💚👌Keeping it SIMPLE y'all. Buffalo chickpeas with fries. A basket of deliciousness😋 Recipe👉For buffalo chick peas: preheat oven to 450 degrees F. Spray baking sheet with olive oil spray. Drain a can of chickpeas. Save liquid (can use as an egg replacement for another recipe). Coat chickpeas with 1/4 cup of @franksredhot sauce and 1/2 tbsp dairy free butter. Bake for 10 min, then stir and bake for 10 more min.

People who are focused on this way of life believe that... ✔️Self-care is inextricably linked to the health of the planet. ✔️Your efforts, no matter how big or small make all the difference. ✔️It's not about perfection, it's about making better choices. I can really appreciate that last sentiment as a recovering perfectionist + I am working to find creative uses for food and goods before sending them to the trash or recycle bin. Back to the carrot tops🌿 After a quick google search, I realized that there is a lot of misunderstanding about carrot tops being edible or not + they are. While they have a bit of a bitter taste, they are very nutrient dense and contain 6 times the vitamin C of the root and are a great source of potassium and calcium. Many root vegetables, such as carrots, turnips, radishes, and beets, are grown for the roots, and sadly, the tops are discarded or composted. Here is a fantastic recipe for Carrot 🌿Pesto: From @Epicurious 3 pounds small carrots with tops (any color) 2 tablespoons vegetable oil Kosher salt, freshly ground pepper 1 garlic clove 3 tablespoons macadamia nuts or pine nuts 1/2 cup (packed) fresh basil leaves 1/4 cup finely grated Parmesan 1/2 cup extra-virgin olive oil ***Directions below in comments.👇🏽 I like to roast colorful carrots and drizzle the pesto on top as an awesome side dish.
