Friends, food, and #firefighters? . That’s right! My friend and I took a trip to @barrys.cafe in Cary, NC yesterday. It is a firehouse themed restaurant dishing out some amazing food. . Here’s the review: . 📍Location: SE Cary in a shopping plaza, easy to get to and plenty of parking . 🛋Atmosphere: you know the theme for sure, loved the charm of the firehouse decor . 🍽Menu: labeled so beautifully, you can make almost everything gluten free and dairy free, also had vegetarian options, I read online that the owner’s child is celiac . 📸Pictured: We got the Firehouse Breakfast: basically 4 items of your choosing, I got 2 eggs over medium, sausage, plain grits, and gf/df blueberry pancakes . ✅Pro: So. Much. Food. Everything was cooked perfectly and tasted amazing, waitstaff was extremely knowledgeable and patient with all my questions, they even have a red plate for gluten free items 🤗 . ❌Con: this place has a strange smell, it’s not unbearable but it’s noticeable . 💡Conclusion: this may be my new favorite breakfast spot, can’t wait to bring more people here! . Lately I’ve been kicking it old school with my go-to blueberry protein pancake(s). 🥞💯 Some days I make one big one and some days I make three small ones like this! For some reason the three small ones make it feel like I get to eat more, which makes this volume eater v happy. 🙋🏻♀️😊 . Here’s my go-to recipe: • 1/4 cup liquid egg whites • 1 scoop of vanilla protein powder • 1/2 banana, mashed • almond milk (to thin batter if needed) • 1/4 cup fresh blueberries • coconut/avocado oil spray • toppings: maple syrup & pb 1️⃣ In a small bowl whisk together the egg whites, protein powder with a fork or whisk until all the protein powder is dissolved. Stir in the mashed banana and then add 1-2 T blueberries. If the batter seems too thick, add a splash of almond milk to thin it out a little bit. 2️⃣ Spray a medium sized non-stick pan and set heat to low-medium (I use the number 3 on my stove). The lower heat is the key to making sure the pancake doesn’t burn. Pour in pancake batter (one big pancake or 2-3 small ones) and cook until little bubbles form (about 5-7 minutes). 3️⃣ Make sure the pancake is “set” enough before you try flipping it or else you’ll end up with a protein scramble. 😩 Carefully flip the pancake over to the other side. Cook until pancake is done in the middle. It typically takes another 2-3 minutes.
