🍲LENTIL POTATO STEW 🍲 This was my lunch for the past week and I adore lentils as they keep me feeling full for hours. The recipe is adapted from queen herself @hotforfood _____ Saute half an onion, garlic and celery stick until soft. Add sliced potatoes and precooked lentils with 2 cups of vegetable broth and bring to boil. Cook everything for about 20min until potatoes are soft. If you want to make a soup you can add more vegetable broth. Ultra leicht, mega lecker, total soft, benötigt wenige Zutaten und geht wieder ganz schnell! Und Low Carb, wems wichtig ist 😉 . Ihr braucht 250g (Soja)joghurt 40g Proteinpulver 10g Mandelmehl @mynatura.eu 1 1/2 Scoops Vanillaretto Almond Flavor 10g Gojibeeren . Ich hab je 20g Reis- & Erbsenprotein genommen, es ist egal welches ihr nehmt. Ihr könnt auch gleich ein Flavoured Protein nehmen, dann erspart ihr euch das Flavor Pulver. Sojajoghurt, Proteinpulver, Mehl & Flavor Pulver glatt rühren und Goji Beeren unter heben. In einer 12er Form füllen und im vorgeheizten Rohr bei 180°C für 30 Minuten backen. . Viel Spaß 😊 . . . You need 250g soy yoghurt 40g protein powder  10g almond flour  1 1/2 scoops vanillaretto almond flavour 10g goji berries . I used half rice / pea peotein. You can also use already flavoured protein, so you skip the flavour powder. Preheat the oven to 180°C.  Mix yoghurt, protein, flour & flavour powder well & stir in the gojis. Put into a 12cm form & bake for about 30 minutes. Hello everyone 🤗 Have you tried making pesto with broccoli? It's a great way to include lots of broccoli in a meal and I've mixed it with hemp oil and toasted pine nuts which gives this pesto a really deep nutty flavour - so delicious! Recipe below 👇  I hope you love it too ☺ Have a great Tuesday! 😁  BROCCOLI, HEMP OIL & PINE NUT PESTO ON WHOLEGRAIN SPELT PASTA  SERVINGS: 2  PASTA • 2 servings spelt pasta or any you prefer  PESTO • 1 large head broccoli washed, broken into florets • 1 large handful basil leaves • 1/2 cup nutritional yeast flakes • 2 cloves garlic peeled • 1/4 cup hemp seed oil • 1/3 cup pine nuts toasted • 1 juice of lemon  INSTRUCTIONS  PASTA • Cook the pasta as per packet instructions.  PESTO • Place all of the prepared pesto ingredients into a food processor and blitz until you reach a coarse, grain like texture. • Drain the pasta but retain 1-2 cups of the cooking liquid which you can use to create a sauce with the pesto.  Turn OFF the heat. • Stir the pesto mixture through the hot pasta, adding as much of the retained liquid as you prefer.  Place the lid on the pan and leave to stand (heat off) for a few minutes for the steam to cook through the broccoli in the pesto. • After a few minutes, it's ready to serve! Roasted Pumpkin & Mushroom Soap (V-GF) 🌿. [English below] Quiero compartir con vosotros la crema de calabaza DEFINITIVA, de todas las que he preparado hasta la fecha me quedo con esta sin duda. Incluir entre los ingredientes unos buenos champiñones ha sido todo un acierto, el sabor y la textura que le ha añadido es digna de la mejor crema de invierno. En la web te cuento qué hacer con las semillas de la calabaza para no tirarlas! (LINK BIO). ¿Qué necesitas? ✨ 1/2 calabaza asada. ✨ 6-8 champiñones. ✨ 1/2 cebolla dulce y 1 diente de ajo. ✨ 2 tazas caldo de verduras. ✨ Sal y pimienta al gusto. ✨ AOVE. ✨Topping: Salvia y crema de almendras para cocinar. 🌿 Precalienta el horno a 200º. Corta la calabaza, colócala en una bandeja y rocíala con AOVE. Deja que se haga durante unos 45 minutos. Una vez lista quítale la piel y las semillas. 🌿 Lava bien los champiñones y córtalos. Pica finamente la cebolla y el diente de ajo. Calienta una olla con un chorrito de aceite y pocha la cebolla. Cuando empiece a transparentar, añade el ajo y los champiñones y remueve un par de minutos. Luego añade la calabaza asada, caldo de verduras, sal y pimienta. Cocina todo junto unos 15 minutos. 🌿 Vierte el contenido en tu procesadora y bate hasta que tengas una crema sin grumos. Prueba y corrige la sal si fuera necesario. 🌿 Para terminar añade crema de almendra para cocinar y unas hojas de salvia. . 🇺🇸 What do you need? ✨ 1/2 roasted pumpkin. ✨ 6-8 mushrooms. ✨ 1/2 sweet onion and 1 clove of garlic. ✨ 2 cups vegetable broth. ✨ Salt and black pepper to taste. ✨ Olive oil. ✨Topping: Sage and almond cream. 