheese. Bake at 350 degrees for about 20 minutes and serve!
