Morning all😊 All this warmer weather is making me crave cold breakfasts again and chia pudding is one of my absolute favourites. Chia seeds are one of the healthiest foods on the planet and are packed with a load of vitamins and minerals as well as the healthy fats omega-3 that the body needs to function properly. They are also high in quality plant protein which makes them a great choice for those on a plantbased diet like me😊 They can help to reduce cholesterol, lower risk of heart disease and diabetes. They are also high in important bone nutrients including calcium and gram for gram is HIGHER than most dairy products! So here is an easy way to get them in your diet😊 Raspberry and chia pudding💕 Soak 1/4 cup of whole chia seeds ( mine are from @nutriseeduk ) with 1 cup of milk of choice. I absolutely love almond, coconut me cashew milk! Add a tsp of vanilla and 1tsp of maple syrup ( optional ) and stir well. Leave these to soak for at least 6-8 hours stirring as often as possible to avoid clumping. Overnight is best. Then when ready prepare your smoothie topping. 1 large frozen banana, 3/4 cup of homemade cashew milk, 1 tsp of vanilla bean paste, 1 tbs of golden flaxseed, 1 tbs of goji berries and 1 tbs of raspberry powder all from the amazing @nutriseeduk ❤️ Raspberry powder is a great way to get the benefits of fresh raspberries all year round when they are not so local and tasty. peach banana bowl + some granola, blueberries and white nectarines! — hello! here is my first post✨on this account I’m just going to be posting the foods that I eat☺️ here are the details for this smoothie bowl: • blend 2 bananas + 1 white peach in a blender along with some dairy free milk • pour the smoothies into the bowl and add granola (I used some from @projectjuice), blueberries, and some white peaches✨ enjoy!

Ingredients: 1. 3/4 c whole wheat flour 2. 3/4 c all purpose flour 3. 1/2 c sugar 4. 1/2 tsp salt 5. 2 tsp baking powder 6. 1/3 c vegetable oil 7. 1 egg 8. 1/3 c almond milk 9. 1 c fresh blueberries 10. 1/4 c white sugar 11. 1/4 c all purpose flour 12. 3 tbs butter, cubed 13. 2 tsp cinnamon Directions: 1. Preheat oven to 400 degrees. 2. Mix dry together 3/4 c whole wheat flour, 3/4 c all purpose flour, 1/2 c sugar, 1/2 tsp salt, and 2 tsp baking powder. 3. In a separate bowl mix 1/3 c vegetable oil, 1 egg, 1/3 c almond milk. Add this mixture to the dry mixture and stir. 4. Fold in 1 c blueberries. 5. Line baking tin with muffin liners or grease the muffin cups. Scoop batter into muffin cup so it’s mostly filled. 6. Make crumb topping by mixing 1/4 c sugar, 1/4 c all purpose flour, 3 tbs butter, and 2 tsp cinnamon. Sprinkle topping over unbaked muffins. 7. Bake muffins for 20-25 minutes.