🌿 Preheat oven to 200º. Cut the pumpkin and drizzle with a little olive oil and place on baking trays. Roast for 45 min. 🌿 Heat oil in an oven over medium heat. Add onion and cook until soft and translucent. From cooking, exercise, work, meeting friends, writing… whatever it is, love adds that extra sparkle that you won’t find in any recipes, handbooks or journals. . Have you ever enjoyed a really simple meal but somehow it tastes magical - and that’s because you or whoever has cooked it for you has put in their time, efforts and love. What do you put your heart into most? 💁🏻‍♀️ Cooking is my obvious one but I can’t stress enough how important it is to me. The whole process… from chopping the ingredients, to thinking how to present it, to sitting down to enjoy the meal - I do it all with LOVE. Like this EPIC sandwich BBQ Tempeh Reuben 👆🏼 So a Reuben is typically American toasted sandwich with rye bread, corned beef, Swiss cheese and sauerkraut… so I made it a little more plant-based and nourishing! Chocolate Chip Banana Bread 💛 My favorite way to start a day 😋 Find the recipe below! Love, Sarah x 🍌 225g flour (e.g. wheat flour)  80g coconut sugar
1 teaspoon baking powder  1/2 teaspoon cinnamon  pinch of salt 2 very ripe bananas  275ml almond milk
1 tablespoon apple cider vinegar 80ml coconut oil
1 teaspoon vanilla extract 60g chocolate chips  Preheat the oven to 375F/180°C and grease a loaf tin. Combine all the dry ingredients in a big bowl. In another bowl, mix the banana, almond milk, apple cider, coconut oil and vanilla extract. Then add the dry ingredients and whisk until you have a smooth batter but don’t overmix. Last night I had planned to get up early, go to the gym, do some baking, and get some uni work done, but when I woke, I honestly couldn’t think of anything worse. I craved my bed and comfort. But, with encouragement from my boyfriend, myself, and drawing from a little strength within, I got out of bed, showered, dressed and went to the gym. AND I AM SO FREAKING THANKFUL THAT I DID. I smashed out one of the best sessions I have done in a while, I walked out feeling strong, motivated and ready for the day. I am by no means saying that we don’t need rest days involving spending time in bed with Netflix, because I do, I totally do, but it is just knowing when to use them. And trust me, I am no where near perfect. There have been plenty of occasions where I didn’t push myself to find strength, and ended up staying in bed feeling crappy. The purpose of me telling you all of this is because I know I’m not the only one who has mornings like this. I want to help every single one of you to conquer whatever negativity is occurring within by using the strength that I know you all have✨
O V E R N I G H T  O A T S 🤤 For these double layer overnight oats, blend 1/2 cup oats ➕ 1 x very ripe banana ➕ 1 x cup plant milk ➕ 1/2 cup water ➕ 1 x Tbs peanut butter. Once blended spoon out half of the mixture into a jar and add 1 x Tbs cacao powder to the remaining oat mix and blend. Fill the jar with the chocolate layer and refrigerate overnight. Serve in the morning with extra peanut butter, coconut, cacao nibs & chopped up Butter Cups! ⭐ #FoodJustGotReal

Veggie chili is the easiest thing to meal prep or cook when you’re low on time and have random vegetables lying around. Here I used a base of chickpeas and blackbeans with chopped tomatoes, then added in onions, garlic, bell peppers, corn, broccoli, cilantro, and avocado. I always use spices like chili powder, cumin, paprika, adobo, sazón, and cilantro. Kale chips 🌱 a real antioxidant and vitamin bomb, and so crispy and delicious 😍😋 Recipe below 👇  Ingredients 300 g kale 1 tbsp olive oil 1 teaspoon sea salt  Directions 1. Wash the kale and let it dry completely.  2. Preheat oven to 150 c degrees. 3. Carefully remove the leaves from the thick stems and tear into bite size pieces. Distribute the kale evenly on an oven plate.  4. Drizzle kale with olive oil and sprinkle with seasoning salt. 5. Bake until the kale edges are golden, 10 to 15 minutes. 