Winter Grilling & Taste Testing - Smoked my first (2) Pork Shoulder Roast, often called a Boston Butt. I asked vegetarian Lisa to pick up a Butt and she came home w a tiny one. So I had to go out and get a larger one... but... that allows for experimentation to see which is better. 3.9 lbs vs 9.3 lbs, both smoked on a @webergrills Performer kettle using @stubbsbbqsauce Stubbs Charcoal Briquets in a 3x3 Snake/Fuse which was enough to hold temps at 250-275 F for the 6.5 hr cook. Both got foil wrapped at ~170 F and put back on the grill. Small one got there first and then continued to 200 F. Large one got wrapped and got up to 190 F before I had to pull both due to hungry kids. Expanded Taste Testers beyond my kids and included their Yee-cousins. Everyone liked "B" in a blind taste test better, which happened to be the smaller one. EITHER the smaller one (from different store) was better quality, or the extra time in foil and reaching higher temps gave it a more tender texture. After passing the stall and collagen breakdown, I figure the 10 degrees won't be that different, but B did win, and I could tell the difference during shredding and tasting as well. Son announced "They are both about the same... B is better, but A has a bit more flavor. They dont stand out. Not like your Beef Ribs. But that's because I liked those ribs." Lol.
