masala beans on toast made by my personal chef (oops I mean bf ily boo 😂) this was after we tried the vivera shawarma which was v rubbery and had too much garam masala so we binned it 🙃 I love the other vivera things I’ve tried but for some reason the shawarma just wasn’t up to it, maybe we just got a bad one? anyway how do you guys like your beans? on toast, on a baked potato, with rice...?

LETS GET THIS EGG 100 MILLION LIKES 😂DOUBLE TAP 🤚🏼TAG YOUR FRIENDS AND SHARE..... #liketheegg#egggang#eggsoldiers Best of all my 💥EGG with Smoky beans on toast 💥 RECIPE TASTES DELICIOUS 👌🏻 and it’s super easy too!! give it a go and upload your pics #baberflavour 😛 @world_record_egg Smoky beans with poached egg - •Serves 2 •Ingredients •1 tbs olive oil •1 clove garlic chopped •1 small onion finely diced •1 tsp thyme •1 tsp smoked paprika •1 tbs soy sauce •1 tin cannellini beans drained (save 1/4 tin of the water) •1 tin chopped tomato - •2 eggs per person •Bread to toast •Handful spinach - •Method •Heat the oil in a saucepan over medium heat •Fry the garlic onion for 5 minutes Add the thyme, paprika and soy along with black pepper, cook for 1 minute •Add the beans with a little of the water with the tomato’s •Bring the the boil, cover loosely and cook for 10 minutes until the sauce thickens - •Meanwhile poach the eggs •Fill a saucepan with boiling water, add a splash of vinegar and bring to a gentle simmer •Crack the eggs into a mug and gently pour in the the water one at a time Cook for 2 minutes for a soft runny yolk Remove white a slotted spoon and serve on top of the beans when a drizzle of oil - •Delicious served on @warburtonsuk bread toasted with some fresh spinach
Last night I made this Joe Wicks Veggie Leanin15 lentil bolognese. #beansandgreens . I can’t stress enough that simplicity is the key to veganism. Most days, my lunch looks something like this. Some kind of beans, some kind of greens, a piece of good bread/potato/whole grain and a sprinkle of nutritional yeast/hemp seeds/milled flax. Today I had sautéed kale, @coopukfood baked beans, toast and nooch. This meal is easy to prepare (#mumlife), cheap and covers nearly all of my nutritional targets. It’s also easy to make for 1 or 10! I start every day with 16oz of celery juice and then a fruitful green smoothie. With something like this for lunch, I’ve hit nearly all of those important nutrient targets by lunchtime. And by eating fortified foods such as nutritional yeast and soya milk, as well as paying some attention to food combinations, we don’t need to take a whole load of supplements. The key is making this your new norm. Everyone likes beans on toast - this isn’t anything new! But simply increase the nutritional content by eating it with a leafy green or using homemade beans every now and then. Swap bread for sweet potato or polenta or mash. Add a side of mushrooms for the vitamin D, top with raw sauerkraut for the probiotics. Different versions of the same meal will keep it interesting and give you a variety of macronutrients over a week. This way, you don’t really have to think about what to make - buy what you need to thrive (just don’t buy the junk!) and cook what you buy :) Plus it’s lovely to have something warm on these cold winter days! I’m sure I’ll be back craving big ol’ salads by Spring. What’s your favourite easy vegan lunch?
