Recently found out some pretty bad and scary news about my health. Very low WBC count and other things that are pretty major but have to do with my immune system being so weak. So to help my body and the doctors I’m going to try my best to boost my immune system. So I’m doubling (2 a day) up on my fruit and vegetable shakes. #spinach#almonds#blueberries #almondmilk. I needed to share the recipe for this AMAZING blueberry crumb cake. Packed full of fresh blueberries with just the perfect amount of crumb on top. The best part? It can be made vegan! That’s how I made this one. My family loved it more than my original recipe. The recipe to make it either way is below, give this deliciousness a try! 😍 #blueberries#blueberry#blueberrycrumbcake#blueberrycoffeecake#coffeecake#crumbcake#homemade#fromscratch#bakersgonnabake#vegan#dairyfree#eggfree#breakfast#yum#yummy @thebakefeed @thefeedfeed Ingredients for cake- 3/4 cup white sugar 2 Tbs. brown sugar 4 Tbs. butter (I used vegan substitute) 1 egg (I used Neat Egg replacer) 1 3/4 cup all purpose flour 2 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. salt (I skip this since I use salted butter) 1/2 cup whole milk (I used unsweetened almond) 2 cups blueberries — *Crumb topping* 1/2 cup sugar 1/3 cup flour 1 tsp. cinnamon 4 Tbs. cold butter (or vegan substitute) 1. Preheat oven to 375 degrees 2. Whisk together flour, baking powder, cinnamon and salt, set aside. 3. Cream the sugars and butter until light and fluffy. Add egg or replacer and mix thoroughly to blend. 4. With your mixer on low speed alternate adding the flour mixture and milk to your creamed butter and sugar. Mix until ingredients are all blended. 5. Scrape sides of bowl, and then by hand, fold in the 2 cups of blueberries. Try to not crush them. The batter will be very, very thick. 6. Spread into a 9x9 pan lined with parchment paper. 7. Make the crumb topping by whisking together the sugar, flour, and cinnamon. Cut the cold butter into small pieces and add to the mixture. With your hand incorporate the butter into the mixture until crumbles form. 7. Spread crumb over the top of the batter in the pan and bake for approximately 40 minutes or until golden and done!
