Happy Good Friday everyone...it’s been a scorcher down here 🌞 We’ve had our first proper beach day of the year 🌊🧴 Cornwall is pure bliss this time of year before all the tourists arrive and then it’s 🤪 Of course we have the daily dramas of being a family with two young kids, there is bickering, eye rolling, huffs and puffs but at the end of the day I only remember the fun we’ve had 👨👩👧👦 Instagram for me is a little diary of our days and the fun times but it’s important to remember that it’s a snap shot. It can be so easy to compare and think everyone is having the best time but we all have tough times and stuff going on. Some may share, others don’t, for me I like to keep my feed positive but that doesn’t mean everything is all rosy all the time. Being public in these squares means we share our lives and I’m always honest but some things are personal and I like to keep it that way! That’s why it’s important not to judge and assume things about people as you never know what’s going on so just be kind, supportive and let’s keep Instagram a happy place! I’ve loved seeing the positive happy vibes with all your #fashtagfriday posts today there’s been sooo many thanks to everyone for getting involved! What are you will to sacrifice to change you life? 🤔 Think about it… 💜 We are human and sometimes lazy and don’t want to sacrifice anything and we stay the same and we complaint because nothing has changed… it’s a cycle. I fell into. I know I am not alone.🙋♀️ There is no time to workout, but let me watch 3 hours of TV at night after work. I am too tired after work. Then get up earlier and start your day off with an endorphin push. 💜 In 2014 I did not plan my food for the week or prep meals. I would walk my dogs as a workout and maybe on a Saturday do some cardio. I was too tired after work. The thought of sacrificing sleep was not a good one, but I knew that was the only way I would get it done. The thought of giving up carbs when I started to meal plan was not fun… but I did it because I wanted to lose weight. I wanted those things. My “why” was strong! 👊 You have to want it to! The next time you find yourself complaining about the weight or lack of energy… stop and think what you could do about it! 💜 I guess I am different because when I set my mind to do something I do… I make the commitment to myself and that is a commitment I am not going to break! 🥳 You can do it too! Maybe you need a little more support…. That’s where I come in… AFTER you have made the decision and commitment to yourself to change! #spiced#caribbean#chickpearice taste is everything for me and I love the flavors and smells of the West Indies 💛 fresh turmeric, nutmeg, ground coriander cayenne pepper fresh herbs and sweet mango. A quick and easy recipe if you fancy a tongue tantaliZing spice hit🧡 #theveganhoneypot#recipe Two cups cooked #longgrainrice 1/4 red, yellow and green pepper 1/4 #scotchbonnet Pinch of #nutmeg and a sprig of thyme 1 inch ginger 4 cloves garlic 2 inch fresh turmeric root 1 tbsp curry powder 1 tsp coriander 1 tsp salt 1/4 tsp cayenne pepper (a pinch will do if you don’t want it too spicy) 1 stock cube 2 tsp #mangochutney 1/2 cup hot water Can chickpeas Fry your onions, garlic, ginger and turmeric in a pan with a pinch of salt. Add peppers and chilli and spices. Stir it up and add chickpeas and stock cube and 1/4 cup water. Cook up for a few minutes til spices blended add another 1/4 cup of water and cook off for about 7 or 8 minutes. Once most of the water has evaporated stir in your rice and finish with salt and stir in your mango chutney. Reminder to all of you stressing about Easter chocolates, dinner, drinks, etc., because you don’t want to gain weight or lose your progress. Please please please be kind to yourself, enjoy your food, eat foods that you love without telling yourself no. Enjoy your family, friends and loved ones.