6. Happy weekend friends! I’m coming at you with yet another recipe, this time for this super simple yet delicious CHOCOLATE CHIA PUDDING. It comes together in just 3 minutes, requires only a handful of ingredients and is the perfect breakfast to start off your weekend with. It’s not too sweet, but not bland either, nice and chocolaty and dangerously creamy. I hope you give it a try!  Also, how has your week been? Mine’s been quite busy actually, I’m working hard on getting more recipes your way and trying to improve my photography and food styling. Let’s chat ❤️ Serves 1  Ingredients: 2 1/2 Tbsp chia seeds 1 Tbsp cacao powder (I used raw cacao powder) 3/4 C plant milk (I used soy for some extra protein and creaminess) 1/4 C unsweetened yoghurt (I used soy yoghurt) 1 1/2 Tbsp maple syrup  Instructions: 1. To a medium bowl add chia seeds, cacao powder and 1/2 C plant milk. 2. Stir until thoroughly combined, then add the remaining 1/4 C plant milk, yoghurt and maple syrup, and stir again. 3. Cover the bowl and refrigerate overnight. 4. In the morning, remove chia pudding from the fridge and serve with toppings of choice.

CREAMY BEAN GOULASH. This meal is not only vegan, but also high protein, gluten-free and super easy and affordable to make. All you need is some basic ingredients and a love for delicious for food.  When I was younger my dad would regularly make bean goulash for us, mostly when my mom wasn’t home because she’s intolerant to beans, and  I used to absolutely love it. His version uses sausages and salami as well as sour cream though, so obviously once I went vegan it was a no-go for me. But when I recently started craving this meal again I set out to veganize it and I’m honestly so happy with the result and super eager to share the recipe with you! I hope you like it as much as I do 😊  Serves 4 Ingredients: 1 tsp olive oil 1 large onion, finely chopped 3 1/2 C vegetable broth  2.5 Tbsp sweet paprika powder 1/4 C + 1 Tbsp tomato paste 1/2 tsp salt A few cracks of pepper 1 bay leaf 2 Tbsp dried marjoram 1 400g can EACH kidney, borlotti and butter beans, drained and rinsed 1 150g can of corn, drained and rinsed 3 medium potatoes, diced into 1/2” pieces 1/2 C soy yoghurt  Instructions: 1. Heat a large pot over medium heat. Once hot add olive oil and onion, turn off heat and stir for  around 30 seconds. 2. Cover the pot and remove it from the stove top. Let steam for 5 minutes.  3. Once the 5 minutes have passed, uncover the pot, return it to the stove top and turn heat to medium-low.  4. To the pot add 1 C of the vegetable broth, the sweet paprika and tomato paste. Stir well.  5. Then add all the remaining ingredients through potatoes and give it all a good stir. 6. Increase heat to medium-high and bring to a boil, then reduce heat to medium-low, cover and cook for 45 minutes. 7. Finally, stir in the soy yoghurt. 8. Serve with some greens and fresh bread.

Especially when said cookie is vegan and gluten free, only requires one bowl and takes up just roughly 22 minutes of your time. May I present: ONE BOWL SALTED PEANUT BUTTER OATMEAL COOKIES. HEALTHY ONE-POT VEGAN BOLOGNESE SAUCE. Have I got your attention? You know, I’ve craved a nice and hearty bowl of bolognese more than once and making an only vegetable version, sans the meat, just doesn’t satisfy that need for me. So I set out to make a “meaty” vegan bolognese, and with the help of my grandpa this was the result. Hope you like it as much as I do 😊  Serves 4  Ingredients:  1 tsp olive oil 1 medium onion, finely chopped 2 carrots, finely diced (about 5mm/ 1/5” pieces) 1 red bell pepper, finely diced (about 5 mm/ 1/5” pieces) 1 rib of celery, finely diced (about 5mm/ 1/5” pieces) 1 tsp salt 400g vegan minced “meat” 1/4C tomato paste 750g tomato sauce 1 - 1 1/2 C vegetable broth, depending on desired consistency  A few cracks of pepper  1 Tbsp herbes de provence  Instructions: 1. Heat a large pot over medium heat. Once hot add the olive oil and onion and reduce heat to medium-low. 2. Fry onion for about 5 minutes, stirring frequently, then add carrots, bell pepper, celery and salt, cover the pot and steam for 10 minutes. 3. Uncover the pot, stir in the remaining ingredients and increase heat to high. 4. Once boiling reduce heat to medium-low, cover the pot and cook for at least 30 minutes.  5. Serve with pasta of choice and perhaps some fresh greens and basil.
