On Monday I made risotto in the middle of the day just so I could turn the leftovers into arancini. Pretty darn good plated straight up though 👍 I used the blue cheese sauce I did for Steak Night as a base, chucked in some portobello mushrooms, red onion, spring onion and garlic, and then topped with crispy bacon, truffle oil, actual truffles I got for Christmas 🙌🏻 home-made garlic breadcrumbs, and a few slithers of Taleggio 😍 stay tuned for the deep-fried next stage!

My children are masters of the ‘yeah but’, ‘hold on’, ‘what if’, ‘how about’, school of negotiation, deal making and rule bending. If there’s a loophole they’ll find it and rip that sucker wide open. It’s a constant source of mind blowing frustration, and also maternal pride, because those cunning little buggers learned from the best 🙋🏼♀️. I too, am a master rubberising the rules when it suits me. Case in point, the MASSIVE FUCK OFF slab of insanely good blue cheese leftover from the weekend’s birthday festivities. Pregnancy fun police say YOU SHALL NOT EAT THAT, but you can bet your sweet arse I’ll find a way to circumvent that decree because I’m fucked if I’ll be letting that tasty joy escape my clutches. . And so I present zucchini fettuccine with bacon, mushroom and sneaky cauliflower blue cheese carbonara sauce. One creamy bowl of cheese lovers wet dream. You can also bet your arse I licked it squeaky clean. . If you want to get a bit more plant matter into your life zucchini noodles are a bloody useful vehicle. Granted, they’re fairly fucking unexciting on their own but when you drown them in a whole lot of flavourful as heeeeell sauce and tasty topping they become immeasurably more sexy. The cauliflower cheese sauce is another sly little trick to up your veggie intake. Sure, the base of steamed and pureed cauli sounds a fucking lot like baby food, but jazz it up with blue cheese, bacon, mushroom and a sprinkling of walnuts and I’d happily be spoon fed that stuff! . You can find the recipe for basic cauliflower béchamel on the blog then pimp that creamy beauty any way you please. I highly recommend cheese. Any cheese.
