Massage the seasoning (including sea salt) all over the #chicken; don’t just sprinkle it with salt and call it good 2. Let the chicken marinate in this dry brine for at least an hour; 2-3 hours refrigerated is even better, letting the bird elevate to room temperature for at least 30-45 minutes before #baking 3. Use a cast-iron skillet with a cup of warm water in it—always 4. The sweet spot for roasting #poultry is a well-preheated 435-degree oven (not 425 degrees!) 5. If you have a double-oven, choose the smaller one that’s closer to the heat source 6. Do not use butter; the natural fat and heat are enough to give you the desirable #crackling#chicharron you crave 7. Never poke chicken; use tongs or two large spoons to move it 8. Do not flip the chicken; #cook bone-side down the entire time 9. Baste only ONCE an hour into #cooking time 10. RESIST THE URGE to tear into it right away; plate it and let it rest for at least ten minutes so the juices redistribute Enjoy!
Deliciously nutritious Oven Baked Chicken Shawarma with smashed chickpeas. A fantastic, dairy free, great tasting dish, packed full of lean protein & goodness. You can easily make this gluten free too by serving this with rice instead of flatbreads. This was based on a recipe from sainsburys.co.uk and here’s a summary: Serves 4- In a small bowl mix: 1 tbsp olive oil, the juice of a lemon, 3 crushed garlic cloves, 20g grated ginger, 1 tsp cumin seeds, 1 tsp smoked paprika, 1 tsp cinnamon, 2 tsp sumac, 4 crushed cardamon pods & 1/2 tsp ground cloves. Season well. Use this to marinade 8 scored skinless & boneless chicken thighs. Leave to marinade for a few hours in the fridge or preferably overnight. Preheat your oven to 200c fan. Place the chicken thighs, spaced fairly well apart in an oven proof dish & bake for around 30 mins until thoroughly cooked. Meanwhile, toast 1 tsp coriander seeds in a dry frying pan, then crush with a pestle & mortar. Fry 1 chopped onion in a drizzle of olive oil for a few mins until soft. Add 1 crushed garlic clove & the coriander and cook for a further couple of mins. Add 2 tins of drained & rinsed chickpeas and cook for 2-3 mins until heated through. Using a potato masher, mash half of the mixture, leaving the other half of the chickpeas whole. Add the juice of a lemon (to taste) & season well. Keep warm. Serve the chicken & chickpeas on warm toasted flatbreads, (or with rice if avoiding gluten), with shredded gem lettuce, sliced vine tomatoes & cucumber raita (I used homemade dairy free raita). Sprinkle over sliced red onion (pre-soaked in a squeeze of lime) & serve. Tonights dinner was roast dinner with plenty of veg!! Who doesnt love a Sunday roast? 🍗🥦🌽 . . It brings back happy memories for my husband. When he was younger, his Pop always made a roast dinner for their whole family on a Sunday. Pop had 1 arm, and still managed to make delicious meals for his family. Such an amazing man, who unfortunately passed away before we had our first baby. I like to keep his memory alive, by keeping his tradition going! . . Inspired by my friend... who decided to give her kids new vegetables to try, I too decided to give it a go! So tonight I threw in brussel sprouts, squash and beetroot (we love the tinned stuff and had never tried cooking fresh before). I baked them all with the regulars (potato and pumpkin) and in with the chicken. . . Fast forward to dinner time.... every person at least tried everything! My middle man who is 4 and the most fussiest one- at the brussel sprouts, squash and beetroot without batting an eye lid! I was gobsmacked! Could not believe my eyes! Little Man Henry (pictured), loved the beetroot as you can see! I mean, he did rub it in some gravy- but hey, he ate it and thats a win! . . How do your little ones go with trying new food? 16th June 2019, bringing my mum to a really quiet place for lunch. The place is pretty inaccessible if you are not driving unless you take a cab or grab. Located along Sungei Tengeh road, there stand a secluded restaurant serving some good foods. They have some specialities such as the volcano chicken and the mixed style pork knuckle which required pre-ordering due to the cooking time. The volcano chicken is baked in lotus leaf and organic mud for 3 hours, thus I had to book the day before. The sauce is good, drizzle it over your rice, really whet one's appetite. The drumsticks and wings are very tender but not really for the breast meat, perhaps need longer baking time. Another signature is their fried sambal tapioca leaf, very good portion and extremely tasty, love it. All their vegetables are organic, thus giving me a healthy feel good effect after eating it lol. Lastly is the sweet and sour pork, my mum love sweet and sour stuff, so we ordered that. It didn't disappoint us either, very good portion with lot of vegetables in it. A must-try beverage is their Bua Long Long drink. The fruit is very rare in the market now, widely available in the 90s. The owner grew and blend the fruits, adding a sour plum to freshen it further. @goodfoodca Honey butter chicken! This was freaking amazing!! The broccoli bulgar salad is supposed to be made with raw broccoli but we baked ours a touch. This was probably the best meal I’ve had so far this year!
