Here’s a limerick I wrote for this recipe! There was a Greek dish called Stifatho Beef stew with a base of tomato Pearl onions and spice Cinnamon so nice You’ll want to make this dish tomorrow! INGREDIENTS 4 Tablespoons vegetable oil 4 pounds beef chuck, cut into 2” cubes 3 medium onions, sliced thin 2 bags frozen pearl onions 5 cloves garlic, minced 2 6-oz cans tomato paste 2 10-oz cans beef broth 2 cups water 1/2 cup red wine vinegar 1 tsp salt 1/4 tsp pepper 3/4 tsp cinnamon 2 bay leaves INSTRUCTIONS In a large pot heat oil over medium heat and add meat. Brown on all sides then remove from pot. Put onions and garlic in pot and cook until slightly brown. Return meat to pot. Add tomato paste, beef broth, water, vinegar, salt, pepper, cinnamon and bay leaves. Mix well. Cover and turn heat to low. Simmer 3-4 hours, stirring every 20 min or so to prevent meat from sticking. We serve over brown-buttered orzo. This is one our favorite Greek recipes!

Met dinner 500 gr sapi/babi/ayam potong memangang 2 ruas jari atau sesuai selera 3 or 4 pcs jamur besar (rendam sampai lembut) iris tipis keringkan air 1 sdt lada itam atau secukupnya 5 sdm kecap manis 2 sdm gula merah/pasir 3/4 sdt garam 2 sdm kecap asin 1 sdm penuh saus tiram 1 cangkir air 1 bombay iris stgh ring 5 siung bawang putih cincang 2 sdm olive oil 1 sdm minyak wijen Tumis bawang bombay sampai layu, bawang putih sampai wangi, masukkan daging, lalu kecap manis aduk sampai rata, tuang air stgh cangkir lalu tutup panci sekitar 10 menit atau air berkurang. Aduk kembali masukkan gula pasir, garam, kecap asin, lada itam, saus tiram.... aduk2 dan tuang air lagi tutup panci biarkan 10-15 mnit lagi (sampai empuk) dan sisakan air sedikit yg uda sedikit mengental.... jika suka agak kental (bole tambahkan larutan 1/2 sdt maizena + sdm air). Bo Kho - Vietnamese Beef Stew. Being on Keto, I miss going to our favorite Vietnamese restaurant to have Bo Kho or Vietnamese beef stew. This is serve 3 different ways. With French bread 🥖, with rice 🍚 and the most popular way is served as a noodle soup which is served with rice noodle 🍜. Totally not Keto friendly! So I have to make my own to satisfy the cravings! Cooking on weeknight is time challenging. Anything for a short cut is a plus! So anything from frozen pre cut onions, chopped garlic, ginger paste and ground lemongrass are my best friends! For this recipe I used boneless beef shank. Marinated overnight in the Bo Kho seasoning I found at the Asian groceries. Using my old school old pressure cooker, (nowadays you have your instapot or if you have the time, use a heavy bottom pot and let this simmer on your stove for couple hours. Let’s get back to instructions. Heat up coconut oil and butter. Add the meat and let it brown. Make sure not to over crowd them and if necessary, do it in batches. Once meats are brown, add onions, garlic, ginger, lemongrass, star anise and cinnamon sticks. Let it toast with the meat (5 minutes or so). Add tomato paste and cook for another 3 minutes. Add bay leaves, Shaoxing wine or Marsala if you can’t find Shaoxing wine. Add beef broth (I like using “Better than Bouillon” and water. Scrape bottom of the pan to loosen the brown bits stuck in the bottom. Cover and once you hear the pressure, cook for 20-30 minutes. Carefully let pressure out before opening your pressure cooker. Add carrots and cook for another 30 minutes with lid on but not locked. Dish out the star anise, bay leaves and cinnamon sticks. Add fish sauce and pepper to taste. Serve with rice or French bread. To make it as noodle soup, add additional beef broth to make the stew soupy and fish sauce. Cook noodles accordingly. Beef Stew . 1.2 kg / 2.4lb chuck beef , cut into 3.5 cm / 1.5" cubes 1 tsp each salt and pepper 3 tbsp olive oil , divided 1 large onion halved then cut into 1 cm / 2/5" slices, 4 garlic cloves minced 3 carrots , cut into 2.5cm / 1" pieces on the diagonal 2 celery stalks , cut into 2.5 cm / 1" pieces 1/3 cup / 50g flour, 3 cups / 750ml beef broth salt reduced, 2 cups / 500 ml red wine , bold and dry (Cab Sauv, Burgundy, Merlot) or more broth, 2 tsp Worcestershire Sauce, 2 tbsp tomato paste, 2 bay leaves, 4 sprigs thyme, 400 g / 14 oz baby potatoes halved . 1. Sprinkle beef with salt and pepper. Heat 1 tbsp oil over high heat, sear beef all over in 2 or 3 batches. 2. Heat remaining oil, cook onion and garlic for 2 min then add celery and carrot, cook 1 min. Add flour, stir, add remaining ingredients, stir. 3. Return beef to pot, lower heat, cover and simmer gently for 1.5 to 2 hours until beef is close to fall apart tender. Remove lid, simmer 30 minutes to thicken and beef becomes fall apart tender. Crockpot Beef Stew with Potatoes, Kale, Green Beans, Mushrooms, & Root Vegetables. . Start by chopping 3 carrots, one medium onion, 2 turnips, about 5 red potatoes and a bunch of green beans and putting them into the crockpot raw. On the stove, brown sliced Cremini mushrooms in a pan with a little olive oil. While it’s browning, put about 1/2c flour, 1tbsp paprika, 1/2tsp salt, 1/2tsp pepper in a small bowl. Stir until combined. Once mushrooms are browned, add them to the crockpot. Dredge beef chuck cubes in the flour mixture and sear quickly on all sides in the pan. Leave the center raw. Add to crockpot. In the pan, add 2tbsp tomato paste to the beef drippings and cook for a minute. If you want to add some garlic, you can mince and add to the pan now. Add about a teaspoon of flour and cook another minute. You’re basically making a tomato-based roux. Add this mixture to the crockpot. Sprinkle about half of the remaining flour mixture over the contents of the crockpot and pour about 3/4 of a carton of low sodium beef broth over the vegetables. Save some broth in case your stew gets too thick after cooking. Add 2-3tbsp fresh thyme leaves and give it one big stir to combine. Set crockpot to high and cook for about 6 hours, stirring about once per hour if possible. In the last hour, chop and add kale to the crockpot. If your stew isn’t thickening enough, you can add a packet of brown gravy mix to thicken and flavor a bit. At the end of the 6 hours, chop a handful of parsley and stir into the pot.