Made a batch of triple chocolate cupcakes yesterday, and let me tell you: they turned out INCREDIBLE. And by incredible I mean really really good, so good that my very critical dad has already devoured 3 within the last 12 hours! Gonna make these one more time, just to be on the safe side, before sharing the recipe with you. So stay tuned ❤️
Dosai roast with mushroom gravy + onion chutney + idly podi 😍🤤 Recipe for mushroom:. INGREDIENTS:  1. 150 grams mushroom  2. 1 onion  3. 7 green chillies 4. 1 inch piece ginger  5. 6 garlic  6. 1/2 tsp coriander powder  7. 2 tbsp roasted Bengal gram 8. 1/2 cup coconut shredded  9. Pinch of turmeric  10. 1 small piece cinnamon + 1 bay leaves + 2 cloves + 2 cardamom. Instructions  1. Grind Ginger + garlic + coriander powder + green chillies + coconut + Bengal gram in a mixie and make a paste  2. Take oil in a kadai and suate cinnamon + bay leaves + cloves + cardamom. 3. Once you get that fragrance add onion and sauté  4. Add mushroom and fry till the water dries out from the mushroom 5. Add pinch of turmeric and mix well (this removes the smell of mushroom )  6. Add the paste + salt + 2 cups water - mix well and once it boils turn it to a low flame, cover and cook  for 10 minutes .  7. Add coriander leaves and turn off the flame . Capsicum brown rice  with crispy potato fry  and pomegranate 😍 . (Taste of coriander powder with that hot rice and capsicum 🤤🤤) Ingredients for capsicum rice  1. 1 cup rice (boil it ) 2. 1 big capsicum (diced ) 3. 1 onion (diced) 4. 5 red chillies  5. 2 tbsp coriander seeds 6. 1 1/2 tbsp Bengal gram  7. Salt  8. 1/4 ground nut roasted (crushed )  9. 1/2 tsp aniseed 10. 1/4 tsp turmeric powder 11. Curry leaves  1. In a kadai add coriander seeds + Bengal gram + red chillies and sauté them without adding on a medium flame until coriander seed and Bengal gram changes to golden color.  2. Once it’s cool add the said ingredients to a mixie/blender and make a powder and keep it separate.  3. Add oil to the kadai and add Aniseeds + curry leaves and sauté until Aniseeds are golden brown.  4. Once Aniseeds turns to golden brown color add onion and sauté  5. And thereafter add capsicum + 1/4 tsp turmeric powder + salt - mix and sauté all the ingredients for 2 mins and reduce the flame to low and cover the Kadai with a lid and cook for 5 mins. 6. Now add rice + coriander powder to the capsicum and mix all the ingredients well (taste and balance salt)  7. Spinach fried rice + Crispy (not so bitter) Bitter Gourd Pakoda + Potato Chips (Chilli + salt ) + fryums 😋 Ingredients for bitter gourd  1. 1/4 Bitter Gourd  2. 1 lemon juice  3. 8 tsp Bengal gram flour  4. 4 tsp corn flour  5. 1 1/2 tsp chilli powder  6. Salt  7. 1/2 tsp Asafoetida  a. Slice the bitter gourd (9mm in mandoline)  b. Add lemon juice and salt to the bitter gourd . Let it marinate for 30 mins. (This process removes the bitterness ! Yaaass )  c. After 30 mins squeeze the water and add Bengal gram + chill powder + corn flour + Asafoetida + salt .  d. Mix well and deep fry. I fry curry leaves and add at the end (pumps up the taste 🤤) .
