Nice to finally have a nyc restaurant that specializes high quality eel. I chose the hitsumabushi set, which is a different style of eating the Unadon (originally from Nagoya, Japan). The eel rice is divided into four sections, each is enjoyed in a different way: 1) eat the eel and rice like a regular unadon 2) eat the eel and rice, topped with seaweed, scallion and wasabi 3) top it off with tea or broth. This is chazuke and my favorite way to eat it 4) for the last portion, eat it however you like. At Hachibei, the server actually made me a eel and rice handroll. Which I thoroughly enjoyed!
